Its taken a while for this to actually sink in but after 6 months in the planning, and a lot of sleepless nights im so pleased we managed to serve an excellent 4 course Wedding Menu this weekend for our lovely clients. Totally out of my comfort zone with the waitress service and formal setting, keeping everything cold & hot juggling plates, renting ovens, running the pass but what a challenge! Lots of lessons learnt including my photos are naff🤣
The Menu
Starters:Cured Salmon in Gin, Pomegranite, Orange& Beetroot or Marinated Beetroot with Goats Cheese & Walnut.
Mains: Lamb Shank in a Red Wine Jus with Potatoe Dauphinoise or Filo Pie with Roasted Squash, Feta & Harissa with Salsa Verde
Dessert: Tiramisu, Eton Mess & Black Forest Gateau.

More recipe practice today! Chinese Beef Short Ribs, slow cooked for 4 hrs in honey, soy, ginger, garlic, hoisin , 5 spice and served with a crunchy asian salad with a lime,chilli and fish sauce dressing. Cant take all the credit, it was inspired by an old Nigella book

What started out as " inspired by Monica Galetti" after watching her on James Martin, turned into more Ottolenghi as i didnt have any feta!. Anyway, the moral of the story is that there are no rules when it comes to cooking but if you have a bit of technique and a some confidence the results can be amazing!

Marching into March after a busy start to the month. Delighted to be invited to cater for the wedding of such a lovely couple, we were not about to let the weather stop us. BBQ ing in the snow to produce a delicious feast of Greek food including Chicken Souvlaki, Lamb Kofta and Halloumi.
Check out our little Pots of Puds which make a great alternative to a wedding cake, including Tiramisu, Black Forest Gateau and Eton Mess ( adorned with Percy Pigs)

Perfect Saturday night one pan tray bake!!
Chicken, Butternut Squash & Orzo with Herbs

Here is my recipe but you could switch it up with harissa and a few dried apricots for a kick or tomato, & basil with a drizzle of pesto on top for an italian flavour.

Recipe
Chicken thighs
Root Veg, onion,celery, carrot ( whatevers in the fridge)
Butternut Squah
Orzo ( pasta but looks like rice)
I used white wine, chicken stock ,garlic, lemon, tarragon & parsley.

Pan fry the chicken skin side down til crispy. Roast your veggies for 15 mins, add the chicken, stock, wine, lemon, garlic.
Roast for 20 mins, then add the orzo and a drop more liquid if required. Cook for 15 mins until the orzo is plump and tender
Serve with chopped parsely, drizzle of olive oil.
Voila!!
