The recipe for this lemon nettle cake has been in hot demand, so here you go!

-250g butter
-250g sugar

Whizz together in a food processor

-4 eggs

Add these one by one

- 250g self raising / spelt flour with baking powder

Mix this in

- big bag full of nettle leaves (boiled for 3 mins and rinsed with cold water and all moisture squeezed out)
- zest of 3 lemons

Throw these in and blitz

Bake in a loaf tin at 160°c for 40-50 mins

Then make a drizzle with juice of 3 lemons & 120g sugar and while cake is cooling poke holes in it and pour drizzle into holes.

Once cake has cooled you can serve as is or make a little icing sugar drizzle to make it look prettier!

Last week’s talk from .period was about female athletes and how to train around your cycle.

A new favourite Welsh word to take over from popdy ping.

So rhubarb (the vegetable) is good to harvest until about June and if you pick it you can keep it about in the fridge for about 2 weeks.

Not only has it got your vit K but it’s super rich in antioxidants (which is why it’s red).
That means it’s got:
- Anti inflammatory
- Anti bacterial
- Anti cancer
properties.

It’s got heaps of Vitamin C. Lots of manganese! Good for fibre, also iron, potassium & phosphorus.

It’s got a lot going for it. People even use it as a dye to lighten their hair?

Won’t be sharing that recipe … but shall be sharing some tastier ways to get it in ya soon
