A taste of something special! 🥙

Last week, we welcomed Andy Bell from to our Waters site for a pop-up packed with bold flavours and fresh twists on classic dishes. From jerk chicken khobez with pineapple salsa to lamb koftas on naan, and even buffalo cauliflower wings with vegan chilli mayo - every bite brought something unique to the table!

Big shoutout to Andy and our team for making it an unforgettable day of delicious food and incredible energy 👏🍗

Ever wondered what the prep for a cook-along looks like? Well, it looks something like this… a never-ending table full of fresh ingredients, all ready to be turned into something delicious! 😋

This time, we’re cooking up chicken gyros, sweet potato cumin wedges, oregano & onion seed flatbreads, and a killer hot sauce + tzatziki combo. Talk about a flavour-packed session! 👨‍🍳🔥

Our chefs are getting creative with seasonal ingredients for our Eat the Seasons initiative, bringing fresh, sustainable flavours to your plate! 🌻

🥓 Ballotine of Chicken - Chicken breast stuffed with a wild garlic mousseline and mozzarella, wrapped in crispy pancetta. Paired with honey-roasted parsnips, a silky parsnip puree, and charred chicory for a beautiful balance of flavour and texture.

🥔 Beetroot Pithivier - A golden puff pastry pithivier filled with balsamic-roasted beetroot, served with beetroot done four ways. From roasted to pickled, it’s all about showing off the earthy, rich taste of this seasonal star.

Happy (belated) Halloween! We got spooky across our sites last week 🎃

From haunted food counters to a pumpkin-carving showdown at head office, there was no shortage of treats (and a few tricks!) to go around 🍬🕸️ And don’t worry, our “witches brew” was only mildly cursed! 🧙‍♀️

Last week, we brought the heat to SKAO with our first-ever TNS Street Food Competition! Inspired by Rachael Hibbert’s StrEAT Awards success, our chefs whipped up some serious street food magic in two intense rounds:

🌮 Round 1: Street Food Signatures - 45 minutes to serve up their top dish.
🎩 Round 2: Mystery Box Challenge - creativity on demand!

After taste-testing some seriously bold flavours, our judges crowned Daniel Redford (Qualcomm) the TNS Street Food Chef of the Year for his zero-waste carrot and chickpea pancake! 🏆 Swipe to see his plating up!

Day 2 at our Field to Fork Academy was all about transforming freshly harvested beets into a show-stopping dessert! 🍫

Our on-site team’s been growing red, golden, and candied beetroot, and today the chefs took these vibrant veggies from kitchen garden to plate.

They mastered several techniques, from making and dehydrating airy Swiss meringue and crisp beetroot tuiles, to crafting classic honeycomb and a rich chocolate crémeux...

The result? A beautifully balanced dessert that will feature on our seasonal hospitality menus. Who knew beets could be this sweet? 😉💡

October’s ‘Taste of the Month’ has arrived! 🍂

It’s safe to say it’s been a bit busy around here – with Black History Month, Breast Cancer Awareness, Halloween, Diwali, and National Pasta Day (just to name a few!) all packed into one month! Our culinary teams have been hard at work bringing these celebrations to life with a lineup of delicious, seasonal dishes. Here’s a look at some of October’s highlights:

Day 1 in the garden at our recent Field to Fork Academy sessions! 🍂

We prepped the beds for winter, checked on our heritage carrots, and harvested vibrant nasturtiums and beetroots for upcoming dishes🥕 We also composted old strawberry plants and gave our berry bushes a tidy trim - just in time for their winter nap.

Stay tuned for Day 2, where we’ll be whipping up something special with these freshly picked beets! 👨‍🍳💡
