Meet Ed Szekely- Assistant Manager at Ham Polo

Ed Started with Vanilla Bean when he was just 14 helping out in the kitchen and washing up on the weekends, with his dad, Joseph who also used to work with us. He has since progressed through the ranks to Assistant manager.
Here’s what he has to say about working with Vanilla Bean- “I fell in love with hospitality due to how amazing it felt when I saw people smile at events and how happy they were with the magic that Vanilla Bean creates. After I started dishwashing it wasn’t long until I was waiting on tables which I liked, however when I was old enough to work on the bar, straight away I knew that it was where I belonged, and it will always will hold a special place in my heart. Making drinks and creating new ones is my favourite part of my job. Some of my best creations are Coconut Heaven which is a perfected version of a Pina colada, and Hells Gate which is a spice shot. My favourite canapé is the mushroom polenta and my all-time favourite dish is Lamb chops with mashed potato.

Meet Vanessa Ball- Event Manager
Vanessa joined the team in April, and previously worked in Restaurant management and running events where she designed her own cocktail menus; we have taken full use of her area of expertise, and she is our (not so secret) cocktail mixologist and master. 🍹🍸
She is the unwavering energy on events that never ceases, at 1 am you can guarantee Vanessa is organising, packing down bars and loading and unloading heavy boxes to and from the van. She is ever witty, and makes us laugh so hard, we’re surprised we don’t all have 6 pack abs yet…
Before Hospitality and Event Management Vanessa owned her own Pet sitting and dog walking business for 5 years, and owned an array of animals including a pygmy hedgehog named Jeff! In her spare time she can still be found visiting her animal clients all over Surrey for some love and affection.
Her favourite part of the event planning process is the event day, watching everything come together and seeing our clients having the time of their lives!
A real foodie her dream dish is a platter of Fruits de mer 🦞🦐🐚

We are thrilled to announce that has opened its doors once again and begun their busy polo season. With weekly members events, polo matches, Sunday brunches and private events we have a very busy summer ahead of us. 🥂🍾🐎

Meet Gino Fasolino. Sous chef at Vanilla Bean HQ.

We are thrilled to welcome to the team Gino, who is a talented chef with southern Italian heritage who previously worked for the Gordon Ramsay group. He’s also a fitness fanatic, hitting the gym at 4.30 every morning before starting his day in the Vanilla Bean kitchen.
Gino’s favourite dish is Osso buco, a classic Italian speciality of braised veal shanks slow cooked in a white wine and tomato sauce alongside hearty vegetables.
Outside of work he cherishes spending with his beautiful wife and daughter.
An interesting fact about Gino is that he rarely drinks coffee, we cant even tempt him with our freshly ground lavazza. ☕️👨‍🍳

We celebrated Sophie’s 21st birthday in style with a fabulous party that had it all! ✨

The evening kicked off with a chic canapé and drinks reception 🍸, followed by a sit-down dinner, where guests enjoyed delightful cocktails and danced the night away to tunes spun by our DJ, accompanied by a live sax player 🎷.

The fun didn’t stop there—late-night snacks kept the party going. It was truly a blast!

An intimate dinner party for 20 guests for our client's 40th birthday celebrations! ❤🌹 the evening started with Canapés, cocktails and champagne, and then was followed by a 3-course dinner and murder mystery evening.

Our Lychee martinis were the guest favourite of the night, and we absolutely loved celebrating with this fun bunch 🍸✨🪩🥳

Cocktail hour is not only delicious, but works as a fantastic transition period from a sit-down dinner into the second half of the event, helps to set the vibe for the evening, and gets your guests in party mode, and ready to cut some shapes on the dancefloor! 🍸

"Somerset scrumpy" is one of our new spring-summer starters.

This simply irresistible dish was created by Chef Alex, inspired by his time spent working in New Zealand, and is a fresh zesty combination of cider-cured salmon, paired with fresh apple, salmon roe, herb emulsion and topped with edible flowers and apple blossom.

It resembles a spring garden bursting with flavours and texture combinations, representative of wildflowers and plants that grew in the town Alex lived in where he used to forage for ingredients.
