Homegrown Rhubarb, magnolia and custard tart.

Floral, sweet and tangy, smooth and creamy, crisp and short 😍

Turns out magnolia petals are edible and taste like ginger... I carefully picked a few petals off a few flowers, and made a syrup with some dried rose petals too.

Dairy free pastry and custard- which worked perfectly. I always find it easy enough to find local people selling free range eggs, so have no problem using these high welfare, local products.

Quick Veggie Sausage Hot Pot with canellini beans, savoy cabbage and leeks.

Simple, comforting and nourishing.

I grilled veggie sausages, whilst sautéing 1 sliced leek in olive oil. I then added hot water, miso paste, a little veg stock, and a tablespoon of red onion marmalade to the leeks. Threw in the cabbage and bubbled til it was cooked.

I thickened the sauce by taking a tablespoon of the hot liquid out of the pot, and mixing in 1 tsp of cornflour. This goes back in the pot, along with pieces of sausage, to cook for a final 2 minutes.... and serve.

I often don't make time to cook for myself, but this literally took me 15 minutes and was a hearty lunch 🥰

After and before... adding the tahini and maple swirl to my date and pecan brownies, first in dollops, and then using a spoon to drag the topping through the batter 😄

Water system is installed, without dreaded leaks! 🤩🚿

Ollie cut a massive hole in the counter (whilst wetting our pants a wee bit), keeping it neat so that we could re-use the cut-out as a counter insert.

We screwed our chosen sink to the underside of the counter, and installed the tap.

We then drew up schematics of the rest of the system, and sourced the components: water pump, water heater, expansion vessel, valves, jerry cans.

After a couple of attempts at getting the system tight, we had hot running water inside our trailer!

Power- on🔌We've been installing our electrical system!

Wired up the consumer unit and threaded the wiring through recycled copper conduit (conduit earthed for safety too!).

We showed an old piece of yew wood some love, and used it as as a base for our overhead lighting- drilling holes and routing channels for wires.

Then we wired up plugs above and below the counter to power our appliances.

The trailer is starting to look like a kitchen, a cute farmhouse kitchen at that! 😍

The oak counters, recycled ceramic tiling patterning, and a blooming porthole window😁

Ollie even made us a custom spoiler, to make the trailer go super fast 😜

Floor is down and counters are up 🙌

Love the natural look and feel of our recycled redwood flooring, and our solid oak worktops and bars😍

We used biscuit joinery to connect three oak boards into one extra-wide worktop- it's completely solid, level, and I'm loving the amount of potential workspace👌

Now to continue decking out the interior!

We replaced the old worn out axles with 2 new strong ones, making sure they would work with the chassis and wheels.

Then we replaced the old braking system- which included new drums and cables. These came with the new axles.

*Mechanism Madness*
The brakes work so that when car driver breaks, the weight of the trailer going into the back of the car compresses a ram inside the tow hitch, actuating the cables movement down to the drum brakes, pushing the pads outwards into the drum.

We felt this was an important step, as we want our trailer to be road safe and have a long life!

Big changes to the horse trailer... it's now looking like a food trailer! 🤩 Weldid Ltd

We cut a giant hole in the side and now using the continuous snail hinge, we now have one main serving hatch, and one at the front 😁

This week we made the jockey door watertight, added ply cladding and a coat rack to the inside of the door.

But we knew you wanted more! 😊 So we sanded down the whole exterior and added some new paint.

Now she's looking like a dream, wearing Moss Green and Honeysuckle Cream 😍 We're in love with this classic market stall look.

Dinner #2 for 24: Braised Fava Bean, Carrot and Date Stew, topped with homemade cashew 'feta', served with crispy polenta balls.

Such a lovely rich umami and sweet stew set off by the salty cashew cubes ☺

Fava beans are nutritious, grown in the UK, and are similar in function to chickpeas... but nuttier! And being a leguminous plant, its roots fix nitrogen in the soil, meaning it replenishes some of the soil as it grows! 👌🌱

Wild garlic season has begun in Weedon 🙌

Wild garlic is one of the first greens to shoot up out of the earth in early Spring. Its the out of Winter remedy!

Packed with 45mg of vitamin C per 100g (equivalent to an orange) and almost 5mg of beta-carotene.

It also contains ajoene and adenosine, which help to lower blood pressure and reduce blood cholesterol.

AND the compound allicin (this gives garlic and onions part of their distintive garlic flavour). Allicin acts against microorganisms- meaning it can be a remedy for colds and virus'.

Get out their and accept the gift mother nature is giving us at this time of year! Make a pesto with some oil, nuts, salt and other herbs 🥰

Wholefood Peanut Butter Cheesecakes in the making.

Dates, nuts and coco powder make the base. Then whipped peanut butter, coconut cream and maple syrup for the filling, topped with chocolate and peanuts 🙂

Got these in the freezer until the weekend 🤗

Trailer updates with Weldid Ltd!

Over the past week we've been working on the back ramp...

Starting with stable door and drop pin fabrication. Then creating fold-a-bar #1 by hinging the top portion of the back ramp. We gave it all a sand and some fresh old paint to protect and prime the metal.

We finished the week by sanding and painting wood that we reclaimed from the original floor, and fitting it into the back ramp.

The first inklings of the first bar!! 😍

Ollie restored the trailer's very worn axles, cleaned them up real nice, welded up any holes, added metal where it had been lost over time, and gave it some fresh old paint.

These original axles still aren't really roadworthy in our opinion though, so we will use these on a future project (shepherd's hut?!).

Our baby is getting brand new axles, so she might last us a lifetime 😊 Weldid Ltd 😍

Time to get to work 💪

After towing her home, the first step was to start stripping it down and assessing the condition.
That meant removing all rotten wood to reveal the cassis and main trailer body, and she's looking pretty good!

The Horse-box to Food trailer Conversion Project 🤩

We've bought ourselves a vintage Rice Richardson horsebox! And we're teaming up with Weldid Ltd to take the Wild Rose Kitchen mobile😁

She's got a little way to go before she's ready to serve, but we see her potential!

Lemon tart with almond pastry 😊

Had a lovely family based Winter Solstice holiday (aka Christmas) Getting into my home kitchen and cooking for my loved ones is my favourite way to cook.

The case is a GF sweet shortcrust pastry, using tapioca, sorghum and almond flour. Fantastic recipe by .
And the filling is a dairy-free lemon custard made with oat cream and local eggs (I've evolved into a flexible egg eater, as they can be easily raised ethically).

Thoroughly delightfully nutty pastry with citrussy and light filling 😍
