It's the first day of Autumn apparently so this scrumptious Apple traybake with cinnamon, caramelised apple and crumble topping seemed a very appropriate bake! πŸ‚ Delicious warm with custard, or cold with a cuppa β˜•οΈ

The last league home game for Lancing Manor Cricket Club today so a busy day in the kitchen. I love experimenting with different flavour combinations but sometimes you just need a good old classic! Deep soft vanilla sponge topped with seedless raspberry jam and dessicated coconut. πŸ˜‹πŸ˜‹πŸ˜‹

I was asked to incorporate some models that the family have traditionally added to every special birthday cake for decades, as they tell the story of this proud Welshmans life. They picked out the most important ones and asked for his love of growing prized tomatoes to be added as this years update. Victoria sponge with seedless raspberry jam and vanilla buttercream covered in soft fondant icing, big enough to support a crane and coal mine! 🏴󠁧󠁒󠁷󠁬󠁳󠁿

See those little black flecks running through the buttercream? They are from the real vanilla paste I use. I choose not to use vanilla essence. The paste is a premium ingredient but one I won't compromise on. It is so so worth it for that perfect vanilla flavour without the artifical after taste. Delicious! πŸ˜‹
