Our head chef, Tony's take on the Filipino national dish - Pork Adobo.

Sat on top of a bed of perfectly cooked, sticky-rice is a layer of zingy, Asian slaw. Next is your melt-in-the-mouth, crispy cube of belly pork. Tony has made a sticky, sweet, tangy glaze using fresh pineapple - think sweet & sour but on steroids! The dish is completed with a curl of crispy pork crackling.

This new creation strikes the perfect balance between inviting flavours and a refined aesthetic, making it a hit among all guests!👌

Introducing the "& Apple"!🍏🍰

Everyone keeps asking "What's the apple dessert?" Well, here's the story behind it all...

Our talented pastry chef, Ange is the creative force behind everything. She honed her skills at Betties for years and now brings her culinary magic to the tables of our Hog and Apple events.

Exactly a year ago, we suggested Ange make an apple tart with half an apple on top. But, classic Ange style, she decided to take it up a notch and came up with a full-blown apple dessert!

The process is an intense labour of love. First, Ange makes an apple compote and freezes it into half spheres, she then rolls them together to make a ball. Next, a velvety vanilla mousse is poured into moulds and the apple compote is popped through the top - like a little surprise waiting to be discovered! The apples are then dipped twice to achieve the signature shine and colour.

Her artistry doesn't end there. To finish off, Ange hand-makes the chocolate leaves, twigs and stalks - one delicate piece at a time. The result is a dessert that's more than just a novelty, it's a true taste sensation!

The real testament to the greatness of the "& Apple" dessert lies in its resilience. The first time we served this was to 100 people in a scorching 28-degree heat, over 30 miles from where they were made. It's safe to say it passed the test with flying colours.

Theatrics of desserts like this is usually reserved for the rarified air of Michelin-star restaurants. But, in true Hog & Apple style, we've broken the boundaries and brought the A-1 to the masses!

Hi everyone!

It's been a minute since our last post and although we've been quiet on here, team Hog and Apple - as always - have been non-stop grafting with events, planning, logistics, training and a full menu refurb!

Head chef, Tony, has been refining our menus to bring you the latest and greatest versions of our classics like our 'Crispy Ham Hock' and our trademark 'Trio of Pork'.

In addition, our designated dietary chef, Olly, has been working hard to create an exciting new dietary menu featuring lots of new dishes for all of our veggies, vegans, gluten intolerances etc.

And not to forget - Ange, our lovely pastry chef! She's been coming up with some new and innovative desserts to please the tastebuds and the eyes. New to our menu is the impressive '& Apple' dessert (more info to come on this one).

Outside of the kitchen, our front-of-house team have been hard in training at the H&A staff academy. We take real pride in providing our younger staff with full training to prepare them for the hard but rewarding work ahead. You'll be met with nothing but enthusiastic smiles and professionalism at our events.

So, it's safe to say that we're fully armed for another peak wedding season with a whole other level of quality of food and service. 👊
