Miracle Ethiopian Food is hard at work crafting homemade injera here in Tbilisi. The last month has been our "Injera Laboratory." We have been experimenting with fermentation (the climate and altitude is different in Georgia than Ethiopia). We have also been experimenting with different flours since teff flour is not yet available in Georgia (we're working on that). So far, we've tried five different combinations. After lots of fun and some epic fails, we now have a couple that are good enough to put on the menu! So starting Friday, November 11, tasty Tbilisian injera will accompany your order!
