This season tastes like Gemista at eumelia.

Summer in Greece has a signature dish, and for me, it’s always been this one: vegetables stuffed with rice, herbs, and love—then slow-baked until everything melts together.

We start with what’s in season—ripe tomatoes, peppers, zucchinis, eggplants. Whatever looks good from the garden ends up in the tray.

In my kitchen, the voice of my mother still echoes: “Gemista needs plenty of spearmint!”
Every time. No shortcuts. Just lots of fresh herbs—especially spearmint and parsley—chopped right before mixing. That’s the magic.

And here’s a tip that never fails:
✔️ Oversalt the rice filling.
It may seem too much at first, but as the vegetables bake, the seasoning balances out perfectly.

We don’t overfill—rice needs room to cook—and we never skip the olive oil. A generous pour gives that rich, caramelized finish we all fight over at the bottom of the pan.

Gemista is baked slowly and served at room temperature.
Even better the next day, with a chunk of bread to mop up the juices and a piece of feta on the side.

It’s a simple dish, but it carries tradition, comfort, and summer in every bite.
