Without kalitsounia there is no Easter in Crete. You will find this traditional sweet in all the houses of Crete since the ideal treat for Easter, is kalitsouni with raki.

From Holly Thursday the housewives dealt with sweets after they had completed all the other tidying tasks of the house. It was usually teamwork because it was a laborious and tedious task, from preparing the ingredients to baking. This habit continues to this day, because with good company and conversation they end faster and time passes more pleasantly.
The housewives who gave the best form to kalitsouni lichnaraki were few and stood out for their technique. They were considered the best housewives. In these cases there is a competition among housewives who will make the best kalitsounia to collect the credit from the others.

Kalitsounia lichnarakia are traditionally made with the fresh soft variety of myzithra cheese (not the salty type), but if you can’t find it, try them with some Italian mascarpone or ricotta. Serve as a delicious dessert with a drizzle of warm honey and a sprinkle of powder cinnamon. Enjoy!
