Like the Taipei intimate dinner party where I celebrated Taiwan’s rich terroir by highlighting tropical treasures like fresh guava. Those luscious fruits got infused into an inspired East-meets-West tasting menu.
For me, it goes far beyond just the food itself. It’s the thrill of the journey - traveling to new places, discovering local ingredients and unique flavors, consistently experimenting and pushing my palate.

When it comes to seafood night, I always love starting out with this buttery, creamy and coconut-y clams recipe. My favorite part is drinking the buttery beer soup after finishing the clams.
Feel free to replace the clams with mussels!
1.5kg Clams
1 cup coconut milk
1 cup beer
1 handful cilantro leaves
8 Shallots
1 TBS garlic
2 Thai bird chilis
4 TBS unsalted butter
