Wonderful stories abound about the Tarte Tatin but this one is pretty plausible. There were 2 sisters ‘Les Demoiselles Tatin who had taken over the running of the family hotel on the death of their father. Stephanie was the cook, Caroline front of house. One day Stephanie put her apples & sugar in the oven for the dessert. But she was very distracted by a handsome hunter who had dropped by ! Suddenly the smell of caramelised sugar brought her to her senses & she ran back to the kitchen. He must have been a bit of a dish as she’s forgotten to add any pastry to the apple tart which was on that days menu. So she quickly put a pastry covering over the apples, popped it back in the oven for 20 mins & whipped it over so the apples would appear on top et Voila! Tarte des Demoiselles Tatin was born
