Another big batch of Kinder Bueno cookies delivered to this afternoon!

I started providing the wonderful Doherty family with some baked goods last year and these in particular are a firm favourite 😍

We are back into Soup Season !😍🍲

Classic Vegetable Soup with Homemade Honey & Chia Seed Brown Bread now available🍞 🙌

I give the carrots a heavy roast before adding and finish the soup by blitzing in finely sliced green leek and fresh curly parsley. 🥕
So you should be able to taste all those lovely flavours as you warm up on these colder days😊

Christmas came Early in one house this year😁🥳 🎄

With some family home from Australia, and who can't be here for the festive season, they had their Christmas Dinner together this week instead!🎅🥰

Why Stop at Bridal Breakfast?

Looking for a relaxed buffet style wedding with a meal to remember?? 💒

I'm your woman!🙌😁

One of the weddings I catered for over the summer was Rachel & Remi's in Ballybofey 🤗🥰

Many couples have had to postpone their weddings on numerous occasions with the constant restriction changes. It has been a stressful time.

They did the opposite and brought their wedding FORWARD! Originally due to marry in Remi's native France, with all the uncertainty, they simply didn't want to wait. 💒❤

They turned the already gorgeous surroundings of Rachel's family home into a garden utopia, and it was almost as stunning as the bride herself 😍👰

As the newly weds arrived from the ceremony for the drinks reception, I sent canapés of:

-Pulled Ham Hock, Spiced Apple and Mango en croute. 🍏
-Goats Cheese, Spinach, Sundried tomato & Caramelised Onion 🌰
-Rock Melon, Parma Ham, Fig Compote pastries 🍉

As the guests moved to the marquee I sent a Buffet of:

-Spiced Prawn, Sauté Chorizo Skewers, lemon, Rocket, Tobasco Mayo 🍤
-Buffalo Mozzarella, Black Olive Tapenade, Tomato Bruschetta, Balsamic Reduction & Homemade Basil Pesto. 🍅
-Smoked Salmon, Grated Horseradish, Dill Creme Fraiche, lemon, Asparagus, pickled Cucumber. 🍣🥒

For Mains they and their guests enjoyed:

-Soft Braised Beef Cheek, Star Anise Jus 🥘

-Vegan Sausage, Roast Butternut Squash, Spinach and Cashew Cream Pasta Bake 🍝

I had fantastic feedback from the guests. The Beef Cheek was a huge hit!💃 The bride said it was the best bruschetta she had tasted and was so delighted to have pasta on her wedding day! 😅

It was such a special day to be a part of. The families were so welcoming and there was a real sense of joy in the air. I loved every minute of it. I wish the fabulous couple every continued happiness❤

The Tandoori Chicken Wings are rubbed with spices and marinated, then charred for a smokey taste and maximum flavour 👌

They are served with a mint & honey yoghurt, a chili creme fraiche, fresh mint and coriander.

Throwback Thursday!

This popped up on my photo memories this week.
Dublin, 2016.
Luna Restaurant was only 10months old when it swept the floor at the Irish Restaurant Awards.
Winning Best Customer Service,
Best Restaurant Manager, Best Restaurant, Dublin. And the big one,
Overall Best Restaurant in Ireland, which is unheard of for a restaurant so new!

I had only started that December, and would end up working there for nearly 3 years before I left on my South American adventure. 🙌

The boys in the kitchen with me were all from Dublin and North Wicklow and used to take great pleasure in taking the complete mick out of my Nordie Donegal accent 😅

I worked with some excellent chefs, learned so much and laughed more. It was a great team and I was very excited to be a part of it.
As my friends were quick to point out, you can tell by my feet how excited I was 😂
