Pop-up oyster tasting bar 🦪

Join Sarah Browne, founder of Oysome, at a pop-up oyster tasting bar in Allos Restaurant on Friday evening as part of . You can try your first oyster, or order a tasting platter with oysters from different regions in Ireland. Sarah will guide you through how to properly taste an oyster, as well as the differences in flavours that can be found from regions around ireland. As part of your dinner booking in Allo’s you can enjoy complimentary oysters from the pop-up oyster bar.

**Please note that a dinner booking is required for access to the oyster bar. This event is not suitable for children.**

Strawberry and Basil Granita is such a yummy topping for oysters in the summertime! Cool, crisp & refreshing! What's not to love. 🍓🦪

The hardest part of this recipe is remembering to run your fork through the mixture as it freezes so that those lovely fluffy ice crystals form, apart from that it's easy breezy.
Extra yumminess can be achieved by using .ie_ yoghurt and using strawberries & basil from your local grower 🐑 Get your hands on some oysters from or ers to make this a true taste of Mayo ❤💚

When we dress oysters, we want to enhance their natural flavour not mask it 🦪 We taste the oysters we serve using the handy tasting wheel to guide us, and note the complex array of flavours we find 😍

Then, we get onto our local growers and find out what they have that’s in season and at its best. From there we craft perfectly balanced accompaniments which will elevate your oyster experience 🫶

We think it’s really important to follow this process as it respects the hard work farmers do in growing the oysters to enhance particular qualities and it also means that almost every oyster bar we set up is different to the last 🦪✨

Wondering how to whip up something delicious and nutritious using sustainable ingredients? Then look no further than this delightful little recipe I developed for 🌼

The recipe features mussels pickled in a delicate gorse & wild rose infusion. Buy some fresh Irish mussels from your local fishmonger and try this one out! Toast some slices of sourdough, whip up some fresh Irish goats cheese such as .tolaqueen or and top it off with your pickled mussels.

I'm hosting workshops throughout the weekend where I'll introduce you to some beautiful Irish oysters as well as how to fully appreciate their magical flavours 🦪

Workshops on Friday at 6pm, Saturday 11:30am & 2:30pm and Sunday at 3pm.
