At Master Chefs we are proud to offer a diverse range of services within the sector in the areas of education, health care, sport & leisure, the high street and, of course, events. We are producers, providers, caterers and restaurateurs in our own right, with a number of award-winning eateries including Copia Green - an innovative new sustainable and nutrition-focused café - within our growing portfolio. The scale of our operation has grown steadily to match our ambition for the brand. We bring the same passion and attention to detail to our catering partnerships with third-level institutions as we did for the opening ceremony of the Volvo Ocean Race, at the Ploughing Championships and even Bruce Springsteen in Thomond Park. We are very excited to partber with NOVAS for the third consecutive year. Novas Family Services provide a range of services and accommodation for marginalised households throughout Ireland, primarily those who are homeless or at risk of becoming homeless.

The Novas Sleep Out is their biggest fundraising event of year and will take place on Saturday, 7th December in Limerick City.

Our chefs have spent the day meticulously testing a range of new products for our snack, "Free From" and baked ranges, including some quirky and absolutely delicious new varieties of scones, granola bars, filled croissants, muffins, flapjacks, shortbreads and cookies.

One of the great perks of working in hospitality is the opportunity to sample and refine these incredible new creations. We’ve had a fantastic (and filling) afternoon evaluating each item to ensure our we exceed our standards of quality and flavour.

We can’t wait to introduce these exciting new additions to our venues soon, just a few minor adjustments before we add them to production!

Courgettes are known as Green Gourds in France and gourd is where we get the original translation for the name.

🌱 Did you know? The temperature and humidity level inside a polytunnel plays a crucial role in the successful germination of plants! 🌡️

For most crops grown in Ireland, including potatoes, carrots and kale, the ideal temperature range is between 15°C to 25°C 🌿💧

In our polytunnels at Ellan Farm, we carefully monitor and maintain the temperature to ensure optimal growing conditions. By providing the right warmth, we give our seeds the best chance to sprout and thrive, regardless of the weather outside. 🌞🌨️

🌧️☔️ It's been a very wet start to Spring here in Ireland and while rain is essential for our crops, too much of a good thing can end up being bad.

Excessive rainfall, like what we've experienced in recent months can wreak havoc on our planting schedules. Farmers across the country, including our team at Ellan Farm, have faced challenges and delays in planting crops like potatoes due to waterlogged fields.

But why is too much rain bad for crops? Let's break it down:
1. Waterlogged Soil: When soil becomes saturated with water, it loses its ability to hold oxygen. This lack of oxygen can suffocate plant roots, leading to stunted growth or even death.
2. Delayed Planting: Heavy rain can delay planting schedules, causing crops to miss their optimal planting window. This delay can impact crop yields and overall productivity of the land.
3. Increased Disease Risk: Wet conditions create the perfect breeding ground for fungal diseases, such as blight, which can quickly spread among crops and cause significant damage.

Some examples of crops affected by excessive rainfall include potatoes, which require well-drained soil to thrive. Waterlogged conditions can cause potato tubers to rot in the ground, leading to diseases like blight. As an Organic Farm, we must avoid using the simple solutions like pesticides, fungicides and herbicides with potentially toxic chemicals. Instead, we use techniques like mulching [seen above].

We're closely monitoring soil moisture levels and the weather to make informed decisions about planting our crops. While the rain may present challenges, we remain committed to sustainable farming practices and providing you with the freshest, most delicious produce possible.

From seed to sprout 🌱 at Ellan Farm 👩‍🌾

With a sigh of relief, we can proudly say our first attempts at seed propagation are going great, so far at least 😅

A key part of our success was selecting the right seeds for our soil and climate. Our Head Gardener and Head Chef have planned out a growing schedule for the year ahead to ensure we have the right variety of vegetables in the right amounts at the right time.

Weeks of work have already gone into preparing the farm for the growing season ahead and we're only a few weeks in.
We want to grow the freshest, most flavourful and organic produce for our dishes and will continue to dedicate our time and passion to make it happen.

Our focus at Ellan Farm has slightly shifted inside as we wait for dryer weather outside!

We've still been busy over the last few weeks with the installation of our first polytunnel. This is the nurturing ground for our next generation of crops as we begin to propagate our own seeds.

Polytunnels create a controlled environment where consistent temp, humidity and light levels allow us to extend the season for our crops. It also provides a barrier for any local pests and diseases so we can avoid using any unnecessary chemical repellents and product our little seedlings.

It is with mixed emotions that we bid farewell to Paul Gannon, our Head Chef at Master Chefs at University of Galway after an incredible 16 years of service.

Paul has been the culinary force behind the scene for many of our milestones over the years and we are immensely grateful for the talent and commitment he brought to our team.
