Chef Hisham M'farreh has been the Head Chef at the Albright Institute in Jerusalem for more than 25 years, and his family of chefs has been feeding intrepid explorers since the 1930s. Albright Institute of Archaeological Research in Jerusalem supports and facilitates research on the history and societies of the Near East from prehistory through the twenty-first century. Albright scholars document

and preserve material and textual evidence as cultural resources and educate the public about the history and cultures of the region. The Albright Institute pursues these multidisciplinary goals by promoting archaeological and historical research and excavation, sponsoring doctoral and post-doctoral research fellowships, and including students and the public in our lecture and research programs. Founded in 1900, the Albright has been hosting foreign scholars for generations. For more than 121 years, has been part of the Jerusalem community, often hosting community events. Over time, the institute's culinary offerings became known to the broader community and are now offered to all in order to maintain ties with its neighbors as well as support the ongoing mission of the institute.
