Healthy, fast, simple, comfort food. Loaded with vegetarian proteins, fibers, and flavors! Quinoa enchilada casserole.
You will need:
2 cups of cooked quinoa ( I used a mix of white and red quinoa),
1can of corn, rinsed, drained
1can of black beans, rinsed and drained
1 cup of diced tomatoes, 1chopped onion, sauteed
1 chopped red pepper, sauteed
1/2 jalapeno pepper, chopped and sauteed
Cumin powder
Smoked paprika
Garlic powder
Salt pepper
Chili pepper flakes
Enchilada sauce ( 2 cups vegetable broth, 2 TBSP tomato paste, 2 TBSP apple cider vinegar, cumin, paprika, chili powder, garlic powder, oregano).
Cook the quinoa and set aside in a large bowl.
Add chopped tomato, add drained corn and beans.
Sauté onion, pepper, jalapeno pepper and add to bowl. Add all spices to desired taste. Add enchilada sauce and mix all the ingredients together.
Pour in baking dish. Top with shredded cheddar, mozzarella...and bake in the oven 10-15 min.
It's ready and delicious!
Possible toppings as you serve the dish: sliced avocado, lime wedges, chives or green onion, diced tomato, cilantro, sour cream.
