שמי קארין, אזרחית צרפתית ובשלנית מומחית במטבח הצרפתי.

נולדתי וגדלתי בצרפת ועליתי לישראל בשנת 2014 ישר לשוהם. אני אם ל 3 ילדים מקסימים ומאמינה בכל ליבי בבישול טרי ואיכותי.

עוד בילדותי נמשכתי לקסם שבבישול הצרפתי דרך הבישול של סבתי על תנור מחומם בפחם ובולי עץ דרך הבישול היומי של אימי ממוצרים טריים ומקומיים, ועד היום כשאני מבשלת לילדי אוכל צרפתי טרי וביתי יום יום.

את כל המנות אני מכינה בביתי, ואני משתמשת אך ורק במרכיבים טריים, על מנת ליצור מנות אהובות ואיכותיות מהמטבח הצרפתי.

אשמח להביא אליכם הביתה את הטעם, הניחוח והאיכות של המטבח הצרפתי האמיתי. My name is Karine and I relocated to Shoham Israel in August 2014. I was born and raised in France, in a very small country side village 45 minutes South of Paris. My grand-mother and my mom cooked 2 meals a day, each day of the year their entire life and I grew up cooking and baking with them and enjoying a tremendous variety of food. My grand mother had a bakery and cooked on her wood fire stove top. I can still see her making waffles or brioche for us. As for my parents, they grew a very large vegetable and fruit garden and my mom picked our daily fruits and veggies from her yard prior to cooking / baking them. As I started to have my own family, I too started to cook daily, making healthy food choice for my husband and children and I continued to cook the childhood meals I knew best: grating dauphinois, quiches, poulet a la provencale, oeufs au lait, charlotte and so much more. In addition to my love of French food, I also love the company of my friends and entertaining them around food. Food that they enjoy discovering and that they love eating. My friends encouraged me to share this food with others as well and so I decided to bring a little taste of France to families in Shoham by offering French home cooked meal. Whether you want a full meal for you weekly family meal, Friday night dinner, Shabbat, to celebrate a birthday with friends or family or just for your lunch box, I offer you a variety of dishes that will change with the seasons: fish and meats, vegetables side dishes, pasta, soups, salads and let's not forget desserts. I cook and bake all the dishes myself and shops several times a week to buy the freshest ingredients for you and your family. Healthy, fast, simple, comfort food. Loaded with vegetarian proteins, fibers, and flavors! Quinoa enchilada casserole.

You will need:
2 cups of cooked quinoa ( I used a mix of white and red quinoa),
1can of corn, rinsed, drained
1can of black beans, rinsed and drained
1 cup of diced tomatoes, 1chopped onion, sauteed
1 chopped red pepper, sauteed
1/2 jalapeno pepper, chopped and sauteed
Cumin powder
Smoked paprika
Garlic powder
Salt pepper
Chili pepper flakes
Enchilada sauce ( 2 cups vegetable broth, 2 TBSP tomato paste, 2 TBSP apple cider vinegar, cumin, paprika, chili powder, garlic powder, oregano).

Cook the quinoa and set aside in a large bowl.
Add chopped tomato, add drained corn and beans.
Sauté onion, pepper, jalapeno pepper and add to bowl. Add all spices to desired taste. Add enchilada sauce and mix all the ingredients together.
Pour in baking dish. Top with shredded cheddar, mozzarella...and bake in the oven 10-15 min.
It's ready and delicious!

Possible toppings as you serve the dish: sliced avocado, lime wedges, chives or green onion, diced tomato, cilantro, sour cream.

There is still time before the summer fully ends and while there are still a few watermelons:
Super fresh, super fast, super tasty, and super simple to make!
Cubed watermelon
Thinly sliced cucumber
Crumbled feta
Chopped fresh basil
Toss et Voilà !
No need for seasoning, it is just delicious as is. For those who really want a dressing: a splash of olive oil and balsamic vinegar, a pinch a salt and freshly cracked pepper.

3 Simple, delicious seasonal homemade jams. Great on your morning toasted bread, French toast, in yogurt or with Brie / Camembert cheeses!

Strawberry Jam: will make 1 big jar of jam. Kids fav.
400 gr of strawberries (1 box)
160 gr sugar
1/2 lemon juice
Wash and dry the strawberries, remove the green part. Cut in quarters. Place in a pot with sugar and lemon juice. let sit for a few hours. Then place on stove top and cook the strawberries in their juice on medium heat for about 30 min. Using an immersion blender, blend your strawberry jam to desired consistency. I like to still have a few pieces of fruits. Continue cooking another 20 min. until the jam has thicken. To speed up the process you can add 2 teaspoons of agar agar or fruit gelatin in your jam and continue cooking for 5 min. only. Place in your cleaned jars while still hot, seal and place jars upside down until cooled.

Apple Jam: yes you can make jam out of apples and it is Oh so good!!!!
6 golden apples (will make 2 jars) or 4 apples and 2 pears (about 1.2 kg of fruits)
1/2 lemon juice
2 cinnamon sticks
vanilla extract
2 cloves
1 star anise
you can replace these spices by a 5 spices mix (pumpkin spice mix), add ginger or rosemary, just be creative.
800 gr sugar
70 cl water (per each kilo of peeled and cored fruit)
Peel and core the apples. roughly chopped the apples to obtain thumbnail size cubes. Place in a pot with all the other ingredients. Bring to a boil and then lower heat. Stir occasionally the fruits to allow even cooking. The mix needs to decrease by half its quantity. Add 2 tsp of agar agar or fruit gelatin and cook another 5 min. Your jam is ready.

Orange Cinnamon Jam: sweet and slightly tangy (not bitter).
800 gr of oranges (about 6 medium oranges)
400 gr of sugar
1 lemon juice
1 tablespoon of ground cinnamon
1/2 teaspoon vanilla extract or 1 vanilla sugar
2 teaspoon of agar agar or fruit gelatin
wash the oranges and collect the zest of 3 oranges. Using a knife, Peel the oranges to remove all the skin as well as the white bitter layer. Cut the orange in 1/2 and with your knife remove the middle white membrane. Slice your oranges. Place in a pot with all the other ingredients except the gelatin/agar agar. bring to a boil and let cook 30 min. Stirring occasionally. Using a immersion blender roughly blend your oranges. add agar agar or gelatin. Cook another 5 min. Your jam is ready!

These make delicious treats for the family and great personalized gift ideas! Hope you make some.

Busy busy past week with lots of new and exciting creations in the kitchen. We made all VEGAN sweets trays for a friend's birthday gift:
Vanilla cake and frosting
Cinnamon rolls

Raspberry mousse ( from tofu!!!)
Tiramisu ( from tofu!!!)

Bought lots of frozen raspberries, so this past week I made 2 new creations with them:
Raspberry lemon mousse over Lotus crust, and topped with mango puree. Light, airy, flavorful and beautiful!
The next dessert was a gluten free orange cake with raspberry cream and red white chocolate ganache for Halloween 🎃, the theme for the invitation was "scary", thus the choice of cake design....

Halloween 2021 in Israel:
Gluten free layered cake with raspberry cream filling and white chocolate ganache; cheese platter with homemade mice from fondant; pasta salad with fondant worms; carved bell peppers with guacamole and beet goat cheese dip. Lichi eyeballs in raspberry jelly jars and eyeball mini tartelettes to bring to school today. So much fun making all these and putting those trays together! Spooky Halloween fun! 🎃

Easy, gluten free, vegan, healthy, super simple buckwheat loaf:
450 grams green buckwheat
200ml water
Teaspoon water

Rinse the buckwheat
Place it in a bowl with plenty of water. Let it rest for 12 hours
Drain ( do not rince)
Place in blender with water and salt, blend for 1 min until doughy
Add a handful of nuts or dry fruits of your choice if desired
Pour into buttered loaf pan and cover
Let rest 8 hours in a warm place, 12 hours if cold.
Warm up oven to 350 degrees and bake for an hour.
Enjoy this delicious, low glycemic, nutty, gluten free bread ( high fiber and protein).

Recette :
450 gr de sarrasin vert
200 ml d'eau
1 CAC de sel

- Rincer le sarrasin
- Faire tremper 12 heures dans un grand bol d'eau.
- Égoutter le sarrasin ( ne pas le rincer pour ne pas perdre le mucilage).
- Mettre dans le mixer/blender avec 200ml d' eau et le sel. Mixer 1 min.
- Ajouter graines et noix/fruits secs si vous le souhaitez à la pâte.
- Beurrer un moule à cake
- Verser la pâte dedans
- Recouvrir d'un film étirable
- Laisser reposer 8 heures dans un endroit chaud ( 12 heures s'il fait froid)
- Préchauffer le four à 180, chaleur tournante. - - - Enfourner pour 1 heure.
Et voilà le résultat !

Autumn is upon us and I miss the warmth of the North American tree leaves. This is indeed a gorgeous season in America and Canada and nature offers there an amazing natural spectacle of shades of greens, yellows, browns, oranges and reds. Feeling nostalgic, I wanted to make a dessert that would bring these colors home and warm my heart. What better than fragrant nutty baklava to achieve that: tasty almond, pecan, walnut, hazelnut and pistachio nut mix, with honey and orange blossom flavors, hot out of the oven and toasted to perfection. A look at those and I was again in autumn heaven 😍

Back to school with 2 healthy breakfast and snack options:
Gluten free Spinach tortilla & puffed rice quinoa chocolate bar

Protein Spinach tortilla:
120 gr chickpea flour
60 gr tapioca flour
60 gr fresh baby spinach leaves
250-260ml water
pinch of salt
place spinach and water in blender and mix for 1 minute. Add all the other ingredients and your batter is ready! Cook tortillas in a non stick pan as you would crepes (1 minute on each side). You can keep the batter in the fridge for 3 days before using it. Once the tortillas are cooked store them in the fridge up to 3 days. Feel them with avocados, omelettes, fresh or cooked vegetables...

Quinoa Chocolate Protein Bars
1/4 cup melted coconut oil
4 TBSP honey
1/4 cup protein powder
pinch salt
2 TBSP cocoa powder
Place all these ingredients in pan and melt/blend on low fire for 2 minutes. Pour in a bowl.
Add: 1 cup uncooked quinoa, 2 cups puffed brown rice cereal and 1/2 cup of chopped unsalted cashews.
Mix well with a spatula. Line a baking dish with parchment paper. Pour mix onto the dish and flatten well with spatula to obtain a rectangular shape mix about 1.5 cm high. refrigerate at least 1 hour. Cut the bars in smaller rectangular shapes. Store in the fridge in an air tight container.
