Hello guys! Yes, you read it right. We are wrapping up Sushimen after more than 4 years of serving you amazing people. We’ve had a great run and it wouldn’t have been possible without your support and love.
The last day of service for us will be on the 14th of March.

Dear Younger Me,

The journey that lies ahead is somewhat savoury, a little spicy, and just the right amount of pungent. There is a lot you will be served – all of which will help you discover your own sweet spot.

On your way, you will come across many people who may try to deter you from following your dream. Their warnings, although well intended and founded in rationality, may not serve as the right compass for you to navigate your life. You can never see your world through their lenses, let alone craft your life based on their expectations.

In this world of engineers, doctors, and accountants, dare to be a chef.

And once you’re a chef, you may be told that your fingers are too thick to roll a maki, or that you don’t look Japanese enough to serve good sushi. Take this judgement with a pinch of salt. In fact, use it as a springboard to master an uncharted culture and cuisine. It’s your sushi that will do the talking!

Your present world is limited by your experience like a fish limited by a shallow pond. To grow, you must plunge into the deep, vast oceans of the unknown.

Be fearless and take up the adventures that knock on your door – whether it’s biking through the Himalayas, meditating with monks, or joining a restaurant in a different country on a day’s notice.

Truly meaningful experiences in life will come from taking on opportunities that seem daunting at first. Find the courage to take them up as they come, you’ll be just fine.

Tragedies too will strike in life, and loss is but natural. It’s painful to lose those few that truly believed in you. But if you let that stop you from carrying on, you will never find out how far you can go. The quicker you let go of things beyond your control the sooner you will open yourself up to new possibilities.

The journey will be winding, but what was ever achieved on a predictable road?

Keep going as the path further unfolds – one step at a time, for although you didn’t choose sushi, sushi has already chosen you!

Makizushi is the Japanese term for traditional sushi rolls and derives its name from the bamboo mat used to give it a cylindrical shape.

This type of sushi contains nori on the top, a layer of sushi rice under nori, and fillings include fish, seafood, veggies or fruits. When it's called UraMaki, the roll is inside out.

Have you ever wondered why there are sometimes plastic grass leaves in sushi, or 'fake' grass? That isn't a decoration. Placing leaves in between foods like fish and rice is a centuries-old practice in Japanese cuisine. This is called haran (ha for leaf and ran for orchid or lily) and it’s done to preserve the natural flavors of the ingredients and to prevent scents from transferring and co-mingling. 🍀

We bet you didn't know this one! Aubergine, or eggplant, or brinjal as it's known in some places, has also been used as a sushi ingredient! An adaptation made by those who are vegetarian, this variation offers a nice alternative to meaty/fishy sushis while still maintaining texture. 🍣

Several recipes used by veggies include cooked, thinly sliced strips of eggplant used in place of Unagi instead. Eggplant is both meaty and soft enough to serve as the perfect faux eel so when paired together, it offers a very realistic experience. 🍆
