Badami Pasanda is one of the mildest dishes, the most royal in flavour due to the almond paste base, and the richest in taste due to the prime cut of meat marinated for 24 hours and a good bunch of (coriander & mint, as usual unique Bhopali way to cook)then buno on pure ghee give scrumptious taste. One of the dishes that is always in high demand on Begum's Legacy menu, but was recently served to Chef Pin's client and was greatly appreciated by them.

The women in my house normally get ready to make Kaleji, a hot and wonderful traditional morning dish. After Shami kebabs and winter Paya salan, fried Kaleji with Chappatis or stacked parathas (Roghni roti) is the third most popular breakfast in my house.

Kaleji is one of the main dishes served at Eid-ul-Azha, and it is prepared in a variety of traditional methods in practically every home and enjoyed as a breakfast with family.
The delectable and appealing fried Kaleji on the morning table, together with other foods, has now become a part of culture.

Life is all about different flavours and variety, and I adore the three flavours of Boti Kebabs Murgh - Akhdar (sabz herbs), Buttery Acchari, and Malai masala - which contain no artificial colours.

Bhuna Murgh (Chicken but it can also can be replace by Mutton) is a popular chicken dish in my familyl and is often served as a side dish with daal or one gravy dish in main. My personal favourite side with daal chawal which I have today :) .

The term bhuna refers to the cooking method rather than the type of dish. The spices used in the curry are fried in oil or ghee at a high temperature until they form a paste, which is derived from the Urdu word for 'fried.' This aids in bringing out the flavours. However, the term is also commonly used to describe a curry dish made in this manner.

This authentic dish is made by smudging chicken pieces in marinated in spices and barista-based gravy( not tamato based) and cooking them in the fresh aromas of ginger, garlic, and bhuna masala in my home.

The aroma of chicken bhuna is intoxicating, and the spice combination is just right in this dish. There are a couple of spices in the recipe that you may not have on hand, but they are worth investing in! Black cardamom, for example, is not the same as green cardamom. This gravy benefits from the addition of black cardamom,Star anise . Of course! richness Kaju paste.The addition of black pepper improves the flavour of this Bhuna.

Bhopal has traditionally been a city that enjoys fresh/sweet water fish. Taking it a step further and tasting seafood is still uncommon. The lack of fresh seafood due to the geographical position is a major factor. But my DadiJaan did make some delicious jhinga on occasion. My Walid sahab (Papa) is a huge fan of fish, especially Ruhu. I doubt there are any Bhopalis who oppose Ruhu. Machli ka Rizala, tari Machli (in gravy with a tadka of methi dana), or just simple Tali Machli, like my Ammi used to make. Sunday is a delicious yum day.
