An all time favorite recipe!!!

SINDHI KADHI

INGREDIENTS SERVES. 8
8 Pcs. CLUSTER BEANS
6 Pcs. FRENCH BEANS
⅓ Cup CARROT
⅓ Cup RADISH
1 DRUMSTICK
½ CORN ON COB
⅓ Cup BRINJAL. ( Green or Purple )
⅓ Cup. RED PUMPKIN
4 Pcs. LADIES FINGER
⅓ Cup PEAS
3 LARGE TOMATOES
5 Pcs. KOKAM
½ Cup. RAW TAMARIND
3 Tbs. BESAN. Heaped
2 Tsp.. CORIANDER POWDER
2 Tsp. CHILLI POWDER
1 Tsp. . TURMERIC POWDER
1 “. GINGER ( GRATED )
½ Tsp. ASAFOETIDA
1 Sprig. CURRY LEAVES
1 Tbs. PANCH PHORAN
⅓ Cup GHEE
SALT

METHOD
Soak the tamarind in half cup water.
Soak the kokum in quarter cup water.
Boil the tomatoes . Puree .Keep the boiled tomato water to thin the kadhi later.
Scrape the peel off the drumsticks and cut into one inch pieces.
Devein the cluster beans and french beans
Cut the corn into rounds.
Boil the drumsticks, cluster beans, corn and peas.
Cut all the vegetables into one inch pieces.
Mash and strain the tamarind pulp and keep aside. Use ¼ cup thickish tamarind extract.
Deep fry the ladies finger, radish, pumpkin, carrot, brinjal and french beans.
Keep aside on absorbent paper.
Heat ghee in a Kadhai.
Temper panch phoran ,ginger, asafoetida and curry leaves.
Add the besan and stir continuously till it turns pinkish red.
At this point, add the tomato purée .
Season with salt, turmeric, chilli powder and coriander powder.
Cook for a couple of minutes.
Add the tamarind paste and kokum .
Totally add 4 cups of water, including the boiled tomato water.
Bring to a slow boil.
Add all the vegetables
Boil for another minute.
Check for salt and consistency.
Serve hot with rice and papad.

Hummus with a touch of Basil
INGREDIENTS :

1. Chickpeas (garbanzo beans) - 500 grams
2. Tahini (Sesame paste) - 120 grams
3. Lemon - 1
4. Garlic - 2 cloves
5. Salt - 1-2 teaspoons

STEP 1
Soak ½ kg of chickpea in 1 ½ liters of water for 12 hours.
After 12 hours, rinse the chickpeas under running water. Transfer to a pot and cover with 2 liters of cold water.

STEP 2-
Cook over low heat for 2.5-3 hours, until very soft. Strain the chickpeas and save the cooking liquid.

STEP 3-
Transfer the chickpeas to the blender, add 2 cloves of garlic, 2 teaspoons of salt, the juice of 1 lemon, 120 grams of tahini (sesame paste) and blend. Add about ½ liter of the preserved cooking liquid into the hummus, blend until creamy and smooth.

STEP 4-
To serve hummus, spread some hummus on a plate in a circular motion, creating a higher edge. Add some tahini sauce in the middle.

Enjoy your hummus with pita bread, toast,quinoa,mushroom or whatever you like it with!
