Stuffed Begun
In Bengali , Begun(Baingan/Brinjal/Aubergine/Egg plant/Baba Ganoush) is considered as a vegetable that has no "gun" or nutritional value. But have you noticed that the proportion of a loved food is mostly as per it's diminishing nutritional benefit. Technicalities aside, there is a clear divide in Begun lover and hater. In our small fam itself there are 50 percent lover and thankfully I am so. I can have an entire meal of tasty Begun. This one is Stuffed Begun and is a MUST MUST TRY.
This recipe has 4 small brinjals( serves 2)
1) Dry Roast methi(1 tbsp), jeera(2 tbsp) and mouri(fennel/saunf)(2 tbsp) and grind
2) grind 2 medium sized onion in mixer
3) Add dhania powder, red chilli powder, kalo jeere(kalonji) and a pinch of hing, one tomato diced, 2 tbsp ginger garlic paste, 1 tbsp garam masala and the roasted masala if step 1, a tap of turmeric and make a thick paste
4 ) Stuff the paste inside the Brinjal which is slit into four but not sliced completely as in pic 1
5) in a wok heat 1/2 cup oil
6) sprinkle 1 tbsp methi seeds(Fenugreek)
8) Add the brinjals one by one
9) Add rest of the marinade and mix well
10) cover and let it simmer for 5 mins and the lower the heat and let the Brinjal cook till soft
Enjoy with a dash of mustard oil and steaming rice!!!!
