This picture brings in the fondest memories for me.

We celebrated Children's Day with few years back where my team and me celebrated Children Day with a no flame cooking workshop for 120 kids of all age groups at Balika Ashram.

The idea was to make the kids happy and do something fun creative as a cooking activity and games.

Little did I know then that by making them happy , I still feel privileged touched by the love, affection and happiness my workshop brought to them.
This picture brings overwhelming feelings of humbleness, joy and awe to be able to spread happiness with my work is a blessing. The pandemic shifted and turned our life upside down in more ways with such health issues that now the memories are treasured even more until we resume offline. Blessed that our online birthdays and events have been such an awesome hit for many even though many are doing offline classes.

Happy Independence Day

I have posted after a while. Clicking pictures of food usually has been synonymous with eating.
Currently post dad's death after a long time have clicked a food picture or desired to create a post. Thank you, for your support to all my friends, followers and ma famillia.

Tava Pulav is prepared in jiffy and we enjoy this light lunch with raita acchar papad and home pickle or pan 🐟.
Chopped ingredients
3/4 th cup carrots, French Beans, frozen peas, capsicum.
2 medium tomatoes and onions
1 tbsp Oil + 3 tbsp Butter more butter will taste even better
Spring onions/scallions or Corriander finely chopped
1 cup boiled chickpeas (optional)

Masalas
1 tbsp + 2 tsp Pav Bhaji
1/2 tsp chilli , 1 tsp corriander, 1/2 tsp tumeric
Salt as per taste

Boil rice in big vessel with water, salt , cook and strain leaving to cool.
1.5 cups rice
Add 2 bay leaves 3 cloves

1. In a hot wok add oil and butter and 1 tbsp pav bhaji masala and slow flame.
2. Add onions saute on low med flame till onions sweat. Add all veggies and remaining dry masalas and cook with a lid till tender.
3. Add salt and remaining masalas and saute.
4. Add the cooked rice stirring gently and then a dollop of butter, garnish with scallions/spring onions and cilantro. Serve with mint raita, salt some pickle and papad.
Tastes best with leftover rice. Please do try and tag

Maize Flour Veggies Pancakes/ Chilla/ Fritters

If I told you this tastes better than Besan omlette or other savory , its a a recipe with mostly and is made in and it that can be has for or breakfast or an what more could you ask 😋 right?


Maize Flour Veggie Omlette

Ingredients
3 cups Maize Flour

Pleass note all Veggies and leave greens should be finely chopped I dump all veggies in the thread chopper.
Veggies
2 carrots
1 medium size capsicum
3 small onions or 2 medium
Yellow a red capsicum
2 Green chillies ( optional)
1 big 🍅tomato ( I added it later hence does not show in ingredients)
1 big handful of spinach and 1 big handful of cilantro
Water for batter
Oil
Do keep silicone brush or cooking spray of you want to add less oil.
A good non stick do not use cast iron since we using tomatoes.

Dry Maslas
Salt to taste
1/2 tsp chilli powder
1/2 tsp tumeric
1 tsp heapful corriander powder
1/2 tsp chaat masala optional

Method
1.Add all the ingredients mention above in a big bowl.

2. Add water, might need atleast 4 cups or more to get the batter of the desired consistency as in my video but do add it gradually.

3. Heat the pan to medium hot. Brush with oil, spread the batter evenly. Cook well on each side depending on thickness adding oil to the sides ( I haven't added) you could lift the corner to check and then flip and cook the other side.
If in a hurry, first cook on high flame, once top looks cooked then cover on slow flame with a lid and then cook on medium high flame open. Serve this with chutney or even plain is good if you add enough of tomatoes.

Fruits Galore

The rains bring fresh fruits of the season.

We got some
Fresh dates
Plums
Peaches
Lichies
Mangoes like Langa, Rajapuri, Kesar Desari, Neelam and Totapuri.
Red Dragon fruit which is so rich in antioxidants and has such deep hues .

I also love jamun, love apples, 🍒 and grapes.

Towards the end of the season all these fruits besides fresh dates are combined to make a fresh jam with jaggery and chia seeds by just dumping these fruits slow cooking with chia seeds and jaggery along with ripe papaya.

What's your rainy season fruit ?

When do you eat your fruits?
We eat our fruits in the morning on empty stomach and evening at 4pm as a snack atleast with a gap of 1.5hrs between meals.

Lemon Grass with Kaffir Lime, Fruit Custard

I am not much of a dessert person, however there is something about fruit Custard that takes me back to some quaint childhood memory with family get togethers, fun laughter in my grandmother's house. She used to make this and in vacation when I would visit once she was too old the help would be making and I would be chopping the fruits. The right combination of fruits and flavors and mildly sweet is how I enjoy it

Over the years I have added adapted to using coconut sugar or and yes lemongrass and lime kaffir leaves takes this dish to another level.
Coconut sugar is a healthier option to jaggery as it does not spike blood sugar levels and has a lower Glycemeic Index however it is still sugar.

Decorating fruits on top is fun and looks great.

A vegan recipe

Adding coconut milk 1 cup some vanilla extract a handful of ground dryfruits like cashenuts and almonds coconut sugar vanilla extract pinch of salt always to enhance flavours, boiled with some lemongrass and lime kaffir, orange zest cooled and topped with chilled fruits of your choice.

The lockdown brought in personal commitments and a traumatic personal phase which needed my attention.

1. Kidney Beans curry
This rajma curry is made with fresh coconut ginger garlic fresh Turmeric which are great immunity boosters along with tomatoes and homemade garam masala and celery leaves with stem 2 tbsps chopped.

2. Fresh sliced onions with Apple Cider Vinegar with
Breakfast and pre breakfast we had a cucumber mint celery smoothie so wanted just fresh onions which are great for cold, hair and skin when eaten raw and fresh.

Did you know in ancient times if a person was sick they would keep a cut onion besides their bed which was said to absorb all the bad bacteria around :)

Onions taste different went eaten fresh. Onion juice in your hair really helps hair growth, stops hairfall, so the benefits of eating them raw is 👌

3. Parsley thyme garlic sattu chutney with lime
I have just ground a handful of this then added some peanuts, thrown in basil and created a sandwich spread or dip which I will mix with homemade curd for my dip tomorrow.
Since it was bitter I added few cranberries and raisins.
There are times when I just add ingredients and don't even remember , purpose is to add diff elements in each meal so as to get the

4. Leaves/ Rajgira Lalmat is loaded with antioxidants, iron calcium, important vitamins and minerals. In this ginger ,garlic, haldi ,chillies onions which are anti-inflammatory.
I have used all the thick stems as well and thrown nothing. Forgot to add which taste yum adds to calcium zinc etc so sprinkled them on top post pic.
5. Bhakri/Roti/Indian Flatbread is made with Red Millets Barley and Waterchestnut flour and ground flaxseeds. The dough is made by adding 1.5 cups hot water, 1 cup flour salt, resting it covered for 20 mins, a touch of ghee, 2 tbsp more water. Note different flours will have different absorption. I added 2 tbsp wheatflour for ease of rolling.

Immunity does not happen overnight. it's is build over a period of time by taking care of our gut heath eating fresh vegetables, fruits but most importantly incorporating a balance if different herbs besides corriander in your daily routine.

I try to add different group of herbs, greens, vegetables and fruits on a daily basis and not have the same routine daily .

So twice a week a green juice in the morning, twice a week a regular ginger Tulsi tea or a Kadha or probably just fruits all on empty stomach and once a week a break eat what I want if I am really hungry.

Tomato Basil Almond Soup with Toffu Goat cheese Fig fresh herbs Roasted Bell Peppers Jaffle

Summers bring in scorching heat where elaborate meals are tough to eat and prepare.
The scenario around us is such that my mind isn't into cooking very often.

Dinner is light keeping in mind balanced meals that are on most days healthy and tasty.

At the back of my mind I keep asking myself how can I make it healthier, less processed preservative free ( hubby loves hot n spicy Maggi ketchup 🤭 and daughterMaggi noodles allowed once in 2 months) and nutrient dense with enough proteins🤔 ( big challenge)
I have used a ready multigrain bread 🍞 from fresh basil, bell peppers from .

This soup is so delicious 😋 that my family can have it daily and not get bored. The tofu which I am not a great fan of gives the necessary protein along with nuts and seeds.
I try to add lots of colorful veggies is something so as to have food that's rich in antioxidants, good for and for it to look vibrant and appealing is critical for me.
🙈 Joke at home is we can't eat till she clicks!

This Jaffle is crispy lightly brushed with melted butter, the fresh basil parsley add to the aromatic flavours, the crunch along with seeds like seasme, pumpkin seeds, the sweetness of roasted figs with goat cheese marry so well.
The tartness of tomatoes with pickled jalapeño and olives elevates thisJaffle giving it an exotic taste and adding a burst if different flavours and textured. I haven't even covered some if the ingredients. This is one of my class specials.
The soup is filling yet light with roasted slivered almonds some chia seeds and flaxseeds added.
Happyabd blessed to have created a delicious meal for my family 👪.

I have used organic stone ground flours from


Daughter hates chia seeds so added powdered chia seasme seeds for omega3 desi which is for to activate the and most of all this is so yummy.
I have my memories of sitting and telling mom stories and she making this paratha in a jiffy with only whole-wheat. My daughter always says mine does not come like Nani and I totally agree. This is sindhi paratha.

Over time I have added a Twist with our age old food by mixing different flours understanding benefits of haldi and the science of activation of benefits with pepper the value of pure desi ghee when my mom used to make (gosh I still find the smell awful) 😳.
2. The homemade curd is so fresh and so sweet 😋 when made the right way. We eat have separate steel bowls of curd since I don't like setting in one big bowl . Stays fresh right portion easy for kids to just pick a bowl.
Curd contains vit A D calcium protein carbs and is also gut healthy.
3. A boiled egg 🥚 contains so many nutrients like Vit D B6 12 magnesium and which is great for .

There are no greens today since morning on empty stomach we had a green juice and lunch is a green corriander curry.

First recipe where I have added my voice.

This is Delicious stuffing with Vegan options used in various ways by me. Follow us for more easy recipes
Zucchini Mushrooms Bell Peppers / /
This is one of my favorite stuffings extremely versatile light comforting and like most of my recipes so easy and quick made under 15mins with prep and cooking or baking time. I will share more recipes with this stuffing so follow us.
My tips
1 Make sure you taste each Zucchini since they can be bitter and ruin your dish.
2. Vegan options are mentioned too.
3. Use a chopper to finely chop veggies onions
Remove thread the celery.
4. Cook this just for 2-3 mins totally on high flame and stop cooking before the veggies and Mushrooms start to sweat and leave water.
5. If little water is there don't worry cheese would absorb. Incase if you not adding cheese add only a tsp of milk.
6. My cooked quantity was 3 cups no measurements needed her since you can use any veggies or bellpeppers but Mushrooms are a must.
7. Taste best on a multigrain grilled toast or open toast bread or pav.
8. Great appetizer if you cut a baguette
Ingredients (all finely chopped)
Zucchini yellow and green
Red bellpepper
Mushrooms 7-8
1 medium sized onion

Celery/Basil
I added cilantro though it's not Italian just fashion since I did not have fresh basil.
Seasonings
Pizza mix
Mixed Herbs
Chili flakes
Black Pepper Powder
Garlic salt ( optional)
Cheese/ Nutritional yeast
1 tsp Butter/chili oil
2 tsp Milk/ Almond Milk

Method
1. Heat a pan add your all your veggies stir a minute cook this throughout on highflame.
2. Add butter, chili oil, seasonings.
3. Stir a minute.
4. Remove in a bowl.
5. Add cheese then mix to melt.
6. Then add your salt and fresh basil or cilantro.
7. Add this stuffing on your bread and bake at 200C in the airfryer for 4-5 mins. Tada.

Whole spices

1inch cinnamon
2 green cardamom
3-4 cloves
4 pepper corns
2 bay leaves
1 piece of star anise break
1/4 tsp Jeera
3 tbsp Ghee
1 tbsp Oil

Coarsely ground paste

3 tsp ginger garlic paste with
7 garlic peices + 1 inch ginger + one green chilli +
1/4 cup chopped Corriander stems + leaves for garnish kept aside.

3 Med sized finely onion chopped.
3/4 cup green moong sprouts/ soaked black massor daal/ boiled rajma
1 med carrot diced
1/4 cup green peas
1/2 cup chopped green beans
1/2 cup green capsicum diced
3/4 th cup homemade fresh curd prefered
11/2 cup rice 240ml cup

Powdered spices

1/4 tsp tumeric powder
1/2 tsp chilli powder
1 tsp corriander powder
1/4 tsp garma masala (optional)
Salt to taste

Method

1. Wash and soak basmati rice for 15 mins and drain water.
2. Add to your thick bottom wok oil and ghee then onions fry till dark brown crisp on high flame stiring .
3. Then add your whole spices fry
4. Then add your veggies (besides capsicum peas) and sprouts.
6. Then ginger garlic chilli paste and saute for 2 mins on medium flame .
7. Add yogurt and stir well.
6. Now add all dry masalas and salt and then the rice. Saute for a minute.
7. Depending on the quality of rice u may need 3 cups of water or 2+3 /4th cup.
8. On high flame once water boils cover half the wok with the lid and slow on slow flame.Takes mostly 12-15 mins till water dries. Post 12mins keep an eye.
8. Garnish with corriander.
9. Serve this with a yogurt, papad pickle.
