French Macaroons
Serves : 30
Ingredients
For Macaroons :- Almond flour or almond meal : 100 grams
Powdered sugar :- 200 grams
Granulated sugar : 50 grams
Salt :- 1 Tsp
Vanilla extract :- 1/2 Tsp
Egg whites (Room temperature) :- 3
Food colour and flavour go hand in hand for example if you chose pink colour then add a teaspoon of strawberry essence.
For Buttercream :- Salted butter (Room temperature) : 220 grams
Powdered sugar or Icing sugar :- 350 grams
Vanilla extract :- 1 Tsp
Heavy cream or Milk :- 3 Tbsp
Procedure :- 1. In the bowl of a food processor, add almond flour, salt and powdered sugar and blend it for a minute. Incase if you don’t have a food processor, add these three ingredients in a bowl and mix well.
2. In a different bowl add egg whites and beat it using a hand blender or whisker and gradually add granulated sugar until it’s absorbed. Then add any food colour, flavour & vanilla extract and beat this mixture until it doesn’t fall down when you upside down the bowl.
3. Now add the almond flour mixture to the egg whites mixture and mix it using spatula until it’s combined well and no lumps formed.
4. Take a baking tray and line parchment paper.
5. Transfer the batter to a piping or a pastry bag which has a round tip. About an Inch apart, pipe 3 centimetre circles on the baking tray.
6. Let the macaroons sit on Room temperature for 30 to 40 minutes until the air bubbles are out and macaroons become dry.
7. Preheat the oven to 170 C and bake it for 16 to 18 minutes.
8. Let the macaroons cool down completely before filling the buttercream.
9. For the Buttercream, whisk the butter until fluffy & soft, then add icing sugar & vanilla extract and whisk until smooth and add milk or heavy cream and whisk for few minutes.
10. Now, transfer the buttercream to a piping bag and place it on one macaroon and cover it with the other one (just like a sandwich). 11. You can store the macaroons in an airtight container or a fridge for a week.
