ASIAN SLAW SALAD WITH MISO GINGER DRESSING

INGREDIENTS
Salad

2 cups green cabbage, finely shredded
2 cups red cabbage, finely shredded
2 radishes, julienned
1 carrot, peeled & julienned
1 tablespoon black sesame seeds
Miso-Ginger Dressing

1 inch ginger, finely grated
1 clove garlic, finely grated
2 tablespoons mellow miso
2 tablespoons rice wine vinegar (I used a seasoned rice vinegar)
1 tablespoon tamari
2 teaspoons toasted sesame oil, optional
3 tablespoon water
PREPARATION
In a small bowl, whisk together the ingredients for the dressing. Alternately you can use a small blender to combine until smooth. Set aside.
In a large bowl, toss the cabbage, carrots, radishes and sesame seeds together with the dressing. You can also omit the sesame seeds and serve them as a garnish as the pictures above. Serve immediately if you like it very crunchy or let it sit covered in the refrigerator for a few hours for a more slaw-like texture and to let the flavors mingle a bit. Both ways are great. Depending on how you are serving the dish it can be served at room temperature or cold. Serves two generously or four as small sides.
NOTES
Thinly sliced green onions would also be a great addition to this salad.

Dry Lemon Chicken Recipe

Preparation

1) Wash and cut Chicken breast fillets into bite size pieces

2) Marinate chicken pieces with 1 beaten egg, 1 tbsp ginger/garlic paste, 2tbsp corn flour, 1 tbsp pepper powder, 2tbsp red chilli sauce, 1 lime juice and salt for a good 2-3 hours before frying

3) Wash and cut green and red chillies very fine

Cooking Process

1) Heat oil in a wok to the highest temperature and fry marinated chicken pieces in batches not over crowding

2) Drain them in a tissue paper and transfer into a serving plate

3) Garnish with cut green and red chillies

Serving Tip: This snack goes well with wine

INGREDIENTS
30 cubes of paneer (cottage cheese)
18 cherry tomatoes
3 green bell peppers cut into 2" squares
1 cup yogurt
2 tsps garlic paste
1 tsp chilli powder
1/2 tsp tumeric powder
2 tsps coriander powder
1 tsp cumin seeds roasted and coarsely ground
Salt to taste
1/2 lemon to garnish

Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes
PREPARATION

Mix the yogurt with the coriander, cumin, chilli and tumeric powders and garlic paste. Add salt to taste. Whisk to get a smooth paste.
Add the cubes of paneer to this paste and coat well. Allow to marinate for several hours.
On wooden barbecue skewers, alternate cubes of paneer with the cherry tomatoes and green bell peppers squares.
Grill on a barbecue or in the oven until the vegetables are soft as per your liking.
Garnish with a squeeze of lemon and serve.
