MAMBAZHA PULISSERY

Pulissery – a Kerala speciality is sweet and sour, yoghurt and coconut based gravy spiced with green chillies. Pulissery is nothing but cousin of Moru Kootan. Acutally there is not much difference except that pulissery generally makes use of seasonal fruits like Ripe Mangoes, Nendram Pazham or Pineapples whereas vegetables like Ash gourd, Pumpkin, Yam etc are added to Moru Kootan. Pulissery is an integral part of the Sadhya/feast Menus in most parts of Kerala.

The pulissery is really delicious with steamed rice and with doses and sevai and this is the last set of farm fresh mangoes from my co sister s garden. Thanks a lot usha manni for the tasty and fresh mangoes.

CHECK OUT THE RECIPE

Ripe Mangoes – 4 or 5 (small sweet mangoes)
Green Chillies – 5 or 6 (adjust according to taste)
Red chilli powder 1 tsp
Grated Fresh Coconut – 2 Cups
Thick Sour Curd/Yoghurt – 2 Cups
Curry Leaves – few sprigs
Turmeric Powder – ¼ tsp
Salt to taste

For Tempering

Mustard Seeds – ½ tsp
Fenugreek Seeds – ¼ tsp
Dried Red Chillies – 1 or 2

Method
Wash and trim the stem of the mango.
Cut into slices and add it into a vessel.

Or else you can add the whole ripened mangoes if the mangoes are small . Peel off the skin and boil.

Add about 2 cups of water, turmeric powder, chilli powder and salt.

Let this boil and then simmer for about 5 to 6 minutes or till the mangoes are cooked.
In the meanwhile, grind the coconut and green chillies into a smooth paste using a little of the curd.
Once the mangoes are cooked, add the ground paste and stir well.
Whisk the curd well add about a cup of water to it and add it to the above mixture. Mix well.
Simmer till the gravy starts frothing on the sides.
Remove from heat. Add some torn curry leaves.
Heat oil in a small frying pan, temper with mustard seeds and fenugreek seed. Then add the red chilles.
Pour this tempering over the prepared mango gravy.

Delicious Pulissery is ready. Serve hot with steamed white rice.

AADI MAASAM.................. such an auspicious month.....
Though traditionally it is inauspicious to celebrate marriages in this month, mainly because this month marks the beginning of night time for the Gods (Dakshinayana punya kaalam)

But all the Fridays that fall during this month are so special, dedicated to the Ammans....You can see all amman temples buzzing with crowd, keeping pongal, offering milk to the snake burrows
and many wearing yellow sarees, doing angapradakshinam and various scenes can be seen during this special Aadi maasam....

Many women also have the custom of making Ragi porridge and serving to others. and making Pongal in the temple infornt of amman and offering to Her.

It is customary for aome families to put Maa vilakku to Amman .

These Fridays are so auspicious, and they all glorify Goddess Shakthi, and are filled with Power, protection and it is considered auspicious to invite Feminine Energy and good fortune. It is good to chant all Devi related Shlokas and Sahasranamas.

Usually Maa Vilakku base is made with Rice flour and Jaggery, and cotton wicks is used.

But this year sachus kitchen has come up with and unique salted maavilakku for amman, as everyone is offering sweet maavilakku to amman, sachuskitchen thought of preparing maavilakku with salt.
This salted maavilakku is very easy to prepare.
Let's go to the SALTED MAAVILAKKU RECIPE.

Ingredients:

½ cup of rice flour

1½ cup of water

½ tsp of salt

¼ tsp of sesame oil for dough

METHOD

Heat a pan with water, salt & oil in high flame.

When it reaches to rolling boil, add flour into the water.

Immediately blend flour with water using a wooden spatula.

Remove from flame.

Grease your palm with sesame oil.

Shape the dough into small lamps and steam them for 5 minutes.

Now salted lamps are ready to be lit.

Pour gingelly oil and lit the salted lamps.

Serve edible lamps with fresh coconut pieces or grated coconut.

Ennai Kathirikai kuzhambu is a traditional and conventional kuzhambu in Tamilnadu. Basically this kuzhambu requires little patience as it requires the preparation of ground spice powder, frying and finally to make the gravy.
But here sachus kitchen has come up with an easy method to prepare this ennai kathrikkai kuzhambu.
No need to roast and grinding powder.

You can Prepare tastiest ennai kathrikkai kuzhambu in easy way with sambar powder available at your pantry.

INGREDIENTS
10 small Brinjal & tender
Tomato puree 1/2 cup (use naatu thakkali/country tomatoes for puree)
Salt To taste
Sambar powder 3 tbpss
Kuzhambu milagai powder 1/2 to 1 tsp
Jaggery powder _ 1/2 tsp

FOR SEASONING
4 tablepsoon gingelly Oil
1 tsp Mustard Seeds
1/4 tsp Fenugreek seeds
Red chillies 2 nos
Curry Leaves Few

INSTRUCTIONS FOR SLITTING BRINJALS

Clean the brinjals and slit them vertically – cross cut from the base till the stalks and immerse them in the water to avoid de-colouration.

STUFFING BRINJAL

Take a slit brinjal and Fill the sambar powder into the brinjals using knife / butter knife gently. Use the remaining sambar powder along with tomato puree

Heat oil in the pan, and add fenugreek seeds once the oil is hot.
When the fenugreek seeds begins to sputter, add mustard seeds and fry them till they are red and then add curry leaves and red chillies. saute them for couple of seconds.
Next, add the stuffed brinjals and fry them in a low flame. Allow it to cook for upto 8-10 mins in a low flame.
It should be completely cooked.
Flip the brinjals gently in the regular interval.

Add the Tomato puree and salt. and the remaining sambar powder , jaggery and chilli powder and mix them well.

Cover the pan and keep the flame low and cook till the oil floats on the top of the gravy. Switch off the flame.

Serve the delicious Ennai Kathirikai Kuzhambu with hot steaming rice and poricha appalam and slurp!!!

Sweet, spicy and tangy lemon peel thokku /pickle from sachus kitchen. An easy and tasty pickle enhance your breakfast lunch and dinner.
Check out the recipe below.

INGREDIENTS

Lemon peel without seeds 1cup
Red chillies 10 to 12
Salt to taste
Asafoetida powder1 tsp
Tamarind marble size.
Jaggery 1to 2tbsps

FOR SEASONING
Mustard seeds 1 tsp
Gingerly oil_1/4 cup
Fenugreek seeds 1/2 tsp

In a pressure pan add 1/2 cup of water lemon peel, salt , red chillies, asafoetida powder, and tamarind .
Cook the above for 3 whistle.
Allow to cool and grind in a mixer coarsely.
Heat a pan heat gingelly oil.
Add mustard seeds, fenugreek seeds.
Once seeds spluttered add ground lemon peel gravy and mix well.
Cook in medium low flame, till the oil separates.
Finally add jaggery and mix well.
Remove from fire allow to cool .
Store in a clean dry container.
This pickle/thokku goes well with rotis dosa, idli, curd rice.

NOTES

REMOVE SEEDS FULLY FROM THE LEMON PEEL , OTHERWISE YOUR PICKLE TASTES BITTER.

The history of chocolate goes back around 2,500 years. The Aztecs loved their newly discovered liquid chocolate to the extent that they believed the god of wisdom, Quetzalcoatl, literally bestowed it upon them. Cocoa seeds even acted as a form of currency. Could you imagine going shopping or buying a house will a huge pile of Cocoa seeds? It would be wonderful, no? These days, the chocolate was bitter, as it was long before sugar was added. Once chocolate took a turn and went sweet in a 16th Century Europe, chocolate caught on to the masses and became one of many households favorite treats.

Although some would love to celebrate this day every day, the chocolate day gives you the perfect opportunity to eat your favorites in ample portions. Do you really need any more of an excuse to over indulge? It’s definite harmless once in a while.

The chocolate flavor is most definitely a favorite right throughout the world. It flavors cakes, breakfast cereal, toppings, desserts, candies, ice creams, and much more. Considering its popularity, it certainly deserves a day of honor.

Sachus kitchen is coming up with traditional healthy and almost forgotten recipe of Tamilnadu . Vivika idlies. Idlies prepared with jaggery, palm sugar

VIVIKA IDLI ( sweet idlies)

The name itself will tingle in taste.. Yes this is a special recipe in Tirunelveli side (Southern part of Tamilnadu) where this is made of Jaggery or with Palm Sugar (Karuppati Vellam). This Vivika Idli can be served as breakfast or evening snack. when served hot with honey it tastes heavenly. Karuppati vellam (Palm sugar) has medicinal properties, and as all of us know Idli is healthy diet for all age groups, this vivika idli is fully packed with nutrients Sachus kitchen is sharing this traditional, healthy and special Vivika recipe .

INGREDIENTS

Raw white rice - 1 cup
Boiled white Rice - 1/4 cup
Urad Dal - 1 tbsp
Fenugreek seed - 1/2 tsp
Salt - ½ tsp
Powdered jaggery - 200gms/as per taste
Finely shredded coconut - ½ cup
Cardamom - 3 nos
Dry ginger powder - 1 pinch
Baking soda - ½ tsp
Cashew - 10-15 nos (optional)
Ghee - 1 to 2 tbsps

METHOD

Soak the raw white rice and the boiled white rice in water for 8 hrs.

Soak the urad dal and fenugreek in water for 8 hrs.

Grind the urad dal as usual we grind it for idlies
Grind the soaked rice to a smooth batter.


Add needed salt into this batter and allow the batter to ferment for 8 hrs.

Before making idlis, add the baking soda, crushed jaggery, shredded coconut, powdered cardamom, ginger powder and fried cashews to the fermented batter and mix well.

Grease the idli mold with oil or ghee and pour the batter into the mold.



Steam the idlis in an idli cooker for approximately 10 to 15 mins.

Allow the idlis cool for 2-3 minutes and then de-mold them with a spoon.
Serve hot with honey.
