In any high-end restaurant/hotel, they would sell a plate of _Githeri_ in some 'fancy name' at 1500/- and above with the chef telling you they ' _imported the beans and maize, heck even the water_ 🤭' to make the meal or the recipe is ' _a family secret' ._
In your local kibanda, this simple Kikuyu traditional maize and beans dish would go for 100/- a plate.

While in your home, with beans, maize, water and gas or any kind of 'fuel', you have a meal to last you a week if not a month when frozen.

Ingredients
1kg Maize (dried/soft)
1.5kg Beans(any kind but rose cocoa and yellow beans are favourite)
Salt
Water

Method
Mix, clean and boil these two ingredients for 2-3hrs. To make your life more interesting, reduce on time and save on charcoal/gas, soak your ingredients for 1/2 hrs before boiling.

For frying

Ingredients
2 large onions(I love onions)
3 large tomatoes blended (to make a base for stew)
Dhania
Ginger garlic paste
Seasonings of your liking
Githeri with lots of beans(because beans are my favourites)
Cooking oil
Chilli pepper
Bell peppers
Corgets

Yes, we are frying Githeri 🤭

Method
1. Heat your frying pan and add cooking oil enough (eye ball to your satisfaction) for frying
2. Add in your diced onions to fry.
3. Before your onions brown, add in your ginger garlic paste and let them cook. Remember the paste burns fast so keep on stirring.
4. Add in your blended tomatoes and let them cook before adding in other ingredients.
5. Now, if you like your other vegetables crunchy, add them in with your Githeri and mix well. If you love them cooked, fry them in with your tomatoes so that they also produce those delicious juices.
6. Salt your food and season to your liking
7. Add in your chicken/beef stock enough for your Githeri to cook well. If not, water will do. 2/3 glasses will do and let it simmer. (I like my Githeri in thick stew so I will add in four glasses, extra blended tomatoes and simmer for 10 minutes turning it doesn't burn.

Serve with whatever compliments your food.

'There is no darkness so dense, so menacing or difficult that it cannot be overcome by light ' - Vern. P.

It is not always darkness that clouds depression. It is coupled by bright moments too. You know, that smile on your face, those happy and joyous moments. That 'she/he has got his/her life together' kind of moments? Yeah!

Do not be fooled by darkness alone, brightness also accompanies those sad moments.

To anyone going through a difficult time in their lives - mentally, physically, financially or even in your adversities, please, speak out. Of course there will be room for judgement from people who may or may not understand you but, open up to someone. Write it down if you have to.

If you can, do not let it consume you. Speak out, seek help. Light a candle in your own situation. It gets better I tell you.

Sending love and light to anyone in a difficult situation. You need to hold on, I swear everything will be okay and, try to keep calm.

Happy thoughts and happy holidays.

Anyway, thank you so much. I appreciate you♥️

Wishing you and yours Happy Festivities. Happy cooking, happy eating, happy gathering, keep safe and journey mercies to anyone traveling.

Cleaning up after - Dirty dishes

Did I say I like cleaning up after myself? Well, I lied 🙄. The thought of cleaning dishes after cooking tires me triple. I kid you not.

My hands can hardly pick up something after my work so cleaning dishes is the last thing on my mind. Of course I do it but mentally, its exhausting.

So no, I do not fancy cleaning them. I use them, lots and lots of them but cleaning them, never. In catering or in culinary world, you clean as you work what's the word, 'mise en place'. Does it only apply to food ingredients? No?

Of course there are those that clean as they work, but I cook then clear/clean up later, because either way, I am going to do it anyway, right? Wrong🫣.

I am those that use one sufuria/pot for one dish alone. So if I make 9-12 meals in batch cooking, I end up cleaning 9-12 pots. Unless there are no enough pots, then and only then will I clean one. See my life🤦!

Food photography - Taking pictures while you cook

My normal batch cooking day starts around 09:00hrs - 19:00hrs with only washroom break if the client has everything ready; shopping and clearing up space for me in the kitchen because batch cooking takes over the whole kitchen.

Many a times I want to take the before and after pictures but I am always either working with time or against it. They say women are good in multitasking but try cooking and taking pictures at the same time, weuh!

If you want to tell your food story from start to finish you will be looking at two things; slow pace cooking thus running against time or mix up/burn/drop something. One of the two things is bound to happen.

I tell my story mainly in the middle and a bit at the end when there is good lighting. But, what does it entail to take good pictures? Don't nobody lie to you that everyone takes their own pictures, even the YouTubers. You cannot do everything at once.

If I am not pausing my work to take pictures, someone else will do it for me and most of the time, I am not aware they are taking the picture. For me, the essence of a good picture is one I never see coming. Like I never have to pause for one because I am camera shy but due to technology and social media taking the world into a higher notch, I forget all that.

You can either set a camera in front of you and control it with a remote, have someone do it for you as you work or as people are doing it, have a camera attached to you; your head or somewhere. I think you have an idea of what I am talking about.

You don't have to be a professional photographer to take good pictures. They will always know when to zoom in or where to focus and such like photography language, but you who needs to take pics of your work, check for good lighting, set your plate and food right, focus and take as many pictures as you can.

I take two or three images of the same thing. That way I can choose which looks better and edit it. Thank God for smart phones because we can take pictures anywhere, anytime.

'Attach pictures of your work' a client can request. Of course a picture speaks a thousand words but, I believe in work. Like, what can you do? Google is everyone's friend. One click and I have a picture of anything I want, for free. So, take that picture but, what can you do, can you do it?

This post was inspired by a lady on Let's cook kenyan meals who happily wanted to show the world her work through pictures but she ended up sleeping without eating and she was like, 'how do you guys do it?'

On a normal day batch cooking day, I make 9-12 meals. Add prep work, cleaning up and taking pictures in between. Many a times I am slowed down. Sometimes I end up not taking all the pictures due to time or I lose natural lighting.

A good camera and lighting equals quality pictures. But let that not worry you. Work with what you have. So yes, it's a lot of work cooking and taking pictures. Forgive us if we do not give quality pictures or do not zoom in better enough or even have pictures at all. Sometimes we do not have time to take pictures and again, not all clients allow you to take pictures of their food.🤷. Yes! But we seek permission either way.

Not only food photography, whatever work you do, I am sure it takes so much time while taking pictures, right?

Hello

My name is Beth Thimba owner at Betty's Mobile Jikoni.

I specialize in house calls for batch cooking, snacks delivery and outside catering. I have been in the industry long enough to know what I am doing but, I am open to learn new tricks/menu ideas and cooking methods.

I will not say I am perfect or worse at what I do but, given a chance, my work can speak for itself.

Mainly, I do local meals sometimes with an added 'international touch' with my Betty's fried chicken(BFC) and a bit of vegetable salads which I plan to invest on and introduce as meals.

If a goat is slaughtered for me, I can do proper mbuzi choma. I consider my samosas and mini mandazis sumptuous.

My rates are fair, with a slight room for negotiation. I cook and clean after myself and I don't need supervision.

Lastly, I cook with my heart; meals I can also enjoy.

My kind and best regards

Seasonings - Raising Teenagers

Most of us love seasoning our food to make it tasty or give it flavour. Sometimes we crave something spicy, something savoury, something hot. Sometime in our lives, we have all consumed seasoning, spices if you like in our foods, knowingly or unknowingly.

There are people who do not consume spices at all due to health related issues, others do not consume them because they do not like them or their stomachs behave funny when they do, others don't care too much or know about them. But for those that love them, do you!

Which spices do you use in your meals? Yes, tea has been spiced from day in memorial. Tea masala is a common spice used in tea leaving it with a gingerly taste and nice aroma. Tea leaves are even infused with flavours with great aroma and taste.

I find seasonings similar to teenagers. Raising teenagers in this generation is a challenge - both good and bad, literally. You see like seasonings, when you use a little or more of it, the same applies to teenagers. If you give them too much attention, you smother them, if you give them little attention, they feel neglected.

Teenagers are the most misunderstood beings in the universe. Like seasonings, everyone has their own misconceptions or ideas about them. That they are artificial thus causing illnesses, that they do not make food tasty. Why use them, why not use natural spices?

You see teenage years are of identifying oneself. Like, 'why is this happening to me, why is this growing here, why are people doing this', etc. It is when reality is dawning on you. It is when you 'stop being a child' as some would demand. Same with seasonings, you experiment with each to find how they make your food turn out.

My generation and generation before me me, growing up was just that, growing up. Our parents were busy raising children because most of us come from big families, while they worked. Most of them did not understand these things just like we did not. I can tell you for free that there were no many teenage let alone adult discussions in most homes.

Notably, 21:00hrs was bed time for most of us while it was time for 'grown up talks' or grown ups could watch their programs then. Remember the Bold and the Beautiful series on KBC everyday after the news? I was sent to bed exactly at 21:00hr only to catch the re-run on Sunday when I visited my aunt🙄.

In the midst of identifying themselves, teenagers lose themselves in the process if they don't have anyone guiding them. When we are going through something, we sometimes need someone to talk to. But the need for attention for teenagers is often termed as 'needy' or 'spoilt' and in return, they bottle up their emotions.

Many a times we would compare today's teen generation and say we turned up well despite not given time or listened to so they should too. However, times are changing. Its in the year 2022 where technology is changing the dynamics. People, children included are evolving. Like adults too, teenagers have room to speak their minds and do what they think works for them.

It is not like we are being lenient or letting them have their ways. And mark you, we haven't put the whip down but today, we are having healthy discussions. Everyone has room to express themselves. And, they are learning it at a very young age.

When using seasonings, use them sparingly because most of them also have salt. When you salt your food and season them too, balance them equally otherwise the food will not be eaten by anyone.

Teenagers like any other person has emotions- happiness, confusion, sadness or anger and when you come in high tempered or with other issues, they act up, they keep to themselves and that environment becomes unbearable.

Yes, they need to be handled with care, with lots of love and attention. So much information out there that if not scare them, will build or destroy them. Peer pressure is playing a major role in our children. What you don't teach them or talk about with them, they will experiment it with others.

Technology - phones, laptops and even TV is the new normal. They and even us adults sometimes apply what we see. When we are curious about something, Google sets us right. So many sites with different information. Be careful what you get exposed to. If you get used to a certain seasoning, you will not eat your food without it.

Yes, it is becoming difficult raising teenagers if we do not understand they are human as well, they are growing and things have changed. We will always fight with them when they want their way and we want it our way or our way, you know what I mean? When we shove things down their throats, they feel trapped and they want out.

However much you love seasonings, use them sparingly, and it is okay if you don't like them. We do not all have to like them. You do not have to raise your child how society expects you to. At a certain age, these children spread their wings and meet different others from different backgrounds.

High school is a start and this is where all mayhem begins especially when they go to boarding schools. You need all patience and grace by now. Of course it is difficult adjusting. We all went through this phase but given the dynamics and all sad stories happening nowadays, we are bound to hear their cries even when we don't understand them or don't know what to do.

Things are changing so fast. If our children do not move to school with unhealed trauma, they come home having picked it from school or anywhere else. Sadly, this is true. Then when we do not listen to their grievances, they end up reacting.

A teenage boy or girl, eats more or less, plays more or less, talks more or less, interacts more or less, is more outgoing or not at all. All this is okay. But when one changes from one extreme to the next, there is cause for alarm.

Being a teenager is dressing differently because that is what works for you. We have all seen them in scorching sun wearing jumpers with hoodies and with something else heavy underneath. Yes, it is a phase or 'trend' as they would call it. But, try and find out if there is anything else besides that.

When you are raising a teenage boy or girl, being their friend is paramount. When a child knows they can come to you as a parent to talk or listen or when they know you have their back, they will always run to you, be free with you and open up to whatever it is they are going through.

Teens want it easy and not too serious. They want to do chores time best for them. They actually have a phobia for too much seriousness. They want you to take it easy with them.

They want you to know their friends and even have a conversation with them. They leave their friends at the gate or by the road if you are home because you do not allow it. They will always disconnect the phone when you come in because you don't like them talking on the phone with them.

So, if you like spices, well and good. If you don't, it is still okay but do not bash those that do. Just because you are raising your child differently and they are turning okay doesn't mean someone else is doing a bad job at it. All parents are on a different journey raising and taking care of their children. To each their own.

Seek help if you have to. FYI, counselling/therapy really helps, not only in movies. If you feel overwhelmed, please seek help for both you and your teenage child. You might be surprised at what you thought you were doing wrong and it is actually right and vice versa.

Teens want their space. I know 🙄🤦! They want to be left alone. Isn't there a time in your life when you feel you just want to be alone? Sometimes they say very little. Find out how yours is acting and find ways to cope with or around it.

Pilau or tea masala, royco or royco cubes, knorr beef or knorr onion seasoning, cumin or bay leaves, rosemary or black or white pepper, whatever seasoning makes your food tasty, buy and use it.

A Mental Health Conversation over Betty's Fried Chicken (BFC)

A lot of us are mindlessly addicted to scrolling through our phones, oblivious of our surroundings, but, we are cautious of our phones being snatched away from us. ,ourlives is the mantra. We have been busy on our phones we forgot to communicate.

We don't communicate anymore. When was the last time you had a real conversation with someone. Someone who did not necessarily want anything from you but just two or three people talking and asking deep questions and you thought, 'nobody has ever asked me that' or 'nobody has ever said that to me'?

When was the last time you listened to someone speaking to you. Like you listened as they talk? They say the best person is one who listens to you. Sadly, we are all having a conversation with our phones - on YouTube to watch the latest trending videos, Twitter to follow on who is trending, TikTok for those funny videos while Facebook, if not for work - marketing our businesses, to catch up.

WhatsApp used to be a 'family gathering platform' for all family plans and outings.
In fact, we even had a 'cousin meet-up' but, do we even meet or talk to our cousins anymore or our meet-ups are now on those common unfortunate happenings ?

When was the last time you sat with someone over a cup of coffee or over a meal for a deep conversation? Our today's mental health discussion is courtesy of BFC.

Recipe for BFC

Ingredients
Drumsticks/ thigh bones 5-10 pieces
Breadcrumbs/ all purpose flour
Spices of your liking(optional)
Buttermilk (mala) - optional
Ginger garlic paste
Parsley
Salt to taste
Cooking oil

Method
For those that don't like chicken skin, remove it appropriately.
Clean your chicken parts and leave to drain water.
In an empty kitchen basin, marinate you chicken parts with all the above spices and ingredients including buttermilk and leave standing for 40mins - 1 hr. This will help the chicken parts absorb in all the flavours
If not using buttermilk, marinate and boil your chicken for maximum 10-15 mins turning each side to cook well inside.
NB: Salt your all purpose flour to comprehend the marinate mixture.
Whether pre-boiled or in buttermilk, remove the chicken pieces from the marinate and coat them in bread crumbs/ all purpose flour
If using flour, coat and shake off excessive flour, remove and deep in plain clean water and coat them again in flour. That way the coating will be heavy and even.
After coating(breadcrumbs or flour), leave them to stand for 30 mins to avoid making your oil dirty while frying. In essence, so that your crumbs or flour can stick to your chicken properly.
If the drumsticks are not pre-boiled, heat your oil to medium and let them cook slowly, turning them to cook evenly on both sides. Golden brown, crisp on the outside but soft inside is how we love them.
For pre-boiled drumsticks, heat your oil hot and deep in your chicken turning to cook evenly. Remember, deep frying on high heat can harden your chicken. Since your chicken is pre-cooked, your hot oil will brown the chicken very fast. Be on the look out. 5 mins browning is enough.

Serve to eat with anything.

Despite the COVID-19 situation, moments in life have been sad especially with the loss of friends and loved ones, unemployment, high divorce, and mental illness cases.

Some things we hear or see do not make much sense until we encounter them in real life. How are you? How is your mental state?

Until su***de cases escalated in 2019, we started having a conversation about it though in low tones. Until depression is affecting many a people, how about we be vocal about it? See depression is a mental disease that even the affected one is oblivious of it.

As a word, it is tossed around, 'this is so depressing or am depressed', as a disease, it is pointed at, it is embarrassing and judged thus not many people coming out or talking about it. Depression as a mental illness can affect anyone at any age, with or without your knowledge but it is manageable.

FYI, 'it is okay not to be okay'

When thoughts cloud your mind, read a book. My current read, a memoir, 'Happiness' makes me wonder how this woman dealt with her mental health as she took care and nursed a sick child since birth. She often had her weak moments, but, she had a good support system- her family, friends and a man who loved her.

When you feel overwhelmed, watch a movie, a documentary or something. It will switch your attention and be entertained simulteneously.

Listen to music but not anything 'depressing'🙄. Sing along if you have to, to divert those thoughts and feelings. Motivational speeches also speak tenderly and YouTube has so many of them.

Take a walk and clear your mind. Some situations or evvironments can be toxic. Walk away, leave that place that makes you hopeless. I know it can be hard at times to do these things. But, the back starts with you.

Until you realize what is eating you, until you talk about it, until you seek help, you cannot free yourself from these mental illnesses.

Mental health is world class richness. Your mental health and wellness is paramount. Take care of yourself. And while at it, eat something. Depending on your body, food could be the last or first thing in your mind while going through something. Better yet, before you handle anything, eat first.

You can never go wrong with food - food brings love, togetherness, laugher and joy to a dull moment.Try this BFC and see how you will feel afterwards

25/10/2022

Cabbage 🤦, I know.....

We all love-hate cabbage. It is the most common vegetable cooked in any home, steamed in any occasion and even eaten raw in a salad - coleslaw or cabbage salad, yet, the most delicious and easy to cook vegetable.

All vegetables are easy and quick to cook. In fact, most of them don't need cooking at all. They have an advantage of being eaten raw. I mean, have you never seen sugar snaps and green beans eaten raw in those international cooking shows and thought you couldn't do it?

Vegetables are either steamed, blanched in salty and bicarbonate soda water to maintain their colours and for those that would want to, stir fry them. Not cook them in totality.

For our particular cabbage, doesn't it look as though it went to group of schools?

Cabbage from group of schools - Recipe

Ingredients
Chopped cabbage(any size as long as you can chew it).
Carrots cut or diced to your liking
Onions for frying
Ginger garlic paste
Green cupscium
Parley
Salt and any spice of your liking to taste.
Cooking oil
Water. Please, to clean the cabbage.

Na sufuria na mwiko Kwani utapika na kupikia wapi😅?

Method
Remove the outer skin
Wash before cutting under running water
Cut your cabbage to any size of your liking.
Now, cabbage normally has an awful smell cause basically it is grown in water. After cutting, spread it in a basin or salt it wherever it is as in also drains its water before cooking.
Fry in your onions. The secret to any food is frying your onions to brown in colour, not partially.
Before your onions brown, add in your ginger garlic paste to cook evenly.
Add in your diced cupscium and carrots in then, your cabbage (almost the same time). Remember, we are not cooking these vegetables. We just want all the flavours to be infused together hence steam them.
You are now cooking in medium to low heat since you have added in your vegetables.
You had salted your cabbage before cooking, remember that? Now, taste for salt and balance if it's not enough.
At this rate, remove from your cooking spot, serve to eat or let it cool for storage.

Points to note about cabbage or any other vegetables.
1. They retain a lot of water.
2. Wash them before cutting and leave them to drain.
3. Not necessary to add tomatoes to them since most of them are acidic and tomatoes in their own way are acidic too
4. While cooking, adding salt should be the last thing. Somehow when you add salt in the beginning or while cooking, the vegetables generate water or become soggy.
5. They are best eaten crunchy so no cooking them into totality.
6. They still cook even while standing. Just like any other food, cooking process continues even after you remove them from the stove. That is why the vegetables need to be steamed for roughly 3-5mins maximin.
7. Don't freeze your vegetables. This is because they will absorb water. Freezing process includes but not limits to your food having water as in frozen. So when you defrost them or leave them on your kitchen counter to thaw, and you warm them, they will be soggy thus, not interesting to eat. Keep them in the chilled room maximum, three days in a tight closed container.
8. They are of different varieties - purple cabbage which is sister to the white cabbage, cauliflower, broccoli, baby spinach and the rest of the green vegetables, lettuce used in salads, green beans, sugar snaps, name them.

You can have your own restaurant in your own home - Kamande Stays

FYI, there are people who still enjoy lentils aka kamande and cereals aka njahi or lets make them international, Black beans.....

While chicken could be a staple food in some homes, ugali could be the same to some while white rice and kamande would be staple too. Let's all agree to disagree that cereals, as we commonly refer to them, always find their way in our homes, even to those that are not totally familiar with them.

I first consumed kamande two years ago. I never understood why my sister would always make them for my brother. If it wasn't beans chapati or rice kamande, it's rice something. I thought kamande would be the end of me🤦.

Truthfully, there are foods I eat and never get satisfied, kamande rice being one of them. I can eat ugali with any greans/meat, get satisfied one minute, the next am looking for food. Same goes with fries as much as I love them🤭. But there is a way githeri sticks to the stomach walls, you know what I mean? Am never looking for more.

Thank God pulses (cereals as you know), have saved many a household's budget. They are easy to cook, easy to eat and they make a mommy's life simpler when she knows her freezer is packed and she can choose between the two and other meals.

Contrary to women, kamande and it's relatives don't work well with some men. They would prefer ugali beef or chicken chapati anytime. But, visit any Kikuyu home or ceremony, (no pun intended), irio(green mukimo), njahi cia Meru/kimito(mashed black beans in ripe and raw bananas) will always be in their menu and no one skips them, mark my words. Its a buffet where a person chooses one or the other but most people will always choose all of them.(check their plates when you go for any ceremony😁)

That not withstanding, these cereals and their lentil relatives are here to stay. However, you can turn your home into your own restaurant of choice. Despite the harsh economic times, you don't have to break any account to eat at your own restaurant at home.

You see, you improvise and improve some meals and menu. You don't have to always eat your kamande fried with onions and tomatoes. Lentils(kamande and ndengu) mostly need some love(kubembelezwa). After boiling them, fry them in onions, garlic and ginger paste, add in enough tomatoes. (Take note, not tomato paste), parsley and spice of your choice to improve their taste. Lastly, add in some coconut cream and let them simmer.

Some say kamende and black beans taste like saw dust😬. They have a taste, hard to explain rather but have you ever eaten black beans mashed in ripe &raw bananas with some chicken/beef stew? Waaah! This meal slurps different. Ask any Kikuyu in the house especially the elderly or nursing moms. They are very helpful to them.

Forget what they say about GMO chicken and all. Broiler chicken are reared and sold in our markets like day and night. Kienyeji chicken is preferred but it's hard and expensive to get. When you get your broiler/capon, make sure you clean it first and boil it for some minutes. I saw someone just cook it without washing and I had to remove it from the frying pan. He got shocked I wash them. I mean, who doesn't wash them?

Marinate your capon with spices or simple natural spices; ginger, garlic paste, parsley and green pepper. You don't have to go out all the way. Boil your chicken for a few minutes. Nobody wants to be served rear chicken. Point to note is that capon cooks real fast hence breaking. You can choose to coat it with breadcrumbs or just deep fry it . Serve it with some homemade fries, some sultana rice with roasted or stir fried veggies and have your junk food Friday or weekend for dinner.

Mboga sio mboga saa yote. A lady while I was making creamed spinach in a function said jokingly, ''sirudi western tena' 😅. She only knows where you saute your greans in onions and you are done. Coconut cream is expensive but it's effects are on an international level. For those that travel to mombasa regularly, kuja na N**i or better yet, buy them from marikiti and have them 'kunad' for you. Go home and make a cream out of them.

You can fry your beans in bacon or sausage. I know, it's a shocker and some may consider it a waste. I mean, how do you fry a protein in another protein? Beans are plant- protein based, while sausages are well, animal- protein based. But they infuse a certain flavour to the beans making them taste out of this world delicious 😋.

We don't always have to boil rice. Play around with ingredient in your kitchen. Its very simple. Use your coconut cream to boil your rice. Fry your rice with sultanas for that sweet flavour, add in your frozen rice to eggs for dinner. Little things you can do in the kitchen that can make a difference.

You don't always have to eat kachumbari. Make a vegetable salad in kitchen. The ingredients are easily available and affordable in the market. Try and bake that banana bread for breakfast instead of the usual ndumas and gwashes. Yes, they have nutritional values but change is good once in a while. Personally, anytime is bread time. We can never gamble with that.

KFC is a brand and even though your chicken may not taste like theirs, improve it. Trust me, it will taste better, yours better. Am not bashing hotels/restuarants because they are out to make money and create employment. However, your home can be your own 'Paradise resort' where you serve them sumptuous meals or even breakfast in bed. Yes, breakfast in bed didn't die with the old RNBs, ask Usher, you got it bad!

Kamande or no kamande, njahi or no njahi, ugali or not, they are here to stay. We have all established that cereals save a family's budget? Yes. Anyway, make your home your own restuarant. And again, make eating together a habit even if it's once or twice a week.

I know with our busy schedules, eating together is out of the question. But when you go to a restaurant, you sit and eat together whether it's ugali matumbo or chips and chicken in our famous fast food joints, right? Then make it happen, it's never that serious.

Chris's mom(everybody hates Chris sitcom) always saved the big chicken piece for their father and one day Chris thought that he wasn't getting enough since he was a 'growing child'- teenager. Yes, it happens but figure it out. One or two pieces of chicken is never enough. Truth or false? But, you can have your way around it. Include eggs and beans in that menu. That way everyone is recognized.

Why is chicken so delicious, where would the world be without eggs?' Hilary

We cannot always afford these meals given the tough times we are in. However, let's not wait for Easter, Christmas or during a graduation or wedding ceremony in our homes to go menu crazy. We can have a wedding or birthday in January also in our homes and eat our hearts out. Its upon you but, Kamande is here to stay. Ibembeleze tu na itakuwa tamu.

Yours truly,

Kamande and relatives
