Guys, judging from all the messages and recipe questions - I can see youâve been missing some home cooking.â¨Believe me, I miss it just as much.
Last nightâs dinner was the kind of simple you crave again today. Warm pita, shawarma chicken and veggies cooked in lamb fat, topped with fresh crunchy things and a cool yoghurt sauce.
Pita (the easiest thing in the history of the world):â¨Flour + yoghurt + baking powder.â¨Usually 1 cup flour, 1 cup yoghurt, 1 tsp baking powder - but honestly, I just go by feel. When the dough stops being sticky, itâs ready. No waiting. Cook it straight away. Same dough I use for flatbreads too.
Lamb fat.
Usually all the leftover off-cuts from good meat - Irish lamb, Wagyu, the nice stuff - slowly cooks them on very low heat for a few hours, lets them melt down, and we keep different boxes of fat in the fridge. Liquid gold.
Shawarma chicken:â¨Chicken thighs + yoghurt + shawarma spices. Cooked in heated lamb fat.
Veggies:â¨Zucchini and bell peppers, sliced and cooked in lamb fat.
Fresh topping:â¨Chopped cucumber, tomatoes, iceberg, red onion, EVOO, salt, pepper, oregano.
Sauce:â¨Yoghurt, garlic, dill, salt.
Thatâs it. So simple. So good.
And as I keep saying - everything cooked over flames in a pizza oven just tastes better.â¨, we love you đĽ
