Guys, judging from all the messages and recipe questions - I can see you’ve been missing some home cooking.
Believe me, I miss it just as much.

Last night’s dinner was the kind of simple you crave again today. Warm pita, shawarma chicken and veggies cooked in lamb fat, topped with fresh crunchy things and a cool yoghurt sauce.

Pita (the easiest thing in the history of the world):
Flour + yoghurt + baking powder.
Usually 1 cup flour, 1 cup yoghurt, 1 tsp baking powder - but honestly, I just go by feel. When the dough stops being sticky, it’s ready. No waiting. Cook it straight away. Same dough I use for flatbreads too.

Lamb fat.
Usually all the leftover off-cuts from good meat - Irish lamb, Wagyu, the nice stuff - slowly cooks them on very low heat for a few hours, lets them melt down, and we keep different boxes of fat in the fridge. Liquid gold.

Shawarma chicken:
Chicken thighs + yoghurt + shawarma spices. Cooked in heated lamb fat.

Veggies:
Zucchini and bell peppers, sliced and cooked in lamb fat.

Fresh topping:
Chopped cucumber, tomatoes, iceberg, red onion, EVOO, salt, pepper, oregano.

Sauce:
Yoghurt, garlic, dill, salt.

That’s it. So simple. So good.

And as I keep saying - everything cooked over flames in a pizza oven just tastes better.

New gem in Vilnius. From the very first step inside , it felt like we’d been transported to London or NYC. That big city energy. Open kitchen, chef’s counter, damn good plates and most important that warm-but-cool hospitality. And the kind of crowd that ends up talking to each other like it’s a dinner party by the end of the night.

Soo… how many times have I cooked at home this past month?
Once. Literally once 😅

An empty fridge usually means one thing - pasta aglio olio peperoncino. A dish I keep coming back to. Not because it’s easy, but because it’s perfect.

Spaghetti, good quality evoo, garlic, chilli, parsley. That’s it.
Parsley still growing on the terrace, the rest lives permanently in the cupboard.

Parmigiano? I know, I know - Italians would strongly disagree.
But I love it. And I’m not even sorry.

Now you tell me - should this pasta be on the menu next year? Maybe as a lunch special?

Anyone who’s been following me, and for a while knows one thing for sure - we seriously love good meat and great steaks.

So when was born, there was no way premium cuts would be hidden in a back fridge. Meat is beautiful. Meat is sexy. It deserves a proper stage.
We never wanted to hide it in a back kitchen fridge.

Then one day, the boys found this perfect hole in the wall (you’ll see it at the end of this carousel) - and we instantly knew: this is where the dry-age fridge belongs.

The plot twist?
Historic building. No drilling. No resizing. No “let’s adjust it later”.

So my mission became: find a fridge that fits this exact spot - millimeter perfect.

And for our luck…. .lietuva had the perfect one. In stock. Deliverable on time. A true restaurant miracle.

Because honestly - having great meat without a proper dry-aging fridge? Wouldn’t make sense at all.

Now this beauty is slowly getting stacked with different cuts, different origins.

Meat deserves the spotlight.
And at B***o, thanks to CASO - it gets it 🥩✨
