Last dinner was served, then I had a massage, now laying in bed with a smile on my face, as this retreat reminded me why I love working with this team in this setting. And it reminded me about all the magic that resides in everyone, and how beautifully our paths are interwoven…

Yes, sometimes tiredness makes it hard to see all of this. But when I get the right rest, I can see the gracefulness again.

This are my reflections, after a week of giving giving giving, that feels like passed very quickly!

Today another retreat with the .institute starts, the second-last of this year ✨❤️✨🍄 ✨

I chose to open the week with a Balinese Gado Gado.
And I opted for a refreshing dessert (the one in the picture ⬆️): coconut lemon tart, which was really delicious!

Why am I telling you this? Because people loved that dessert, but I’ve never made it before! Sure I’ve envisioned it when I created the menu for the retreat, but I actually made it up today as I was in the kitchen.

I just think that when we’ve been doing something for a long time, it’s very important to KEEP space for improvisation. So things stay interesting; we keep experimenting; improving; creating. And let ourselves have fun!

It has been an amazing summer!!!
We enjoyed it really a lot, and we hope it was the same for all of you 🌈

So what makes the difference between one experience and the other?
We saw each other, and we helped each other to see ourselves too.
We looked at each others as human beings, with our ideas and dreams, on a mission to truly support other people out there.
And we liked what we found. So we decided to stick together, knowing that when we come together we’re actually CO-CREATING a space for true rebirth.

I’ve been working beautifully with people for several retreats, and suddenly never heard from them again, only to find out that they simply chose to support a friend new to the retreat market.

I’ve been working with people that felt OFF from the very beginning, and yet I chose to peruse the path of money, only to learn the lesson the hard way.

And I’ve been working with people that became true friends, sometimes my best friends. People with whom I deepen the human connection, I feel inspired by, and I like to spend time with.

There’re many elements that can impact your retreat journey as a chef.
Yes, there’s the venue 🏡
Yes, there’s the kitchen and its tools 🍴
Yes, there’s the grocery shop availability 🥑
And the amount of people you’re gonna cook for, which determines the amount of hours you’re gonna be working. If you have someone helping and supporting. How many days, and how many meals per day. Desserts everyday; allergies; intolerances; dietary restrictions. Many factors that can make your job more or less complicated… 👩🏼‍🍳

But I can assure you that the most- absolutely the most- relevant aspect is the relationship with the person you’re working with. That’s the one thing that is really gonna make THE difference 🫱🏽‍🫲🏾

Never had such a good pizza outside of Italy 🍕 🇮🇹

Last night MEXICAN DINNER was HOT! But it was also soooo good! 🤤 🤤 🤤

• Homemade buckwheat wraps
• Panfry tofu previously marinated in soy sauce and fresh BBQ herbs
• Mushrooms (bought for an incredible cheap price)
• Salad and slices of cucumber to refresh the tastebuds
• Homemade guacamoleeeee
• Homemade sour sauce
• Jalapeñosssss 🥵
• Hot sauce 🔥
• Sweeeeet corn
• Grated cheddar cheese

The Jalapeños came back to visit this morning, but God… it was worth it! 🤪

What a fabulous dinner we had at in Labin!

Here “km 0” is not just a concept: everything comes from the neighbourhood!

From the olive oil to the tonic water…
Just EPIC!!!

We ordered:
- A couple of Spritz to start
- Poached shrimps, red onion cream with blueberry
- Pljukanci with tuna, spicy dried tomatoes pesto
- Adriatic squid and Kvarner bay langoustine, green peas cream, fennel tempura
- Flying goat gin tonic
- And a dessert whose name I didn’t write down 😅 but you’ll see it in the next post 😉

Falling in love with Croatia with every bite!

✅ Another lovely place to check in Zagreb: MELT

We stopped here for a brunch after visiting the Museum of Broken Relationships (which is totally worth it!), and we were very happy!

On the menu there are super nice options, also vegetarian and vegan. And with my great surprise, when I asked for Gluten Free bread, the waiter told us “here everything is Gluten Free!” 😃

Since the end of January this year I’ve eliminated gluten from my diet, and I’ve been feeling much better in my body, clear in my mind, and overall more energetic during the day. But this is not a regimen! Sometimes I still enjoy a pizza, a croissant, or a nice plate of pasta 😜

And the smoothie I chose… OMG! It tasted like a fresh liquid chocolate cake in my mouth 🤤 Healthy and yummy 😍 👌🏼

If you’d love to have a nice and satisfying meal in a very sweet environment, pay a visit to Melt: you’re gonna LOVE IT!

Visiting Zagreb over the past weekend, we ended up in a very curious café…

The handle of the entrance door definitely captured our attention, plus a sign outside declaring “best coffee shop in Zagreb”. We understood each other with a glance, and we walked in.

Eli’s Caffe.

Not much going on inside; a dim light; a couple of men having their morning coffee & newspaper; a small menu on the board, just over the coffee machine.
The back room (supposing the one for tables and chairs) is a little bit weird: a shop coat hanger with some empty hangers, just sitting there. Impossible to use the toilet “because the cleaner didn’t come yet”. It almost felt like if this place wasn’t supposed to be open.
And yet it was…

Thank God, because Eli’s coffee is REALLY GOOD!
We both had a soy cappuccino, which was super creamy ☕️ 😋

Their motto makes sense: NO LOGO/JUST TASTE
If you end up in Zagreb, pay Eli a visit, enjoy their coffee and the beautiful quirkiness of life😉
