I have been offering a series of themed luncheons.
March's theme is an afternoon in Spain.
The dates to choose from are Friday, March 21st & Thursday, March 27th at 12:30pm - 3:30pm

This is a quick highlight of some of the dishes done by my Catering Company from our various menus in 2024. Thai Basil Chicken, Pitachio, Cardomon, Orange & Honey Tea Cakes with Fennel Ice Cream, Carrot & Ginger Soup, Loaded Mixed Green Salad, Bacon, Garlic Butter & Blue Cheese Baked Onion, Signature Classic Creme Brulee & Asian Chicken Salad.

My Baker Chef has been busy experimenting with various breads. First is Shokupan which is know also as Japanese Milk Bread. So delicate and soft. Then he took some of the bread and made into a delious dessert. Crispy Honey Toasted that after it has set has a wonderful crunchy hard crust then topped with homemake double vanilla ice cream. He has also been making Foccacia with Rosemary & Celtic Sea Salt or Caramelized Onion, Rosemary & Sea Salt. Other breads we are offering is Brioche Dinner Rolls, Cinnamon Rolls with Cream Cheese Frosting, Scones, Naan Bread, Garlic & Parmesan Pizza Knots and more to come.

The Annual Garden Guild Flower Show is just around the corner so if you haven't already purchsed a ticket and would like to please let me know. This is a great event and all the proceeds go towards a community project here in Ajijic.
Come and see the Guild Members beautiful Flower Arrangements that will also be available for purchase. Have a glass of wine and wonder this most spectacular property and enjoy some Canapes catered by Vista Grande Catering Company.. Hope to see you all on November 16th.

Vista Grande Catering Companies first British High Tea Luncheon. It was a great success with a fabulous group who attended. The October 25th British High Tea is Sold Out but I will be offering another in the early New Year. If you are interested in getting on the mailing list please send me your emial address.

Thursday, October 10th & Friday, October 25th at 1:00pm - 4:00pm
Where: 260 Prolongacion Galeana, Ajijic. Cost: $600.00 per person
The Menu: A selection of classic tea sandwiches: Cucumber, Egg Salad, Open faced Smoked Salmon & cream cheese with lemon dill aioli & Coronation Chicken
Freshly baked Scones served with clotted cream & Strawberry preserve.
A variety of home made pastries: Lemon Curd Tarts, Vanilla Cupcake with Chocolate Buttercream, & Queen Elizabeth’s chocolate biscuit cakes & Shortbread Cookies.
Teas: Earl Grey, English Breakfast & Camomile. Served with milk, cream, sugar or lemon. Cash Bar available.

For this weeks Monday Market we will be offering a few new things. and popular dishes from previous weeks. We have Creamy Tuscan Chickpeas, Flat Breads with Spinach Pesto or Garlic Butter. Louisiana Creole Shrimp, French Style Chicken Liver Pate, Sweet Chili Chicken on its own or served with Egg Noodle Vegetable Chow Mein. Chicago Deep Dish Pizza with Sausage, Vegetables, Mushrooms, Salami & Peperoni. Also a Vegetarian Deep Dish Pizza this week. We will be offering again Ultimate Mac & Cheese with Truffle Oil and lastly Bacon Jam. If you want to pre-order anything please let me know.

Other things for sale is Sweet, Mild Coconut Curry with Sweet Potatoes & Spinach, Medium Spiced Thai Green Chicken Curry, Sweet Chili Chicken with or with out Vegetable Chow Mein, Naan Bread - Garlic Butter or Goats Cheese, Pimento Pepper & Sun-Dried Tomato, Ultimate Mac & Cheese with Garlic Butter and Truffle Oil, Gluten Free Morning Glory Muffins, Slowe Roasted Tomato and Garlic Soup delicious Cold for this hot weather and Bacon Jam.

I have been using Bacon Jam in a number of my Canapes. It is so good. I decided to bake a Brie with my Bourbon Tomato Chutney & Bacon Jam on top. Decedent. If you want to order the Bacon Jam it is $115.00 a Jar.

January has been very busy. Here are some of the things that have come out of Vista Grande Catering Companies kitchen. Individual Chocolate Cheesecakes on a Oreo Crust with a Nutella Buttercream topping then Drizzled with Chocolate. Spinach Salad with Sliced Apples, Cranberries, Blue Cheese, Candied Pecans & a Poppy Seed Dressing. Mini Beef Wellingtons with a Horseradish Aioli. Coq au Vin. Loaded Mixed Greens Salad, Feta & a Maple Dijon Dressing. Smoked Salmon Sushi with Wasabi Cream Cheese. Short Ribs ready for the Sous Vide. Herbed Crusted Beef Tenderloin, Individual Dauphinoise Potatoes, Ginger & Orange Carrots with a Bordelaise Sauce.

The featured salad's are Spinach Salad with Berries, Toasted Almonds, Marinated Feta & a Poppy Seed Dressing can be with or with out Chicken. Caesar Salad with Garlic Shrimp & Shaved Parmesan Cheese.
