The Annual Garden Guild Flower Show is just around the corner so if you haven't already purchsed a ticket and would like to please let me know. This is a great event and all the proceeds go towards a community project here in Ajijic.

Vista Grande Catering Companies first British High Tea Luncheon. It was a great success with a fabulous group who attended. The October 25th British High Tea is Sold Out but I will be offering another in the early New Year. If you are interested in getting on the mailing list please send me your emial address.

I am offering a series of themed ladies luncheon. October's theme is British High Tea. There are two dates to choose from. Reserve your spot now as there is limited seating. Tickets will be on sale starting Monday, September 23rd. More details to follow.
Thursday, October 10th & Friday, October 25th at 1:00pm - 4:00pm
Where: 260 Prolongacion Galeana, Ajijic. Cost: $600.00 per person
The Menu: A selection of classic tea sandwiches: Cucumber, Egg Salad, Open faced Smoked Salmon & cream cheese with lemon dill aioli & Coronation Chicken
Freshly baked Scones served with clotted cream & Strawberry preserve.
A variety of home made pastries: Lemon Curd Tarts, Vanilla Cupcake with Chocolate Buttercream, & Queen Elizabeth’s chocolate biscuit cakes & Shortbread Cookies.
Teas: Earl Grey, English Breakfast & Camomile. Served with milk, cream, sugar or lemon. Cash Bar available.

For this weeks Monday Market we will be offering a few new things. and popular dishes from previous weeks. We have Creamy Tuscan Chickpeas, Flat Breads with Spinach Pesto or Garlic Butter. Louisiana Creole Shrimp, French Style Chicken Liver Pate, Sweet Chili Chicken on its own or served with Egg Noodle Vegetable Chow Mein. Chicago Deep Dish Pizza with Sausage, Vegetables, Mushrooms, Salami & Peperoni. Also a Vegetarian Deep Dish Pizza this week. We will be offering again Ultimate Mac & Cheese with Truffle Oil and lastly Bacon Jam. If you want to pre-order anything please let me know.

I have been using Bacon Jam in a number of my Canapes. It is so good. I decided to bake a Brie with my Bourbon Tomato Chutney & Bacon Jam on top. Decedent. If you want to order the Bacon Jam it is $115.00 a Jar.

January has been very busy. Here are some of the things that have come out of Vista Grande Catering Companies kitchen. Individual Chocolate Cheesecakes on a Oreo Crust with a Nutella Buttercream topping then Drizzled with Chocolate. Spinach Salad with Sliced Apples, Cranberries, Blue Cheese, Candied Pecans & a Poppy Seed Dressing. Mini Beef Wellingtons with a Horseradish Aioli. Coq au Vin. Loaded Mixed Greens Salad, Feta & a Maple Dijon Dressing. Smoked Salmon Sushi with Wasabi Cream Cheese. Short Ribs ready for the Sous Vide. Herbed Crusted Beef Tenderloin, Individual Dauphinoise Potatoes, Ginger & Orange Carrots with a Bordelaise Sauce.

The featured salad's are Spinach Salad with Berries, Toasted Almonds, Marinated Feta & a Poppy Seed Dressing can be with or with out Chicken. Caesar Salad with Garlic Shrimp & Shaved Parmesan Cheese.

I have been busy putting together a new Jam & Chutney Menu. Some of the Jams & Chutneys I have available now for sale are Fig Jam, Fiery Ginger Mango Chutney, Tomato & Bourbon Chutney, Cherry Jam & Strawberry Chili Chutney. All are small batch, made with the freshest ingredients and super delicious.

As a child I loved Bakewell Tarts. They were one of my favorite go to desserts. I especially like the combination of the Cherry Jam and the rich creamy Almond filling. So I decided I will make my own Cherry Jam and then recreate this British Classic which was re-popularized by the British Bake off.
A Bakewell Tart dates back to the 1845 and known as Bakewell Pudding. In the 1900's this confectionary was changed to a Bakewell Tart. Discovered in the town of Bakewell, Derbyshire. It consists of a buttery tender short crust pastry shell beneath a layer of Cherry Jam, frangipane and toasted almond slices. This has now been added to my Dessert Menu. There is a minimum of 4 per order at $105.00 each.

New items have been added to my various menus this week. Thai Sticky Chicken served on a bed Sesame Noodles, Orange, Pistachio, Cardamon & Honey Cakes which are super moist and so flavorful, Deviled Eggs with Parmesan Crisp, Chicken Jalfrezi and lastly, Sambar Masala Maple Butter Corn Bread.

Smoked Salmon and Wasabi Sushi Rolls comes with a Citrus Soy Dipping Sauce, Baja Shrimp on a Jalapeno, Cheddar Corn Fritter with Firey Mango Chutney, Savory Cheddar Thumb Print Cookies with Tomato & Bourbon Jam, Roast Beef Crostini with Caramelized Onions & Horseradish Aioli, Polenta bite with Pesto, Herbed Goats Cheese & Sun-dried Tomato, Baked Brie with Tomato & Bourbon Jam & Roast Beef Garlic Bread Crostini with Horseradish Cream Sauce.

My Indian Menu has been re-vamped with many, many more options after coming back from a month in England. Two new vegetarian dishes from my two new Indian Cook Books.
Caramelized Onion Tadka Dal & Masala Dal with Sweet Potatoes and Spinach. The new menus have been uploaded and are available under the menu button.

Back from Vacation and ready to cook. Just made a Tomato Bourbon Chutney. So delicious and goes beautifully with Fish and is incredible with a Dutch Gouda or Sharp Cheddar. I have added to my Canape menu now using my Tomato Bourbon Chutney. It is available to order for $95.00 per jar.

A highlight of what has been cooking at Vista Grande Catering Company. A lovely slow roasted caramelized tomato and garlic soup. Prime Rib Roast which was served with Yorkshire puddings, roast potatoes, caramelized carrots and a red wine gravy. 2 dozen Traditional Samosas with homemade Mango Chutney with ginger, jalapeno & Nigella seeds.
