The food is inseparable from life in Oaxaca, and every milestone comes with its corequisite dishes. When you get married, you eat higaditos (an egg-drop chicken soup in tomatillo broth), and when someone passes away, you eat chichilo (a chilcuacle, mulato and pasilla peppers-spiced beef stew) and then pan dulce with drinking chocolate. Oaxacans’ dutiful preservation of these traditions has led to iconic recipes that have survived the test of time.
