1 Table Spoon plus 1 Tea Spoon of Dry Yeast
1 Table Spoon of sugar
1 Cup of Hot Water
We mix that together until everything is full mix. We leave it apart until it get twice the size.
In a clean blow you should place
2 and 1/4 Cups of Flour
3 Table Spoons of melted unsalted butter
2 Table Spoons of sugar
1/4 Tea Spoon of Salt ( At the very end of mix all together)
After we have both mixes apart.
We have to place both together and mix it. Remember that the yeast must reach twice the size in order to be mixed with the flour mix.
Then when all it is mix, you can add the salt at the very end and mix with your hand in a clean surface (wood table, granite etc). Honestly, it doesn’t need to much knead or add more plain flour.It will just need to be smoothy and not be sticky.
After that you have to leave it apart in a clean bowl and leave covered with a tower in a warm please for
1 hour.
Later after the wait, when the mixture grows to twice the size, you can start making the figures on your clean table. For that you will need an extra clean bowl or plate that you can place 3 Cups of plane and clean hot water with 3/4 Cup of Backing Soda.
With your bread dough, stretch it on your table and form a rolling pin to cut it into approximately 10 pieces,
After you have to stretch’s until you make a thing rolling of 40cm and make a U and cross both ends and place it en the bottom part of
then U.
When the figure is finished, dip it for a few moments in the hot water with the baking soda and pass it to a dry towel to drain and stretch it again, so that the figure is not lost. Immediately place it on your previously greased baking tray and put it in the oven at 275 Degrees Celcius for 10 minutes and constantly check, so they only get little brown and do not get burn because they dry and make them hard.
If you wanted with sea salt or peperony you must place it before you place them in the oven. You can put malted unsalted butter and then spread the sea salt in the top of them and put them in the oven.
If you wanted with cinnamon sugar, you should have a plate with the cinnamon sugar mix ready before they get bake. Then after they are well down, varnish the pertzels with melted unsalted butter and place it in the plate with the cinnamon sugar mix
