This is in our class and Today:

Birria is one of the most iconic dishes from the state of Jalisco, Mexico. It is a traditional stew made with beef, goat, pork or lamb, marinated in a rich blend of dried chiles, spices such as cinnamon, cloves, and cumin, and aromatic herbs. The meat is slow-cooked until it becomes tender and flavorful, infused with the smoky and spiced essence of the marinade. Typically served with its savory broth, birria is enjoyed with warm tortillas, chopped onion, cilantro, and a squeeze of lime. It can also be savored as tacos. This dish is a comforting and flavorful masterpiece, celebrated for its deep cultural roots and irresistible taste.

Aguachile is a spicy Mexican dish, similar to ceviche, traditionally made with fresh shrimp that’s marinated in a vibrant blend of lime juice, chiles, and sometimes cucumber, cilantro, and onion. The word aguachile literally means “chile water,” referring to the chili-infused liquid that forms the base of the marinade. Originating from the coastal region of Sinaloa, aguachile is often served as a refreshing, cold seafood dish and can be customized by adjusting the spice level or adding ingredients like avocado or other seafood. It’s known for its fresh, bright, and spicy flavors. In this case, we made it with yellowfin tuna! So delicious! 😋

This couple made tamales Yucatecos, known in the Maya Region as “Dzotobichai”. These are tamales wrapped in Hoja Santa (Holy leaf), which is a delicious and aromatic leaf with an Anise flavor and is used for both food and medicine all over Mexico. These particular tamales are stuffed with refried black beans and very often served with Salsa Ixnepek, which In Maya language means dog’s nose, (which equals to very spicy), and is probably one of the most popular salsas in Mexico!
