1. Nuba Laya Beras Adan & Ina Ruag "rice ball" | Crispy Pucuk Bandung | Chili Aioli*
Lun Bawang staple of mashed heirloom Adan rice, traditionally wrapped in Isip leaves. Reinterpreted as a rice ball filled with Ina Ruag - beef lung in jungle aromatics, Sarawak black pepper.
2. Terung Bulat Bakar | Sambal Belacan Bidayuh
Belacan Bintulu, in dayak-style sambal atop fire-roasted green brinjal.
3. Umai Melanau & Latok | Sago Pearl Crisp | Cincalok Miri
Melanau’s equivalent of ceviche, lightly “cooked” by a citrus-based “dressing”. Featuring cincalok from Miri.

Bidayuh specialty of chicken and highland Sia rice, jungle aromatics, wood-fired in the hollows of a bamboo stem.
