For this dinner, our partners uncover a truly distinct ethnic cuisine and age-old techniques of wrapping, smoking and lacto-fermenting of heirlooms rice.

Dishes include comfort dishes to carefully prepared offal and smoky game meat, the flavour profiles embody a people of expert hunters and master cultivators, provided by their high altitude landscape of abundance.

This inspired menu, experience full Nuba Laya spread as centrepiece with Inaag Rua', Narar - a house-smoked game meat platter, jungle ferns, Smoked Tahai fish sambal and more. Naturally, the heirloom rice we will be serving is sourced from Lun Bawang independent farmers by our partner - LANGIT Collective.

Lun Bawang staple of mashed heirloom Adan rice, traditionally wrapped in Isip leaves. Reinterpreted as a rice ball filled with Ina Ruag - beef lung in jungle aromatics, Sarawak black pepper.

Belacan Bintulu, in dayak-style sambal atop fire-roasted green brinjal.

Bario rice, cultivated in mist-covered highlands of upper Sarawak, are so prized by ethnic Kelabits it is given as a token of deep appreciation. The Kelabits have been farming Bario rice since time immemorial using traditional planting process and harvested only once every year making it also one of the most expensive rice variants.

This sweet, small grain rice is used in our Nasi Aruk Daun Ubi. Savour ingredients indigenous to Ethnic Sarawak Cuisine at the upcoming dining night featuring a Dayak "Rumah Asap" - or smokehouse.

For the Dayaks of Sarawak, barbecuing gathers kin and friends to span the "ruai" of traditional longhouses. So ubiquitous in Sarawak, that it’s known simply as ‘Q’. The tradition is urbanised by "rumah asaps" or smokehouses across the state with distinctive BBQ-ing techniques and dishes.

Gather, Dayak Rumah Asap-style, for a specially curated culinary evening featuring the ethnic dishes of Sarawak's traditional smokehouses.

Tuesday, 4 April, serving from 7.00pm only at in:tasek. A 4-course dinner with a special charcoal-roasted Sarawak coffee option. Reservations are required. Minimum reservation of two diners.

Linut - a traditional sago-based staple of the Melanaus in Sarawak, reinterpreted into our handcrafted sago pearl crisps to provide a textural contrast to sashimi-grade Umai, another Melanau delicacy.

Part of a trio of starters for the next culinary evening of elevated, ethnic Sarawak cuisine starring iconic Sarawak Laksa. The menu evolves hereafter to feature more of her diverse cuisine.
