LAMB CHOPS Seasoning With Mustard And Herbs

2.5kg lamb shoulder (cut 1cm thick)
salt and freshly ground black pepper
2 tbsp Dijon mustard
1 tblsp chopped flat-leaf parsley
2 tsp chopped rosemary
2 tsp chopped thyme

1. Season the lamb with salt and pepper.
2. Rub with mustard and then press the parsley, rosemary and thyme onto the meat.
(Leave it in the refrigerator for 24 hours)

1. Light a grill or preheat a grill pan.
2. Add olive oil or butter on the heated pan lightly.
3. Place the chops on the pan.
4. Cook for 3 minutes until nicely browned.
5. Turn and cook for another 3 minutes.
Once done remove and place on a plate. Rest for 5 minutes and enjoy with other side dishes. Over cook meat will be harder to chew.

HOW TO GRILL LAMB CHOPS
1. Remove the chops from refrigerator and leave outside for 20 minutes.
2. Once the chops reached room temperature, heat the grill pan over high heat until almost smoking.
3. Add some butter or olive oil.
4. Place the chops on the grill pan and sear, cook for 3 minutes.
5. Flip the chops and cook for another 3 minutes for medium.
6. Add another 30 minutes for well done.
7. Enjoy with other side dishes.

Italian Herb Lamb Chops Recipe

INGREDIENTS

2 lamb chops, 1 cm thick
1/2 tsp oregano, dried
1/2 tsp rosemary, dried
1/4 tsp basil, dried
1/4 tsp sage, ground, dried
1/4 tsp garlic powder
1/4 tsp chili flakes
1/4 tsp black pepper, freshly ground
1/4 tsp salt
2 tbs olive oil

DIRECTIONS

Blend all of ingredients in a bowl.
Marinate the meat for at least 24 hours, in the refrigerator.
Turn meat after 12 hours for even marination.
For grilling, bring meat to room temperature for at least 1/2 hour.
Add oil or butter first
Just pan fry, the sear sound is important.
Cook 2 to 3 minutes on each side.

Can be applied for chicken, lamb and beef
