HOW TO MAKE (TIGER NUT DRINK)

Ingredients :
📌2 cups of Tiger Nuts (Dried or Fresh)
📌 1 medium Ginger
📌10 Dates (Or less)
📌1 Coconut (Crack the shell and extract the flesh for blending)

Directions:

Step 1:
Soak the tiger nuts in clean water Overnight (if you are using the dry tigernuts)

Step 2:
Rinse the soaked tigernuts and place in a blender.
- Remove the seeds from the dates, wash and place in the blender.
- Peel and pour your diced coconut in the blender as well then add the skinned ginger, a little water or the coconut water and blend smooth.

Step 3:
With a Pap/Cheese cloth, strain the milk into a bowl.
-The first milk strained would be thick then you place the chaff back into the blender, add some more water, blend & strain again till the whole milk is extracted.
(Don't make the kunu aya too light for a better taste)

Step 4:
Place the extracted milk drink in a refrigerator to chill up.

Step 5:
Serve cold😊

Puff-Puff
Flour - 2 Cups(250g)
Sugar - 1/3cup (75g)
Nutmeg powder - 1 tsp
Milk Powder - 1 & 1/2 tbsp
Salt - 1/8 tsp
Instant Yeast - 1&1/2 tbsp
Lukewarm water - 1 cup( add water gradually to control consistency)
Procedures:

Step 1 :Sieve flour in a dry clean bowl, and add sugar , milk , salt , nutmeg and yeast .
Step 2 : Mix till it’s well combined.
Step 3 : Add water gradually and mix till it’s lumps free .
Step 4 : Cover with a clean kitchen towel or cling film ( cover with anything that won’t allow air into it) .
Step 5 : place it in a warm place to proof for About 45mins - 1 hr
Step 6 : It will double in size after proofing, then deflate it by mixing it again, scoop with your hand and deep fry in a hot oil .

BUTTER COOKIES

INGREDIENTS
3 Cups flour
185g butter room temperature
¼ cup milk
1 egg
1½Cup icing sugar
¼ tsp salt
2 tsp vanilla extract

METHOD

*In a large bowl,sift together flour and salt,mix and set aside
*In a seperate bowl,beat butter and icing sugar until pale and creamy
*Add one egg and beat for about 3 min
*Add milk and vanilla extract ,mix
*Gradually add flour to the butter mixture and mix properly
*Place batter in pipping bags with different noozles
*Pipe batter in a greased and lined baking tray
*Place the tray in fridge and chill for 30m(cookies wont loose their shape when baking)
*Bake in preheated oven at 180°C until golden brown...

CHOCOLATE COTTON CAKE

Ingredients:
80ml of milk
60ml vegetable oil
70g of flour
10g cocoa powder
4 egg whites
4 egg yolks
70g of sugar
1/3 teaspoon of salt
1/2 teaspoon lemon juice
Chocolate chips
Preparation:
1. In a bowl, mix the milk, oil, flour and egg yolks. Divide into two portions and add cocoa powder to the second portion.
2. In another bowl, beat the egg whites with salt, lemon juice, and sugar.
3. Divide the white and dark mixtures into two portions.
4. Transfer to baking sheet, add dark mixture, top with white mixture, and sprinkle with chocolate chips.
5. Bake in hot water at 170°C (340°F) for 1 hour

Nice fondant recipe
Ingredients
★1kg of icing sugar
★3tbsps of Liquid glucose
★2tbsps of gelatin
★1tbsp of cmc
★10 tbsp of water

Procedure
★ measure 10 tbsp of water in a bowl
★add gelatin to it and allow it to rest for 1minute
★place the gelatin content in a pot of boiling water and stir till it dissolves
★after it has dissolved, add your liquid glucose and stir till it's well incorporated
Remove the bowl containing the mixture
Note: if you want a coloured fondant, add the colour at this point in the mixture and stir for a perfect outcome
★ in a big bowl, sieve icing sugar together with cmc
★transfer the gelatin mixture to the icing sugar and mix( if the water is not enough, add a drop of water till you get the right consistency)
★ transfer fondant to a work surface dusted with corn flour and knead for 40 minutes until stretchy

Your Fondant is ready for use💃💃💃💃

*Recipe for smooth crunchy peanut*
Groundnut--3cups
Flour-750g
Eggs-4
Baking powder-1½teaspoon
Sugar--1cup
Flavor-1teasp
Milk--2tbs (optional)

*Procedure*
When you want to get a well done groundnut inside your peanut, you wash your groundnut, add little salt and sun dry very well before making use of it.
Due to the raining season we are, I advice we fry our groundnut or buy already fry ones to use( reason been that so the groundnut inside won't be half done and you don't need to fry it to brown before removing it). After frying the groundnut, peal the back and remove the broken ones, set aside.

In another bowl, sieve your flour (750g) add baking powder (1½teaspoon).

Note: you can also make it without baking powder but the size won't be really big because baking powder serve as a raisin agent. Mix the flour and BP together.

In another bowl, break in your eggs and whisk to be foamy.
Then add your sugar (1cup), Flavour (1ts),milk (2tb).
Note: If you are using power milk you dilute it with water before measuring it into the egg. Whisk well till it's foamy and creamy.

In the bowl, pour in your groundnut, add two spoon( normal eating spoon) of the egg mixture and mix, not with hand but be shaking the groundnut bowl in a clockwise direction after some seconds add in your flour, just a hand full and please sprinkle the flour not on one place oo. Be fast about it so the groundnut won't stick to the bowl.
Keep turning and just be adding two spoon each of your egg and sprinkle the flour, till your 750g of flour and 4 eggs is finish, then you allow it to rest for 15 mins before frying it on a low heat.
Allow the oil to hot before putting in your peanut. How to know if your oil is hot, drop one of the peanut and give it some seconds if it comes up then the oil is hot and ready to fry.

*NOTE* Don't allow your peanut to be brown in the oil once you see it have started changing to cream colour remove it, cos when it get cool, it will bring out the brownish colour.

Icing sugar 400g
Coco powder 150g
Flavour (optional)
Butter 400g

METHOD
Pour your Flour in a mixing bowl add your butter, icing sugar and coco powder
Mix very well to get a stiff dough
Wrap in a cling film and put in the fridge to rest for 20mins
Unwrap your dough and knead a little on a smooth surface or table
Roll with a rolling pin and cut out desired shapes with cutters of your choice
Put them in your greased baking try and bake in a moderate oven

Floor 500g
Butter 80g
Sugar 100g
Egg 1(optional)
Yeast 2tsp
Milk 1cup
Milk flavour 1sactchet
Water 1cup
Egg for glazing

METHOD
Put your flour,butter,yeast and sugar in your mixer add your milk flavour,milk and egg lastly pour in your 1cup of water continue mixing until you get a smooth stretchy consistency.
Return to your table and cut in equal sizes
Roll in round shapes and allow to rise
Glaze with egg and bake in a moderate oven of 360 degree fereheit

SHORTENING BASE FROST RECIPE

Ingredients:
Icing sugar 1kg
Shortening 350g (shortening not white fat or white butter)
Water or liquid milk 4tbsp
Flavours 1/4tsp milk emulsion and 1/4tsp vanilla (remix)

Procedure:
In a clean and dry bowl, measure the shortening fix it to the mixer and mix for 5 to 7 minutes.

Gradually incorporate the sieved icing sugar bit by bit followed by the water or milk. One spoon at a time. Repeat till you finish adding everything.

Add flavours and allow to combine properly. You can add colour of choice or leave it as white.

CHOCOLATE CAKE RECIPE
Flour 250g
Sugar 300g
Eggs 2
Baking powder 1/2 tbsp
Baking soda 1 tsp
Cocoa powder 4tbsp (unsweetened)
Salt 1tsp
Milk 250ml
V.oil 125ml
Vanilla flavour 1tsp
Boiled water 200ml

Procedure:
Mix the dry ingredients in a bowl, add sugar oil, milk and flavour mix together, whisk the eggs and add it to the mixture.

Finally add the boiled water.

Line your 8" pan with baking paper or any pan of your choice (you can use A4 paper)

Bake in a preheated oven for 30-45mins

This will give you about 3 by 8inches cake.

If you can't go through the stress of lining your pan, allow the cake cool completely before bringing it out from the pan. Otherwise, the cake go scatter o.👂👂
