BUTTERMILK'S EFFECTS ON CAKE.
Buttermilk is often used in cake recipes to help create a moist and tender texture, as well as to add a tangy flavor.
When combined with baking soda, which is an alkaline ingredient, the acidity of the buttermilk creates carbon dioxide bubbles which help the cake rise and become lighter.
Additionally, the acidity in buttermilk can help activate baking powder, which is another leavening agent commonly used in cakes.
This can result in a lighter, fluffier texture in the finished cake.
Overall, adding buttermilk to cake batter can enhance both the texture and flavor of the cake, making it a popular ingredient in many recipes.
How to make homemade buttermilk
You can easily make homemade buttermilk using regular milk and an acidic ingredient like vinegar or lemon juice or Cream of tartar.

1 cup of milk (whole or 2% work best)
1 tablespoon of white vinegar or lemon juice

Pour the milk into a measuring cup or bowl.
Add the vinegar or lemon juice to the milk and stir to combine.
Let the mixture sit at room temperature for about 15 minutes.
You will notice the milk start to thicken and curdle slightly.
After 15 minutes, give the mixture another stir to make sure it is well combined and the milk has curdled.
