some dos and don'ts of fondant icing:

Dos:
1. Do knead and roll fondant properly: Knead fondant well before rolling it out to avoid cracks and air bubbles. Use a rolling pin to roll out the fondant evenly and to the desired thickness.

2. Do use cornstarch or powdered sugar: Use cornstarch or powdered sugar to prevent the fondant from sticking to the work surface and rolling pin.

3. Do use food coloring gel: Use food coloring gel instead of liquid food coloring to avoid making the fondant too sticky or runny.

4. Do use fondant tools: Use fondant tools, such as a fondant smoother and a pizza cutter, to help you create clean edges and smooth surfaces.

Don'ts:
1. Don't use too much water: Using too much water to attach fondant pieces can make them slide or melt. Use a small brush to apply water sparingly.

2. Don't put fondant in the fridge: Putting fondant in the fridge can cause it to sweat and become sticky. Store fondant at room temperature instead.

3.Don't use too much food coloring: Using too much food coloring can make the fondant too sticky or runny. Use food coloring gel sparingly and add more as needed.

4. Don't stretch or pull fondant: Stretching or pulling fondant can cause it to tear or crack. Roll it out to the desired thickness instead.

Darecipequeen's Classic Sponge Cake Recipe.

It's so Spongy, light , fluffy and tasty... 🥰🥰🥰

Ingredients For the Cake
👇👇👇
275g of All purpose flour ( Sifted)
1½ cups of Sugar (Sifted)
⅓ cup of Melted
½ cup of Milk
2 teaspoons of baking powder
1 teaspoon of Austen&Marcel Vanilla Flavour Extract
½ teaspoon of Salt ( optional)
6 Eggs

Procedure
- Melt Little and measure out ⅓ cup
- Break and separate the egg yolks and egg whites into different bowls...then set aside
- Sift flour and baking powder into another clean bowl..then add the salt into it
- Then whip only the egg whites with high mixer speed using the whisk attachment, As it starts foaming... add the Sieved or Sifted sugar gradually into it.keep whipping or whisking for at least 10 to 15 minutes till it forms a thick soft peak
- Then afterwards add the egg yolks and vanilla flavour to the egg white mixture
- Afterwards...pour in the milk, melted margarine ...mix thoroughly
- Then pour in the dry ingredients( thsts the flour mixture)....mix with low mixer speed or you can now decide to quit using mixer, then fold in the dry ingredients manually with spatula
- Lastly, mix till it incorporates well into the mixture and you achieve very smooth Cake batter
- Distribute cake batter into pans and bake in a preheated oven till its firm to touch. Please use moderate oven temperature.

Hello Sweet Bakers...Christmas is around the Corner... Bake this Cookies for your family and friends this Season

My Chewy Piped Swirl Cookies' Recipe

Ingredients
250g of Plain flour
225g of Margarine
1 cup of Icing Sugar
2 tablespoons of Evaporated Milk
1 teaspoon of Flavour (I used vanilla butter nut flavour)

Procedure
1.Cream the Margarine, Icing Sugar, flavour together in a mixing bowl together till light and fluffy for 3 minutes manually or with mixer
2. Add the flour into the creamed mixture and mix thoroughly
3. Afterwards, add the milk and mix thoroughly
4. Fix your tip 1M into your piping bag
5.Scoop in the mixture into the piping bag
6. Cut some parchment paper to fit your baking sheet tray (don't grease with any thing...just place the paper on the tray like that)
7. Pipe the swirl cookies on to the lined sheet tray
8. Then preheat your oven and bake the cookies for 20 to 30 minutes
till the under starts changing colour.
please dont allow it to burn or get too brownish in colour
9. then allow to cool
10. Store in an airtight container or ziploc to preserve it

For Bigger Quantity...please Multiply the recipe..

My recipe

Ingredients
250g of Flour
⅔ cup of Brown Sugar
½ cup of Vegetable Oil
1 teaspoon of baking powder
1 teaspoon of baking soda
2 Eggs
4 Medium sized Bananans
1 cup of Banana Yoghurt Drink
2 tablespoons of Banana Flavour/Essence
150ml of Evaporated Milk

Procedure
- Cut 3 bananas or mash them for the main baking and slice one that will be dropped on top of the cake batter before it enters the oven. But you can also decide to mash or cut all and pour inside the batter and leave the cake top bare. However you want it, its fine.😀
-Sift flour and add baking powder and baking soda to it and set aside
- In a mixing bowl, pour in the vegetable oil,add the brown sugar and stir
- Add Eggs, the flavour, the Yoghurt drink and mix well
- Pour in the mashed or cut bananas into the mixture, then turn...afterwards add the flour and fold in .
- Finally add the Evaporated milk and mix well
- Then pour batter into prepared pan/pans and bake or before you bake, drop few round slices of bananas on top of the batter and bake...till its firm

My Caramel Flavour Cake Recipe without Caramel Sauce

I noticed that a lot of bakers find it difficult to make their own Caramel Sauce ...so I decided to come up with this Recipe. This particular Cake has the same taste and texture as the one baked with Caramel sauce... The particular Cake is so moist

Ingredients
- 2 Cups or 250g of Flour
- 1 cup or 225g of Margarine
- 1 cup or 200g of Sifted White Sugar
- ¼ cup or 3 tablespoons of Honey
- 3 Large Eggs
- 2 tablespoons of Vegetable Oil
- 2 tablespoons of Black Treacle
- ½ tablespoon of Caramel or Salted Caramel Flavour
( I used the Austen&Marcel Salted Caramel Flavour Extract )
- 1 teaspoon of Baking powder
- ⅓ cup of Evaporated Milk or ½ cup of whole milk

Procedure
- Sift Flour, baking powder into a bowl and set aside
- Sift out 200g of White Granulated sugar into a Bowl, Then add honey, oil , margarine, black treacle flavour into the same bowl and start creaming till the mixture is so light and creamy
- Afterwards, add the eggs gradually one at a time into the wet mixture till all enters
- Then pour in your dry ingredients that's the flour and baking powder gradually....into the wet mixture
- Finally, add your evaporated milk or wholemilk and mix thoroughly or stir properly...
- Then your cake batter is ready,
- Distribute the cake batter into prepared pan/pans and bake in a preheated oven for 45 minutes using 150dc...till the cake is fully baked

Recipe
Ingredients needed
4 Cups or 500g of All purpose or Plain flour
5 tablespoons of Corn starch or Corn flour
250g of Unsalted Butter (softened)
250g of Icing Sugar /Caster Sugar
1 teaspoon of Salt
2 tablespoons of Liquid Milk
½ teaspoon of Austen&Marcel Milk Phantasy Flavour Extract

Method
1)Cream together the Softened butter, Sugar Salt, flavour extract in a Clean mixing bowl until it becomes light & fluffy.
2)Sift in your flour & cornstarch or cornflour, then add the Liquid milk and mix to form a stiff dough, knead it together into ball shape
3)Afterwards cover or wrap the dough with clingfilm and allow it to rest for atleast 30 minutes in the Refrigerator
4)Then Put the dough on a smooth work surface and gently knead until smooth and pliable
5)Roll your dough thick into desired long rectangular shape and transfer each shortbread to your pre-greased or lined baking trays and prick each one with a fork on top. Make sure they are all spaced out.
5)Bake for 30 minutes using 150°c until the top is firm to touch and the edges of the shortbread are light golden brown .. Leave to cool on their tray for around 10 minutes before transferring to a wire rack to cool completely.

Darecipequeen's Baking Tips..

Homemade Baking Powder Recipe

For you to achieve this, You have to Mix one part baking soda to one part cornstarch and two parts cream of tartar.

For example:

👉 ¼ teaspoon Baking soda+ ¼ teaspoon of Cornstarch + ½ teaspoon Cream of tartar + gives you 👉 1 teaspoon of homemade baking powder.

👉 1 level teaspoon of Baking Soda + 1 level teaspoon of Cornstarch/Cornflour + 2 level teaspoons of Cream of TarTar gives you
👉1 Tablespoon of homemade Baking Powder

Procedure
- Mix all together and use the quantity you need ...

I haven't gotten a lot of questions ..Some Bakers always ask me why I'm always baking with Brown Sugar...😆😆😆🥰🙄?

And this is my answer...

When it comes to Brown Coloured Cakes...I love using Brown Sugar because it gives cake that very moist texture. So using it will result in baked goods that are softer and moister.
Also it provides a touch of extra flavor.

And Did you know that Brown Sugar has:
- Light Brown Sugar
- Dark Brown Sugar
