HOW TO COOK BEEF STIR FRY SAUCE
INGREDIENT
* Beef
* Onion (sliced)
* Red bell pepper (diced)
* Green bell pepper (diced)
* Yellow bell pepper (diced)
* Onion (sliced)
* Carrot (diced)
* Scotch bonnet (blended)
* Soy sauce
* Corn starch (thickener)
* Black pepper
* Onion powder
* Grated garlic & Ginger
* Salt
* Seasoning cubes
* Vegetable oil
PREPARATIONS
* Slice the beef, wash and season with some black pepper, seasoning cubes, ginger & garlic, onion powder, soy sauce and mix until it's combine. Cover and allow to marinade for 30mins.
* Place the pan on heat, add some vegetable oil, add the onion, grated garlic and ginger and stir. Add the marinaded beef and stir fry on medium heat until it's golden brown.
* Add the vegetables, pepper and stir.
* In a bowl, combine the cornstarch, soy sauce together, add some water, mix and pour the liquid into the pot, stir and allow to simmer for 1min. Taste for salt and seasoning cubes and add if necessary.
Enjoy with some white rice

RED VELVET CAKE RECIPE

Ingredients:

Flour 2 1/2 cups (310g) all purpose flour.
1/4 cup Cocoa powder
1 1/2 teaspoons of Baking soda
Butter (125g)
Sugar 2 cups (400g)
1 cup of buttermilk (250ml)
4 large Eggs
150ml of Vegetable oil
1/2 cup Milk (Liquid)
2 teaspoons of Vanilla extract
1 teaspoon of Vinegar
2 Tablespoons Red food coloring
1 teaspoon of salt.

Preparation for Red Velvet Cake.

1) Mix flour, cocoa powder, baking and salt in a bowl, stir well and set it aside.

2) Add butter and suger in another large bowl, stir together until it's smooth.

3) Add two eggs into the mixture and stir one at a time, beat until combined.

4) Add vegetable oil into the mixture and beat until combined and add the liquid milk and the vinegar and buttermilk then beat until combined.

5) Gradually add the flour, cocoa powder, baking soda and salt into the mixture and mix until well combined, then add vanilla extract and red food coloring to your taste.

6) Divide the mixture into two 8-inch baking pan.
Bake at (175c) for 35 to 40 minutes until a toothpick inserted into the center comes out clean.
Take it out from the oven and let it cool before taking it out of the pan. Enjoy....

Soft butter Rolls ..

Ingredients:
500g plain flour/4cups
250 ml milk
1 tsp salt
7g yeast/2 & quarter tsp
1 egg
50g butter
3 Tbsp sugar

Method:
Mix milk and butter and warm on the stove but do not boil the milk
Sift the flour and salt into a bowl and make a well in the middle.
Put the yeast and egg in the well. Then sprinkle the sugar on the flour. Pour the milk mixture into the well and mix thoroughly,it shouldn’t be runny.
Knead the dough and put in an oiled bowl cover with a wet dish towel or plastic wrap. Leave to rise until double in size.
Knead again to knock the air out of the dough after the first rise cut into smaller pieces and roll into balls and place on a baking tray cover the tray with a wet cloth or plastic wrap.
Let it rise again. When it doubles again in size bake in a preheated Oven .
I ALWAYS BAKE MINE AT 180° FOR 25 MINS..

FRIED CHICKEN KFC STYLE

Ingredients for Chicken Marinade
1 chicken, cut up into 8-10 pieces (skin left on)
2 cups buttermilk
1/2 tsp. garlic paste
1/2 tsp. ginger paste
1 tsp. salt
1 tsp. black pepper powder
1 tsp. mixed dried herbs of your choice oregano, thyme, rosemary, sage
1 tsp. red chilli powder or cayenne pepper (optional) Other Ingredients
1 1/4 cups all-purpose flour/plain flour
1/2 cup cornflour
2-4 tbsp breadcrumbs or crushed cornflakes (optional)
1 tsp. baking powder
1 tsp. salt
1 tsp. paprika powder
1 tsp. red chilli powder or cayenne pepper 1/2 tsp. black pepper powder
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 egg + 2 tbsp. milk + 2 tbsp. any hot chilli sauce oil for deep frying Instructions TIP: You can mix half cup of yoghurt with half cup of milk in place of the buttermilk. Or simply make your own buttermilk, add 2 tbsp. lemon or vinegar in each cup of milk and let it stand for 10-15 minutes, then stir and use. Do not omit this step as it will give maximum moistness and it infuses flavour into the chicken. Marinate the chicken in the marinade ingredients overnight. Remove the chicken pieces from the marinade and blot them a little bit with kitchen towels. DO NOT rinse them as that will wash away the flavours that have built up during the marination. Set aside on a sieve until they come to room temperature.
METHOD OF PREPARATION:

1: Place chicken in a large bowl, season with one tablespoon of salt, toss to mix and leave to rest for 10-30 minutes.
2: Blend all the seasoning
3:Add the blended mix to the chicken bowl and toss to ensure that they are all well-coated with the spice blend.
4: Cover with cling film, place in the fridge and allow to marinate for an hour or longer.
5: Take marinated chicken out of the fridge, pour in the light cream, and toss to coat.
6: Using a thong or your fingers, dip the chicken pieces, one after another, coat and then transfer onto a tray with flour and cornstarch. Coat and then transfer to a clean tray and leave to rest for about five minutes.
7: Heat oil in a deep frying pan over medium-high heat and fry chicken in batches until golden brown and cooked,
8: Transfer fried crispy chicken
Serve with your favourite sauce.

CHOCOLATE_VANILLA MARBLE CUPCAKES

You will need:

1 1/4 cup all
purpose flour
120 g softened butter ( 1/2 Cup butter)
3 medium size eggs
3/4 cup white sugar
1 tsp. vanilla extract
1 1/2 tsp. baking powder
1/4 tsp. salt
100 g semisweet chocolate chips
2 tbsp extra melted butter
3 tbsp of unsweetened cocoa powder
100 g grated milk choclate or (milk chocolate chips)

What to do:

1. Add semisweet chcolate chips and 2 tbsp. of melted butter to a saucepan over medium-low heat. Melt the chocolate and the butter together , stirring frequently until smooth and completely melted. Remove from heat and let it cool about 5 minutes.

2. In a mixing bowl combine flour, baking powder and salt. Stir and set it aside.
3. Beat butter and sugar in large mixing bowl until smooth and creamy. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla extract.

Add the flour mixture in a butter mixture and continue beating until well combine.

4. Remove part of the batter and place to a separated bowl, Add the cocoa powder, stir in melted chcolate.Add the grated milk

chocolate and mix well. Using a spoon divide the batter into your prepared cupcakes cups (1tbsp. of every batter). Using toothpick or knife, gently draw swirls through the batter to marbleize.

5. Bake for about 18-25 minutes in a preheated oven (175degree C) or until a toothpick inserted in the center comes out clean. Remove from oven and let it completely cool before serving.

LEMON CAKE WITH LEMON FILLING AND LEMON BUTTER FROSTING

Ingredients:

2 c all purpose flour
2 t. baking powder
1 t. salt
1/2 c butter
1 1/4 c sugar
3 eggs
1 t.vanilla
1/4 c fresh lemon juice & 1 t. grated lemon zest
3/4 c milk
(add a couple drops of yellow good coloring,if desired)

FILLING

1 tablespoon grated lemon zest
1/2 c fresh lemon juice
1 t. cornstarch
6 t. butter
3/4 c sugar
4 egg yolks,beaten

FROSTING

4 c confectioners sugar
1 t. grated lemon zest
1/2 c butter,softened
2 tablespoons fresh lemon juice
1 t. grated lemon zest
(add a couple drops of yellow food coloring if desired)
2 tablespoons milk (f needed to thin frosting)
chopped nuts,optional

Directions

1. Preheat oven to 350 degrees. Grease and flour two 8 inch round pans. Mix together the dry ingredientsSet aside. In a large bowl, cream together the butter and sugar until light and fluffy. Add lemon juice & zest to the milk.

Beat in the eggs one at a time,stir in vanilla. Beat in the flour mixture alternately with milk, mixing just until incorporated. Pour batter into pans. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Allow to cool in pans on wire racks for 10 minutes. Then invert onto wire racks to cool completely.
2. To make filling: In medium saucepan, mix together 1 tablespoon lemon zest, 1/2 cup lemon juice and 1 tablespoon cornstarch until smooth.

Mix in 6 tablespoons butter and 3/4 cup sugar, and bring mixture to boil over medium heat. Boil for one minute, stirring constantly. In small bowl, with a wire whisk, beat egg yolks until smooth.

Whisk in a small amount of the hot lemon mixture. Pour the egg mixture into the sauce pan, beating the hot lemon mixture rapidly. Reduce heat to low; cook, stirring constantly, 5 minutes, or until thick (not to boil).

Pour mixture into medium bowl. Press plastic wrap onto surface to keep skin from forming as it cools. Cool to room temperature. Refrigerate 3 hours.

3. To make frosting: In large bowl, beat confectioners’ sugar, 1/2 cup butter, 2 tablespoons lemon juice and 1 teaspoon lemon zest until smooth, and increase speed and continue to beat until light and fluffy.((add milk 1 tablespoon at a time to thin frosting if needed))

4. To assemble: With long serrated knife, split each cake layer in half horizontally, making 4 layers. Place 1 layer, cut side up, on a serving plate. Spread with half of the lemon filling. Top with another layer, and spread with 1/2 cup frosting.

Add third layer, and spread with remaining half of the lemon filling. Press on final cake layer, and frost top and sides of cake with remaining frosting Decorate sides of cake with nuts if desired. Refrigerate cake until serving time.

Mounds Bars with just 3 ingredients

Ingredients:
2 cups melted milk or dark chocolate
3 cups of coconut flakes
1 cup sweetened condensed milk

Instructions:
Mix the shredded coconut with the condensed milk,
shape them into an oblong shape,
freeze them for 20 minutes,
then dip them into the melted milk chocolate.

How to make Ice - Cream at home
Ingredients
1. Egg White - 4
2.Peak Liquid Milk - 1 tin.
3. Icing sugar - 8 tablespoons
4. Gelatin 1/2 (teaspoon)
5. Vanilla flavour 1 teaspoon
Method:
1. Separate egg white carefully from the yolk .
2. Beat the egg white from foamy to stiff peaks.
3. Empty the milk in another bowl and and whisk.
4. Add sugar to milk and stir. Whisk till the sugar dissolves and it gets thick.
5. Dissolve your gelatin in hot water and add.
6. Add vanilla flavour or any of ur choice.
7. Whisk all till well blended, plate it and freeze. Credit to owner. Hope you learnt something.
