Good morning everyone. Trust you had a great night rest.
*Tuesday is for kitchen hacks.* Let's have it.

Wikipedia defines kitchen hack, also known as a food hack, as a technique used by home cooks and professionals to make food preparation tasks easier, faster, or more efficient. Below are a few cooking hacks that could be useful for you soon.

1.) *Use a wine or soft drink bottle as a rolling pin.* I have used this many times while preparing to fry chinchin.

2.) *Peel garlic by shaking it in a jar.*
"Rather than smashing individual garlic cloves with the side of your knife to loosen the skins -- or fruitlessly trying to pick them off with your fingernails -- all you need is a jar with a lid, or two small metal bowls inverted together. Add garlic cloves, shake vigorously, and voilà! Perfectly peeled garlic without the lingering, tell-tale aroma beneath your fingernails."

3.) *Add oil to your pasta water to prevent sticking.*
I trust that a lot of us are familiar with this. Oh yeah. Try this the next time you are preparing spaghetti.

4.) *Keep ginger in the freezer for easy grating.*
To make it easy to grate your ginger, put it in the freezer.

6.) *Cut pizza with scissors.*
Using scissors to cut your pizza is absolutely a genius act. Try it the next time you buy pizza or make one.

7.) *Dice Eggs with a cooling rack.*
"Genius kitchen tip—use a cooling rack to dice eggs! You can push a cooling rack through a hard-boiled egg to smoothly dice it. This kitchen hack works on avocados, too."

8.) *Extend the Life of Herbs with Water.*
"Nothing is worse than buying fresh herbs and having them wilt the next day. Keep herbs like parsley and cilantro bright with this simple storage tip. Trim the stems and place them in a small glass of water. Then place a plastic bag (like the one you got at the grocer) over top and secure by tying the plastic in a knot or wrapping it with kitchen twine. Store in the fridge or on the counter for up to two weeks!"

9.) *Use a Damp Dish Towel to Keep Bowls Steady.*
"Need an extra hand?Professional chefs will tell you that a damp dish towel under your mixing bowl will keep it from slipping and sliding on your counter as you mix. This tip works well with a cutting board too."

10.) *Store Peanut Butter Jars Upside-Down.*

Last year, in December, Herbert Wigwe moved into his new house at Queen’s Drive, Ikoyi, Lagos.

A mighty, imposing edifice that speaks to his ambition and class.

It was his dream house, and so no cost was spared in building it.

A state-of-the-art house that is fully digital and automated as well.

You know the type of house where Siri and Google Assistant control the basic functionality of the property.

According to a rough estimate from those with knowledge of the property that I spoke to, over 10 billion naira were spent on the project.

And the reason why Herbert spent that much on the property was not far-fetched.

It was meant to serve as his retirement home in Lagos, so he made sure he spent money to build it.

Three weeks ago, he hosted Africa’s richest man, Aliko Dangote, and his bestie, Femi Otedola, in the new property.

They had dinner together, but before that, he took them around his new property to show the two Forbes billionaires his new acquisition.

He was a man whose palm kernel was cracked by the gods.

Little did Herbert know that it would be the last time he would be hosting Aliko Dangote and his bestie, Femi.

Herbert was a very wealthy man in his lifetime.

Before he died, he was the majority shareholder of Access Bank, as he controlled 9% of the bank.

That 9% shareholding made him the largest shareholder of Access Bank, and the shares he controls are collectively worth $54 million.

For all this humongous wealth, one thing that stood out in my book is that he loved God and then committed the wealth that God gave him to serving him and supporting his work.

Before he died, he was an active member of Adeboye's RCCG, and he worshipped with a branch of the RCCG called City of David, an upscale RCCG church in Lagos, and he was present until his death.

He worshipped with them two Sundays ago.

In 2018, the City of David had an outreach in Makoko; the budget was 800 million.

Herbert brought 500 million of the money, and the church brought the rest.

Until he died, he was paying the salaries of the choir members of City David Chuch secretly and quietly, without making a fuss about it.

The City of David has the biggest church building. for the RCCG family in Lagos, complete with a helipad, and when the project was at its infancy level, Herbert made sure that Access Bank paid for a 10-year lease of the office space to be domiciled in the building.

He did this when the church project was at the foundation, and it took 5 years after the payment for the project to be done and for the bank to occupy the space.

But he did more than this.

When the City of David ran out of funds as they were building the church building on Victoria Island, Herbert used his influence to facilitate a loan from Access Bank for his local church to complete God's project.

Three weeks ago, the city of David Church had an issue paying back a billon of naira, which was the loan Hebert facilitated back to Access Bank.

He gave the church an interest-free 1 billion naira of his money, which they are expected to pay back this year to him.

This was who Herbert was. A man who loved God and was unapologetic about it.

I have been reflecting on Herbert Wigwe's life and how empty life is since I woke up this morning, and I came to one conclusion.

Life is just fleeting.

Do your best to live your life on your terms and create enough memories.

Love the people who love you back, and touch as many souls as you can.

At the end of the day, tomorrow is not guaranteed.

Have you ever heard of potato puff snack before?

You haven't? Okay.
Not a problem! You'll learn about it today.

Potato puff is a snack that requires four ingredients.
Yes, only four ingredients!

INGREDIENTS.
Sweet Potatoes
Salt
Flour
Vegetable oil

PROCEDURES.
Cook your potatoes until it becomes very soft.
Pour into a bowl.
Mash or pound with a kitchen wooden stick or pestle.
Add little salt.
Add your flour and mix. (Make sure that the flour is little compared to the potato.)
Oil your palm and mould the mixture into balls.
Proceed to fry in vegetable oil on medium heat.
Then, serve with fruit juice, water or tea.

Isn't that simple?

COCONUT FLAKES
Coconut flakes is a snack that is very easy to prepare. Students can snack on it. Parents can prepare it for their kids. Families can have it as an appetizer. Income can also be generated from its sale.

How many ingredients do you need to prepare coconut flakes? Just three.

INGREDIENTS
Coconut
Water
Sugar

PROCEDURE
Remove the coconut peel.
Wash it and grate it.
Place a pan on fire.
Add water.
Pour in the sugar.
Stir until the sugar melts totally.
Add the grated coconut.
Stir until the pan is void of water.
Continue to stir until the coconut turns golden brown.
Turn into a surface, tray, foil paper or parchment paper so that it can cool down.
Then serve.

Is the consumption of coconut flakes of any benefit?
Yes!

Can you guess? What soup is this?
Did you try to guess? I'll tell you the answer now. It is edikaikong soup.

Do you know that this soup is more healthy than some other Nigerian soups?

INGREDIENTS
Cow meat, chicken, turkey or goat meat
Blended onions
Pomo
Maggi
Salt
Ugu(Pumpkin leaves)
Palm oil
Cameroon paper
Yellow Pepper
Red Pepper(optional)
Salt
Water leaf
Stock fish
Dried fish
Cray fish

PROCEDURE.
Place the already washed meat, chicken, goat meat or turkey on fire. Don't add water yet.
Sprinkle Cameroon pepper on it.
Pour in your blended onions.
Add maggi.
Add salt.Then, leave to cook for 10-20 mins
Add the pomo.
Leave for about 5 minutes.
Add the stock fish.
Stir properly so that the ingredients pe*****te into each piece in the pot.
Add the blended pepper(Yellow and red)
Leave to cook for a while.
Add the dried fish.
Add your palm oil.
Leave to cook for a while.
Add water leaf.
Leave to cook for 3 to 5 mins.
Add ugu.
Add crayfish.
Leave to cook for 2 to 5 mins.
Then serve with any swallow of your choice or on rice. Enjoy 😉

Did you notice that you don't have to bleach your palm oil when preparing Edikaikong soup? This makes the soup more healthy.
