BITTER LEAF SOUP

The bitter leaf soup is one of the most delicious soups in Nigeria abi in Africa sef lol. And this method is mostly prepared by the igbos and also by those who love it like I do ๐Ÿ˜‰.Its simple,yummy and easy to make .

I prepared this I think a month ago .i ate it for almost a week lol I didnโ€™t even want it to finish ๐Ÿ˜‹
Ingredients:

Bitter leaf
Coco yam
Ogiri
Palm oil
Crayfish
Stock fish
Dried fish
Cow skin
Cow stripe/or any protein of ur choice
Seasoning cubes
Salt
Fresh or dried pepper

Procedure

Cook the coco yam until soft, peel off the back ,pound or blend into a paste and set aside.

After that,wash the meat,cow stripe,pour in a pot,add little water ,seasoning,salt and place on heat to cook till almost soft.after that add in amount of water that would b enough to cook the soup ,then add cow skin ,stock fish,dried fish,blended crayfish, blended fresh peppers or dried pepper,Ogiri,more seasoning, palm oil,cover to cook again for 2mins. After that ,add in the coco yam paste (not at once pls. Use a tbsp to be adding .this will enable it to dissolve easily) after that,cover and allow to dissolve. Come back to check if it has fully dissolved.if it hasnโ€™t , use a spatula or any spoon to melt the remaining coco yam , now add in the washed bitter leaf,stir and cover to simmer for another 1min. Enjoy with favorite swallow. Follow for more recipes

HOW TO COOK UZIZA SOUP
INGREDIENTS
* Goat meat
* Cow skin (Kpomo)
* Stock fish
* Snails
* Dry fish
* Seasoning cubes
* Salt
* Pepper
* Cray fish (powdered)
* UZIZA leaves (wash and slice)
* Palm oil
* Achi (thickener)
* Locust beans (okpei)
PREPARATIONS
* Wash the goat meat, cow skin, snails, stock fish and transfer them into a pot. Season with salt, seasoning cubes and place on fire. Allow it cook for 10min then add some water and let it cook until it's soft. Wash the dried fish, add it into the pot.
* Add the pepper, oil and allow it boil for 3min.
* Add the crayfish, grounded locust beans and stir. Add the achi and stir as well. Taste for salt, seasoning cubes, pepper and add if necessary. Allow it simmer for 7mins.
* Add the uziza leaves, stir and allow it cook for extra 5min.
NOTE: use any protein of your choice and feel fry to omit any one as well

ESPECIALLY AT ABOKI JOINTS!!!
I still can't believe what happened to my
friends last night.
They went to a food vendor to eat, they told
the mallam to fix 3 packets of indomie and 8
eggs, then they sat down to chill till he
finished preparing the food; as he was
cooking and they were gisting.
Suddenly he told them the food was ready
then he served them the food. While they
were eating he asked them what they
wanted to drink and they ordered for fanta
and Maltina, he brought the drinks, they
opened it and drank.
30 minutesโ€‹ later, they finished eating and
paid the mallam and they started walking
back home when one of them suddenly
remembered that he left his phone on the
table then he ran back to get it, luckily for
him the phone was still there. He picked it
and ran back home to sleep.
And that's exactly what happened.
Nothing more!!

Mouth watering ๐Ÿ˜‹๐Ÿ˜
**INGREDIENTS:
_Red Bell Peppers (Tatashe and shombo)
_Assorted meats ( Boiled and Fried) optional
Tomatoe paste
Fresh tomatoes
oil
_Big onions
Scotch bonnet (Ata rodo)

SPICES

Knorr Chicken Cubes
ginger
garlic
curry
thyme
kitchen glory
_Salt to taste.

*METHOD:
_Season and boil your meat till soft. Set aside.
_Using a food processor, blend, peppers, fresh tomatoes, Onions.
Boil Blended peppers, fresh tomatoes, onions and tomatoe paste until the water dries up, add all your spices to the paste and allow it to cook for some minutes.

Add your oil and stir, and cover your pot, allow it to cook for 10mins. Then add your meat and allow to cook for ten minutes.
your stew is ready

Try this method your stew will taste good.

Banga stew (Ofe akwu).

Ingredients:
- 1 fresh palm fruits or 800g tinned palm fruit concentrate
-Cow tail or any meat of your choice
-Fresh or dry salmon fish or anyone of your choice
-Scent leaves
-Fresh or dry pepper
-2 onion bulbs
-Seasoning cubes
-Crayfish. Grounded!

-Salt to taste

Cooking directions:
-Cook the meat with seasoning cubes, salt and onion until it becomes soft and easy to chew, or season the meat with seasoning cubes and grill in an oven, if you have one. Then set them aside.
-Grind and blend the spices to powder. Also blend the pepper
-Wash the dry fish if you're using dry fishand remove the centre bone. Or boil your fresh fish together with your meat
-Boil the palm fruit for 20 to 30minutes, pound with a mortar and pestle, transfer into a bowl, add water and extract the juice using a sieve.
-Boil the juice for about 15 to 20minutes or till it becomes thick.
-Add the dried fish or your already steamed fresh fish, grounded crayfish mix, precooked meat, ground pepper and salt and seasonings to taste. Then boil for another 10 minutes.
-Add scent leaves, and some more seasonings (if necessary). Simmer for about 2 or 3minutes.
-Your banga stew is ready for consumption.

-Serve with your already cooked white rice...๐Ÿ˜‹

KITCHEN TIPS From Africa

1. Never store Onions and Potatoes together because both produce a gas that causes either of them to spoil quickly.

2. Put two or three orange leaves in your hot palm oil on the fire. Let the leaves turn black before removing it. By then your palm oil becomes pure groundnut oil also giving your food a nice taste.

3. To avoid feeling a peppering hotness on your hands after cutting pepper with bare hand scrub your hand with salt and red oil then wash it.

4. If you happen to over salt a pot of soup, just drop in a peeled potato. The potato will absorb the excess salt.

5. If your Soup or Stew goes sour while warming it, add little piece of Charcoal and remove after warming, the taste will come back.

6. Never put citrus fruits (oranges, lemon, lime, etc) or tomatoes in the fridge. The low temperature degrades the aroma and flavor of these fruits.

7. When storing empty airtight containers, throw in a pinch of salt to keep them from getting stinky.

8. If your salt is becoming lumpy, put a few grains of rice in with it to absorb excess moisture.

9. To reuse cooking oil without tasting whatever was cooked in the oil previously, cook a 1/4" piece of ginger in the oil. It will remove any remaining flavors and odors.
