Some coconut/chocolate chip cookie to attempt.

Recipe for the coconut drop cookies

6 cups plain flour sifted
4 level tsp baking powder
180g butter, cold but not hard
1 cup castor sugar
1 cup fine desicated coconut
1/4 cup choc chips
2 cups cream + 1 1/2 cups full cream milk
1 egg, beaten
2 tsp caramel essence
Extra castor sugar to sprinkle

Preheat the oven to 190°C
In a large bowl mix flour with the salt, baking powder. Add the butter, then rub it in with your fingers until the mixture looks like fine crumbs. Than add Sugar ( you can add an extra 1/2 cup sugar for a slighly sweeter biscuits if preferred), coconut, choc chips and mix everything well together.

In a large container, Add cream, milk and caramel essence(vanilla can substitute) mix then set aside.

Line a baking tray with baking tray.
Add milk mixture and beaten eggs to the dry mixture, combine them gently with a fork or your finger tips making sure not to overwork the dough.

Scoop dough with a large tablespoon or ice cream scoop and drop on a prepared baking tray and sprinkle a little castor sugar on top.
Bake for 12-15 minutes, until lightly golden brown.
