It is very funny when people think that catering for an occasion stop with turning out tasty meal, my dear there is more to it than you can imagine. There is a part called Venue management, Service management and Event design this why you will have enough food yet alot of people have not eaten, this is why you will have many "usher" yet you still served 300 guest for more than 2hrs, you will have left over food but people went home with out food. My dear you can just hire a professional after you finish your cooking to handle the rest this will give a well coordinate Event.
