Menu for Friday 1/12 & Saturday 2/12

After weeks of thinking, I have decided that I will be closing Bé Mập's Vietnamese at the end of the month to focus on a new project in Amsterdam next year. It does involve Vietnamese food, drinks and desserts in a physical location so it's not a permanent goodbye..

I will try to have a menu every week in December featuring all the favorites so you can enjoy it once more - sugarcane shrimp, sticky rice, egg noodles, banh khot, spicy and sour noodles and crispy rice salad!

This week I will be making shaking beef with tomato rice & pork skewers with woven vermicelli.

Bò lúc lắc literally translates to shaking beef as beef cubes are tossed and shaken around a sizzling wok to cook it. The beef is marinated in oyster sauce, garlic, pepper and it is cooked with onion and paprika. It is served with tomato rice, crispy veggies and pickled red onion to provide something fresh and tangy to the dish.

Nem nướng can be found at every Vietnamese barbecue and it varies greatly between the different regions of Vietnam. My nem nướng is from the south. Chargrilled pork with garlic and shallots and smokiness from the barbecue. It is served with woven vermicelli, lettuce and fish sauce.

I’ll be making bun cha!
There is nuoc cham broth, vermicelli noodles, pork belly, pork meatballs, salad, herbs and a plate of fried nem, usually with crab. The idea is to use the broth to dunk everything. Dunk, slurp, bite into the meat, cram in some herbs, try your best to get a bit of everything in one mouthful.
That big mouthful epitomises everything that is great about Vietnamese food: the perfect balance of fresh, savoury, sweet, herbs and that juicy, juicy pork. In between these mouthfuls, take a nem, wrap it in lettuce and dip that into the broth too for a delicious crunch.

This will be my last menu until December. I will be cooking noodle soup (perfect for this weather!) and baos. The whole menu can be made pescatarian or vegetarian. I have teamed up with my friends at càphê (https://caphe.co/) and we will give you 2 different vietnamese coffee bottles to try for free.

Cà Ri Chay (vege curry) gets its flavour from lemongrass, star cinnamon, star anise and leek cooked with coconut milk. As you swoosh your spoon around the curry, you'll find potato, carrot, shiitake mushroom, oyster mushroom, straw mushroom and fried tofu. It is served with vermicelli noodles and thai basil which makes it super fragrant.

Hi everyone,

This Friday I will be making 2 dishes that I haven't made in a long time. The whole menu is available with pork, pescatarian or vegan.

Bánh Xèo is a popular street meal in Vietnam, especially in the south. The word 'xeo' means sizzle and refers to the sound the batter makes when it touches the hot skillet. The batter is made from rice flour, coconut milk and turmeric which gives it its distinct yellow colour.
It is a stuffed pancake with onion, mung bean, chives, bean sprouts and the following....
Regular: pork belly, prawns
Pescatarian: prawns, enoki mushroom, carrot
Vegan: shiitake mushroom, enoki mushroom, carrot
Wrap it in lettuce and dip into fish sauce

The second dish is aubergine and green bean stir fry. It is super flavourful with beef mince, oyster sauce, ginger, garlic and chilli. Perfect over a bed of rice.

The meat free option is with fried tofu and with mushroom sauce.

I am back from a trip to my motherland and excited to be back and cooking!
This weekend I will be making a rice and noodle dish. The whole menu can be made with or without pork.

Bún Lào is spicy and sour noodles. Lao because the chilli paste used for the sauce has Laos roots. It has bean vermicelli, juicy fish cake, prawns, carrot, onions and thai basil. The spice is well balanced with the sourness from lemons.
Miến Xào is the non spicy version, but with an oyster soy garlic sauce.
Both can be done with or without pork mince.

Com Chien (vietnamese egg fried rice) is always a crowd pleaser. It has garlic, onion, peas, carrots, spring onions, egg
regular - chinese sausage, ham & shrimp
pescatarian - shrimp

The sides are rice paper rolls and fried nem / cha gio. A set menu feeds 2-3 people and you can always add on more fresh or fried rolls if you are 3 big eaters.

Hope you're having a good summer! This will be my last set menu until October.
I will be making my burnt rice salad and prawn egg noodles. The whole menu can be made regular with pork or pescatarian.

There is so much going on with Com Chay Nem Chua (burnt rice salad)! Firstly, it's fried rice that you can eat with your hands by putting it in a lettuce leaf and dipping it into fish sauce. It is crunchy, fragrant, sweet, salty, tangy and spicy all in one bite. It gets its colour from red curry paste, its fragrance from kaffir lime leaves, its tang from lime and freshness from all the herbs. It can be made spicy or mild.

The second dish is egg noodles with prawns and asian greens. It is stir fried with a garlic oyster and sesame sauce.

If you've ordered from me before then you'll know that I usually provide cha gio / egg rolls / loempia for the fried rolls but this week it will be nems which are the fried rolls made with rice paper.

This week's menu is very meaty - bbq pork skewers & meatballs!
Delivery is only available on Saturday.
Nem nướng can be found at every Vietnamese barbecue. I have many fond memories of helping my mum and aunties roll hundreds of these the night before a party. It was always cooked on the barbecue and you could never stop at one. Nem nướng varies greatly between the different regions of Vietnam. My nem nướng is the recipe from the south. Chargrilled smoky pork with garlic and shallots which makes it super fragrant. It is served with woven vermicelli, lettuce and fish sauce to make it a more filling meal.

Xíu Mại are juicy Vietnamese meatballs in a tomato and fish sauce. Don’t worry, they are very different to western/Italian meatballs. The meatballs are made with pork mince, carrot, peas and water chestnuts. You can eat it 2 different ways. I prefer to dip the baguette in the sauce but you can also make your own little banh mi (sandwich). As baking is not my strong point, the baguette is from my local bakery.

I won't be making a set menu this week but wonton noodle soup!

Mi Hoanh Thanh is wonton noodle soup that originated from China but has been adapted and loved all around Asia. The Vietnamese version has pork ribs.The wontons are homemade and are stuffed with prawn and pork. There will also be bok choi, spring onion, fried shallots and egg noodles in the broth.

Delivery is available only on Thursday.
Friday pick up is from Food Union, Pieter Goodkoepweg 16.

Can you believe the summer we're having? This weather has got me craving a warm bowl of noodle soup. I will be cooking some noodle soups on Thursday and the set menu will be available for Friday and Saturday.

For Thursday 27/8

Bun Rieu is a traditional pork rib, dried shrimp and tomato based soup with vermicelli, pork ribs, fried tofu and herbs. It's so flavourful and the tomatoes bring a lovely acidity. But the best part of bun rieu are the little "rieu" meatballs made from crab, prawn, pork and egg.

Pho Ca Ri is a rich and creamy peanut satay curry noodle soup with thick rice noodles. The curry broth is made with ginger, garlic, peanuts, and coconut milk and it will be garnished with oyster mushroom, thai basil, bean sprouts, fried shallots, spring onion and lime with chicken or fried tofu (vegan).
To avoid any confusion and disappointment, please note that pho refers to the noodles used and not Vietnam's national dish.

This week I will be making sticky rice & vermicelli noodle salad. The whole menu is available with meat, pescatarian or vegetarian.

Xoi Man (sticky rice) is a dish that my grandmother would make for her grandkids on the most important holiday of the year which is Lunar New Year. Every family member would bring their own special dish to the big belly bursting feast but I would always reach for and devour grandma’s sticky rice first.

Sticky rice is eaten all over South East Asia in both sweet and savoury form (Thai mango sticky rice anyone?). It is sticky, chewy, glutinous and much drier than jasmine/basmati rice. The Laos people like to roll it into a ball and dip it. Us Viets however, like to top it with all sorts of delicious and luxurious asian meats.
The vegetarian and pescatarian version is my own adaptation and it has sriracha tofu, shiitake mushroom, steamed egg, onion, spring onion oil, vegetable floss and fried shallots.

The second dish is a light, refreshing and fun vermicelli noodle salad. Cut up some of the fried rolls and mix it through to make it even better. It is brought together with my homemade fish sauce or vegetarian fish sauce.

And like always, the sides are rice paper rolls and fried rolls.
