Pasta Bolognese Sunday 🍝
Made from scratch with garlic, chili, shallots, red onion, fresh and dried tomatoes, canned tomatoes, olive oil, dried herbs and a dash of Balsamic vinegar. Mix with fried minced chicken and cook until tender. Cook premium pasta separately and top with freshly ground Parmesan ❤️🇮🇹
Remember, never compromise with cheap pasta.

Sometimes I crave a real Carbonara ❤️ I haven’t had it for more than 6 months I think. In southern Italy it’s not a thing. It’s more from Rome and further north.
Fortunately I had some premium pasta in my cupboard, no pancetta though, so bacon was the useful substitute. Other tran that: just egg yolks, some egg white and part of the cooking water mixed with freshly ground Parmesan and black pepper
❤️🇮🇹 remember, never compromise with cheap pasta.

What to make of a piece of raw salmon?
1: Sashimi with mashed avocados including garlic, shallots and chili accompanied by fresh spinach
2: Seared salmon with a mash made of potatoes, carrots, spring onion, butter and milk seasoned with salt, pepper and nutmeg.

Dinner party in Autumn mood 🧡
The menu: Skagenrøre followed by stuffed chicken breast ( spinach, garlic, dried cranberries and Parmesan) accompanied by a mash of root vegetables and a sauce. My favourite cheese cake topped with passion fruit glaze for dessert.

Salmon sashimi, mango, spring onion, raspberries, sautéed asparagus, fresh mint topped with a mix of ponzu sauce, honey, raspberry vinegar and premium olive oil. Seasoned with Maldon salt and freshly ground pepper.
