We are proud to present our next guests: chef Valerio Serino and partner Lucia De Luca from their Tèrra Restaurant in Copenhagen, which has recently been awarded the Green Michelin Star for sustainable practices 🥂
Tèrra is a sustainable and zero-waste restaurant, where every ingredient is used, and reused, up to 98%, while the remaining 2% is destined for gardening or composting system 🍀
Valerio's approach is full of contamination, a crossroads between the Italian tradition and the Nordic approach: a tasteful cuisine, made of few ingredients, animal proteins reduced to a minimum, conservation techniques, and an aesthetic appearance devoted to minimalism. 💫
