Watercress and Horopito stuffed Chicken Thighs wrapped in Honey cured Bacon and seasoned with Spicecraft Cracking Kiwi Rub and Pimped Pepper (for the stuffing) then smoked low and slow over Urban Lumberjack Pohutukawa chunks. Served up with some hangi kumara potatoes and pumpkin. What an absolute treat.
