One pot potato dumpling stew.

I love gnocchi, in this easy recipe it shines and makes what would be a soup a filling thicker stew.

Into a pot fry a diced onion, a grated carrot or two and slice the skins of some sausages and squeeze into pot. Fry until carrots and onions are soft and meat had browned.

Blitz a couple of roasted red peppers from the jar with 2 cans of diced tomatoes and several cloves of garlic.
Pour into the pot with 2 cups of stock a good grind of pepper and 2 Tablespoons balsamic vinegar. Simmer for 15/20 minutes.

Add gnocchi to the pot and cook in the stew before serving. The gnocchi I use takes about 10 minutes from frozen.

Roast pan chocolate cake.

This is perfect for when you have a little enthusiasm and are looking to make something quick that doesn’t require any faffing about or are looking to feed a bunch of people.

I know it as Joys chocolate cake and the recipe was given to me years ago, I know it’s done many a social gathering!

Oven on to 180, line a roast pan with baking paper. If the roast pan is wider than the baking paper it’s probably too big.

Melt 200gms butter and make a strong cup of coffee (help make it taste more chocolatey)

Into a bowl add
3 cups flour
2 cups sugar
Sift in
3/4 cup cocoa powder
4 tsps baking powder
1 tsp baking soda
1/4 tsp salt

Add coffee and melted butter and mix.
Add 2 eggs, 1 cup yogurt & 1 &1/2 tsps vanilla extract

Mix with whisk until combined and pour into roast pan .
Bake for 30 minutes.

This is my go to recipe for calving or other busy periods when you know you want comfort food but don’t have the time. I like the port and chicken soup pouch from the chilled section and will get them on multi buy to stock up for calving or the Wattie’s very special mushroom soup can.
Frozen chicken is fine. It will take 8 hours.
Tarragon is a non negotiable for me in this, highly recommend.
Can toss broccoli , beans or mixed vegetables in the crockpot about 30/40 minutes before dinner to cook with the chicken.
Serve over pasta, rice or mashed spud.

Easy crockpot chicken curry.
So simple and so satisfying!

Into the crockpot I put 3 frozen chicken breast, one tin of coconut milk and one tin crushed tomatoes.
1 tablespoon curry powder, 1 teaspoon masala 1/2 teaspoon turmeric and chilli flakes and several grinds black pepper.
Cooked on low for 6 hours.
Shredded the chicken and then added two dried noodle nests to the crockpot for 15 minutes. These cooked and soaked up the extra sauce and I didn’t need to make another pot dirty!

I’d maybe change the tinned tomatoes to tomato paste if you have any and change up the spice mix to suit what you have/like but as a takeaway substitute, it hit the mark!

Feeling very under the weather today. I’ve only just managed to stagger to the kitchen for a second cuppa, this fever is really packing some punches.
I’m craving soup but clearly don’t have the energy, I do have mint and coconut milk so I’m making my Green Goddess soup.

This is fabulous for using up sad limp vege and packing more vege in as you cannot taste it over the fresh coconut mint base.

Ive roughly chopped the base, going to gently fry in a large base pot until softened, time to enjoy my cuppa, then I’ll add 2 cups of stock, season and simmer further. Once the veggies are ready I’ll add the coconut milk and handfuls of mint and parsley. Go nuts with the herbs they really shine here.
Take off the heat and blitz until smooth.

Ive topped it in the past with poached egg or chicken but not today.

Happy Easter weekend! Lovely day here, getting caught up on my long list with a sunny day finally.

I’ve been making hot cross buns all week, this recipe is a total hit, I’ll attach a link below. Fair warning it’s a very sticky high hydration dough!

I’ve also topped up my laundry power and dishwasher powder. Grated a bar of sunlight soap with the food processor for the laundry powder and added 1 cup borax and 1.5 cups washing soda. Blitz till fully combined.
These are easy to find at your local bin inn and once you have these you can then mix the 1 cup borax and 1 cup washing soda with 1/2 cup citric acid for dishwasher powder.
Works out to 28 cents a load of laundry. I use it in my front loader without issue.

I’ve just started making a spray cleaner.
A couple of weeks ago I had a bunch of lemons I peeled first for lemoncello, juiced for a recipe and then thought I’d give infusing white vinegar a go to top up my almost empty bottle of kitchen bench spray.
I always have several 5 litre containers of white vinegar around for cleaning and pickling so I poured some over the 4 lemons and weighed then under the vinegar with a pickle weight. Added some cloves just to see what would happen.
This morning my spray ran out so I drained off the infused vinegar which now has no vinegar smell, just lemon, it’s amazing!
Cut though the mess on my bench no worries. Highly recommend.

The most delicious thing I have ever tried!

Burnt Basque Cheesecake , it’s smooth and creamy , light with a delicious caramel flavour . I’ve wanted to make one for a long time and I’m glad I finally did. It’s super easy to make.

Oven on to 200 degrees

500 grams cream cheese
500 grams mascarpone
7 eggs
2 cups sugar
200 mls cream
1 Tbsp flour

All goes into the mixing bowl and mix until smooth.

Pour into a cake pan or ovenproof dish. It needs to be lined with baking paper, it needs to over hang to help get it out. I used two sheets. I used a 20 cm cake tin, it was to small, a 25cm at least. I baked for 50 minutes .
It’s going to jiggle when it comes out, I highly recommend this or you can bake for a little longer, you want the jiggle !

Now it needs to cool and to go into the fridge. This is best made the day before you want it. It needs to stay in its pan until serving.

I’m loving it by itself but I could see it going really well with berrys or a berry coulis.

Love a long weekend in the kitchen and garden! The rainy weather was perfect for giving the garden a soak and me time in the kitchen.

I’ve been meaning to try the viral Tuscan Chicken and it didn’t disappoint! Very easy and now I have sun dried tomatoes in the pantry I’ll be making it again.

Was totally out of bread so made both vogels style and white loaves for the freezer.

The garden is pumping out cucumbers so I’ve made some relish and pickled a few. How do you like to preserve your cucumbers ?

The fennel is looking gorgeous , it’s a favourite of mine , tried a fennel pesto with some baby beet leaves and parsley .

Burnt basque cheesecake has been on my list of things to try, not complicated at all! Basically mix if all together and bake. So delicious.

Trying to keep up with the cabbage! If you like tangy sweet coleslaw, maybe like KFC, I challenge you to try this salad 🥬 Also lasts in the fridge as a meal prep idea for work lunches.

Base is chopped cabbage, I’ve added sliced red onions and capsicum, cucumber and grated carrots. Chopped coriander on top with some poached chicken.

The dressing;
1/3 c mirin
1/3 c kuwpie
1/3 cup sweet chilli sauce
2 cloves garlic
3 Tbsp water
Juice of a lemon
1 Tbsp miso paste

Blitz in a bullet or blender until smooth.
Pour and enjoy!

So hot!! But the vege garden is loving this weather, giving away cucumbers!

Here are 3 easy and hot weather friendly cucumber salads.

Cucumber Salad;
Smashed cucumber
3 T rice wine vinegar
1T sesame oil
Salt
2T soy
Green onions
Honey
Fresh red chili finely chopped or chilli flakes
Sesame seeds

Tangy Cucumber Salad;
Salt and drain cucumber slices
2 tsp Dijon Mustard
2 tsp Sugar
¼ C apple cider vin
Red onion sliced

Creamy Candian Cucumber Salad
1tsp sugar
1 T dill dried or fresh
Salt and pepper
2 cucumbers peeled
Red onion shaved
½ sour cream or yogurt
3T red wine vinegar

Homemade Baileys

Is it worth it? Yes!!
This is so easy and I love that it’s been enjoyed as a gift as I’d put it in a few baskets for Christmas.

Pick a whiskey or bourbon you like. Doesn’t need to be fancy just that you enjoy. I’ve used Canadian Club spiced and Wild Turkey, American Honey both were delicious .

Make a can of sweetened condensed milk into caramel (just put them in crock pot covered in water on low overnight , do not open until tins are cool) or buy caramel .
Blitz caramel with a double shot of espresso and a bit of vanilla. You can use chocolate sauce instead of coffee . Can totally use instant coffee, mix a Tbsp with 3 Tbsp boiling water.

Mix into 400 mls cream and 300 mls whiskey .

Bottle and shake before each use. Keep refrigerated.
Lasts for 3 weeks

Totally customisable , this last time I infused the whiskey with my favourite coffee grounds from Excelso Coffee NZ the Brazil blend. Turned out beautifully! Did keep some people awake longer than intended 😂

Bread is my favourite thing to make but I was wondering if cost wise it stacked up when I was mixing up these loaves.

I’ve got two white loaves that cooked together from the same dough, one is 900grams and the other is 850grams.

Cost wise it was $1.40 in flour, 22 cents in yeast and 22 cents in butter and 12 cents in sugar and 1 cent for salt equals $1.97 for two loaves.

My power provider offers a free hour of power each day so this is when I do my baking.

This has no special technical skill if you want to give it a go just need to give the dough time to rise twice. I do use my Kenwood with the dough hook as I do for all bread dough recipes to simplify kneading.

Into the bowl add 2 & 1/2 cups warm water, 2 Tbsp yeast and 2 Tbsp sugar. Mix and let it get frothy.
Measure out 6 cups flour and 1 tsp salt together and 60 grams butter.

Add half the flour and salt and start mixing on low, add the rest of the flour, once a rough dough is formed add the room temperature butter cut into little blocks. Mix with dough hook on medium for 8 minutes.

Cover and let rise for an hour.

Tip dough out and cut in half. Roll out to a A4 size and then fold in 3rds then roll up into a log, put into a buttered loaf tin. Let rise for another hour.

Oven on to 190 degrees. Brush with milk and bake for 30 minutes.

Worth it you reckon?? Taste wise I think it’s worth it 😋

Cabbage!! So much cabbage all ready at once 😂

The trick is trying to stretch it out over the next wee while. So I’ve done two heads in 4 ways and using the food processor make the job quicker and more consistent.

First is my favourite, pickled cabbage (curtido)which is a great tangy addition to wraps or as a side . This will last in the fridge for weeks.

1 half cabbage finely sliced
3 carrots julienne
1 onion finely diced
Add 2 tsp salt, 1 cup white vinegar, 1.5 cups water
2 Tbsp Mexican Oregano ( I get it online at Tio Pablo) and about a tablespoon of chopped pickled jalapeños , adjust to your preference of heat.
This is good to go the next day and lasts in the fridge for weeks.

The second way I did a ferment of the above in the crock. Instead of a vinegar pickle, this is done in a salt brine. Be interesting to see out it turns out.

Third way was to vac seal this mix in a food saver bag to see how long I can put it on pause in the fridge.

Lastly I made a large Japanese slaw which will be this weeks side.
Finely sliced cabbage, a half head
3 carrots julienne
2 spring onions finely chopped
Dress with 6 Tbsp of rice wine vinegar, can sub for apple cider vinegar if you don’t have any, 2 Tbsp sesame oil, 4 Tbsp soy and 2 tsp sugar.
I’ll serve this with a sprinkle of sesame seeds and smashed wasabi peas.

Happy New Year! Hope you had a fabulous start to 2024.
I’ve made these buns twice over the holiday period and they have been very popular! Very easy to make and still soft the next day. This is for Jenny 😁

Garlic & Herb Rolls

Together in a pot gently melt 60g butter & 1/4 C oil. Once melted add 6 cloves of garlic finely chopped or use the microplane to grate it.
Let them infuse until fragrant and then add a half cup of finely chopped fresh herbs such as parsley, chives, sage, dill just a mix of whatever you like /have on hand. Tip that into the garlic butter mix and stir, take off heat and let that infuse.

Into a stand mixer bowl , using a dough hook, add 4tsp yeast , 2 tsp sugar and 1/2 cup warm water. Mix and let it get foamy.

Mix 2 eggs into 1 & 1/2 cups of yoghurt and pour in cooled butter herb mix.

Measure 5 cups flour and add 1/4tsp salt.

Now add yogurt mix to yeast mixture. Turn mixer on low/medium and combine while slowly adding flour.
Once combined and forming a dough turn mixer to medium and mix for 8 minutes .

Remove from stand and cover. Let dough rise for an hour until doubled .

Using a scale cut dough into 100g blobs once you have all your blobs the right size, as my favourite facebook baker says, arms in and legs in and flip the 😂. Basically pull the top “corners “ out and pinch into the middle and repeat for “legs” or bottom “corners “.
Roll into a ball gently, using your hand as a claw to roll not flat. I’ll attach a bread rolling clip if I can find one.

Into a lined tray side by side, bit of oil on the bottom . Cover well and you can put these into the fridge for up to 48 hours and remove and bake or you can let rise again for 1 hour and bake at 190 for 25 minutes .

So quick and so yum! Either make this as a gift or as a Christmasy snack.

I had some odd ends of nuts hanging around, 450gm into air fryer for 10 minutes at 175 degrees

While those are roasting into a pot on medium heat 1 cup of sugar , 2tsp cinnamon , 1/4 tsp salt and 6 Tbsp of milk. Turn pot up, Mix and then let come to a good boil without mixing which should happen when the nuts are ready. Once boiling take off heat and add 1tsp vanilla extract . Tip nuts into pot and mix to get covered and spread on baking paper cover tray .

These are delicious topping a warm camembert , in a salad or just as they are as a snack.

Starting to get my cook on for Christmas. By the time the day rolls around the only thing I will do food wise on Christmas Day is put the ham in its glaze on the barrel smoker.

Truffles are made, super easy, blitz a family pack of Tim Tams and then once crumbed add 250 gms of cream cheese and mix. Roll into small balls and chill. Roll in melted chocolate. The trick is not to eat them all before the day 😅

Fruit is so expensive this year that with Ambrosia im making berry jelly’s with a half cup less water to cube up once set into the mix. I also like to mix a bit of mascarpone into the berry yogurt to smooth it out.

After a late start the garden is starting to kick in. I grow peas even though I loathe peas right down to the smell but a fresh pod of baby peas consumed while pottering in the garden, best snack ever 😂. What’s happening in your garden?

Two batches of gifts made tonight. Homemade Baileys, so easy, delicious and budget friendly. And you only need to make it a day or so before if your strapped for time.
Turn one can of sweetened condensed milk into caramel or buy a caramel one. Tip into the bullet blender with a 1/4 cup of coffee or a double espresso shot and 500 mls of what ever whiskey or bourbon you like. I make mine with American Honey bourbon.
Blitz, tip into clean bottle and add 300 mls of cream and mix.
Keep in fridge, will keep for about 2 weeks if it lasts that long!

Bottled up some mint jelly.
Chop up 1.6 kgs of apples,cores and all. Add to stock pot with 1cup lemon juice and 1.2 litres of water. Top with mint stalks and a handful of mint. Lid on.
Bring to simmer for 1 hour until apple is mush. Let cool.
Strain and let jelly drip overnight.
For every cup of jelly add one cup of sugar and bring to boil and boil for 15 minutes, skim the foam.
Prep jars, I boil mine and then place in a 120 oven for 30 minutes, boil lids.
Once it passes a cold plate test remove from heat and add finely chopped mint leaves.
Ladle into bottles and seal

It’s been all about the gingerbread around here this week!
I’ve had a couple of events at which these have totally hit the mark and I can promise not only do they give that satisfying little bit of chew but also a decent punch of ginger without any faffing around. Just put it all in the processor and blitz, roll out and bake for 10 minutes. I will admit I did do chilling of the dough just to make good edges and easy cutting and also I just didn’t always have the time to bake them then, the dough is good in the fridge for a couple of days.

Oven on to 180, rack in the middle of oven.

Into the processor add, 375g flour, 1 tsp baking soda, 3 tsp ginger and 120g cold butter cubed.
Blitz until combined /breadcrumb.
Add 5 Tbsp treacle (you could use golden syrup but I promise treacle really adds to it) 175 g brown sugar and 1 egg. Blitz until just combined .
Tip into bowl and kneed until mixed and dough is formed.
Cut in half. I roll each out between two sheets of baking paper as I find that easy and keeps things clean, pop the rolled out dough still in it paper in fridge to chill, can be overnight .
When ready to bake cut out shapes and bake for 8 to 10 minutes. Smaller shapes I do 8 minutes and larger shapes for 10.

I have been absent for a while, my apologies! I did my back a mischief when moving but am now getting back on my feet.
Just hosted a Mexican themed dinner with Beef Barbacoa cooked on the pit barrel smoker before simmering in a chilli sauce and Pork Carnitas , pork shoulder simmered in Mexican oregano and orange as the mains. All the condiments, a hot salsa verde, didn’t realise my home grown jalapeños were so hot! Curdito ( not Mexican but it’s my favourite 😋) lime pickled onions, Mexican rice and black beans.
And thanks to Ay, Caramba for some amazing corn tortillas made here in NZ and other supplies.

The Mexican rice was really popular so here’s the recipe

2 cups of rice washed.
Toast rice in hot oil in pot before adding 2.5 cups chicken stock and the blitzed mixture of 1 tomato, 1/4 onion, 2 cloves garlic and 1tsp Mexican oregano.
Simmer 15 minutes until absorbed. Serve.

Black beans, that dish got scraped clean!

In pot fry 3 chopped rashers of bacon, added chopped onion and red capsicum with 4 cloves garlic, fry until soft. Add 2 tsp cumin and 2 cans black beans and 2 cups chicken stock let simmer and reduce.

With the temperature dropping I felt this hearty classic was the treat we needed, Golden Syrup Dumplings. There is still time to make them, they are super simple.

Into a saucepan add 2C water, 50gms butter, 2/3C brown sugar and about a 3rd C golden syrup to bring to a boil.

Into a processor or blender add 1 & 1/2 C self raising flour and 50gms butter and blend. Add 2/3C milk and 2 Tbsp golden syrup. I also add a pinch of ground ginger here. Blend until just combined.

Turn the boiling syrup in saucepan down to simmer as you add spoonfuls of the dough. Cover with lid once all added and simmer for 15 minutes.

I’m serving it tonight with custard.

Bring 2 C milk to warm in saucepan. While it’s warming mix 1/2 C sugar, 2 egg yolks and 2Tbsp cornflour together. Once milk is starting to simmer whisk in egg mixture and whisk until combined. Bring to a gentle boil, whisking occasionally. Take off heat once thickened.

Budget swaps!
I love chips or crackers before dinner or as girl dinner, especially with cheese! And with a recent goal to make a budget and healthy swap a week that’s what I’m trying to swap this week.
So I swapped chips for hummus and whatever is in season, tonight it’s carrots. OMG so much more delicious than store bought, so much more and cheaper.
This snack turned into dinner 😂

1 .5 cup dried chickpeas. Into bowl, covered the chickpeas with water with a tsp of baking soda for 24 hours

Rinse and into pot of water with half tsp baking soda, simmer until soft almost mushy.

Into blender; juice of a lemon or two, how ever many cloves of garlic you like crushed, I did 6, 5 Tablespoons tahini, grind of salt. I added a half tsp of cumin.

Add drained chickpea’s and blitz. If it’s a bit stiff add a bit of the chickpea water to loosen or olive oil.

To serve top with zatar or paprika with olive oil.

Chicken and Gnocchi in a creamy pesto sauce.
This came together so quick that just got stuck into eating it before remembering that I was going to do some vegetables.

So if your looking for a 20 minute, one pan dinner try this one.

Chicken cubed and coated in seasoned flour.

Fry in oil/butter mix

Once brown remove from pan and add diced onion and some crushed garlic. fry until soft.

Pour in 2 cups chicken stock with extra seasoning. I added chilli flakes, white pepper and lemon juice.

Bring to a bubble and pour in gnocchi.
Can also add extra vege in here, let bubble with lid on pan for 4 minutes and then add chicken back in for final 4 minutes and the sauce will thicken, add some pesto and serve.
