And last term we also said goodbye to another superstar of our kitchen because of next years changes - the organising and save-the-boxes-and-containers Queen.... Wendy 😉✨👑 and we said goodbye in the best way possible - with tequila 🙂👊💪 and schnacks...

Last Tuesday's Trust the Chef...and a wee "let's have some fun" snap...😉🤣

This Tuesday's Trust the Chef is lasagne, and it's an absolute bargain! Our family size lasagnes normally sell for $60 in the freezer and are worth every penny! Made with plenty of beef, jazzed up with red wine, herbs and garlic, topped with cheese sauce and genuine mozzarella.
This coming Tuesday, you'll be able to order one that comes with garlic bread (made with real butter, of course!) and broccoli for $70!! Will easily serve a family of 4.

Small size (serves 2) $35
Large size (serves 4) $70

Dessert: Apricot Shortcake $8

Order by Monday lunchtime, pick up Tuesday between 2 - 4

Because of the upcoming changes in the school lunch programme we had to say goodbye to Jack the other day 🥲...we wish him the very best at Fonterra and so appreciate the vibe he bought to our kitchen 💝
But on his last day....he got to make us breakfast 😂
Backstory: Jack first started working for us when we had the cafe at Waiiti, had never cooked cafe food before, and in a couple of short weeks was turning out the best breakfasts in Taranaki: perfect poached eggs, and we think, the absolute best creamy mushrooms ever. 😋

This Tuesdays Trust the Chef is going to be:
Herby Oven-Baked Chicken and Rice 🐔- sounds kinds boring right? ....but trust me! it's going to be delicious....buttery, garlic and thyme rice, cooked with chicken stock and well seasoned chicken thighs, served with stirfried greens.
And to finish, another classic: Sticky Date Pudding, with Poached Pear 🍐and Salted Caramel Sauce.

I would love to pretend that I am an icon of professionalism 🙋‍♀️ with everything fully sorted, typed and filed ...but... I am not.
And this wee beauty of a recipe is our housemade sweet pastry - if you've ever had one of our tarts or tartlets this is what we use for the base.
It is an old recipe (Alison Holst, circa 1990's) - older than the paper that it was written on to to put on the wall as a quick reference!
This is still the recipe sheet that we use today - ripped in the corner from being blutacked to the wall at the event centre, ink running from water when we've washed the same wall and definitely some coffee spillage 🤦😂

It currently lives on a pile of other handwritten recipe notes and one of these days I'm going to type it out nicely, put it in a protective sleeve and add it to our actual recipe files...one of these days...🤞😅

This was the family Trust the Chef last Tuesday...not pictured are the glazed carrots and peas, and underneath that gorgeous chook was some buttery, herby, chicken-juiced stuffing 🤤😋

So don't miss out this week - Beef Bourguignon - an absolute French classic; tender braised beef with baby onions, button mushrooms, thyme and red wine served with agria mash and beans.
And to finish, a classic French main deserves a classic French dessert - Chocolate Tart. Made with our housemade short pastry and Whittakers chocolate. Simply delicious.

Lunch today was this amazingly good thang! To be completely upfront, give a bit of insight into my world.... I had put a individual tray of this in the oven, to heat through, wanted to make sure it was ok.
You see, I had cooked a heck ton of macaroni by mistake, and we had some beautifully ripe pumpkins that needed to be used...my brainwave was, surely, a mac n cheese, with a made-from-scratch cheese sauce and some roasted pumpkin chunks would be good ....it was....wheat is not really my friend, but once I took a mouthful to try I could. not. stop. LOOK AT THAT CHEESE CRUST!!!!! 🤤
It was sooooooo good 😋😉
Vegetarian mac n cheese, studded with chunks of roasted pumpkin. Available in the freezer now.
We have individual sizes and 1 family size - that bad boy would be epic! Easily feed a family of 6-8 if it was the side dish of the night and you had a couple of sausages, steak or chicken with it. Or with a side salad for a Meatless Monday.

A platter was requested at a lower price point to our regular platters, but we knew there would be a few people who would be nibbling away at it so didn't want to make a small one....there's always a solution and ours is to use simplicity and seasonality...still authentic, delicious, gorgeous and generous xx

We've been doing some bespoke meals for very special people lately - small groups, with special requests and it is our absolute pleasure to provide authentic, delicious, gorgeous and generous food.

This is a great option for those who want a special meal, but don't need full service - stay in the comfort of your own home, eating great food that you haven't had to make and the only clean up is your plates and cutlery 💥absolutely winning!

We love that in Aotearoa New Zealand we get 2 chances each year to reflect and what and who has gone before, gather with community, and plan with hope, karakia and expectation for the coming year

Trust the Chef Tuesday....last Tuesday was this gorgeous roast pork meal - this Tuesday the menu is :

Chicken Marbella (an absolute classic of a dish - rich and delicious)
Herbed Orzo (A rice shaped pasta, with fresh parsley and sea salt and a wee sq**rt of fresh lemon to brighten it up)
Wilted Spinach (cos I don't think a meal is complete without something green on the plate!)

Order by Monday lunchtime, pick up between 2 and 4 (can be altered to suit if needed),

Just a few (hundred! 😜🫠) beef subs getting prepped for school lunches tomorrow.
Lean beef mini patties, creamed corn, cheese, salsa and caramelised onions.
They'll be heated through in the morning to freshen them up, melt the cheese and be tasty as!
Such a shame the high schoolers won't be getting this or any of the other great hot food we send out on the daily next year. ☹️ David Seymour

Trying something a little new.... 🥳🤞
'Trust the Chef Tuesdays' We've been making meals for a very special family and they trust us to deliver great tasting, nutritionally balanced and varied meals - but why should they be the only ones that get some great Soul Kitchen goodness each week?? 😉😋
Here's how it'll work: I'll post what the meal is on a Friday/Saturday for people to message me if they would like one, and it will be available freshly made to pick up between 2pm and 4pm on a Tuesday for you to take home and pop in the oven or microwave to reheat. (Other times can be arranged if needed)

2 sizes available: Dinner for 2 - $35 (pictured)
Dinner for 4 - $70

This Tuesday will be the pictured meal - but freshly made, of course! - had to do one as a tester and it was delicious! All I did when I got home was wrap it in baking paper and heated it through for 20 mins - it was perfect! Just right for Todd and myself.

⭐️ Broccolini
served with a coconut chilli sauce

Add an apple and rhubarb crumble for just $8 or $16 extra

Pumpkins are absolutely gorgeous at this time of year so we've created a very special one-off side. Creamy pumpkin mash, spiked with a little addition of miso to take it to the next level.
This tray of deliciousness would be fab alongside the beef and ale hot-pot or just scooped up with some crusty toasted bread for winter comfort

I got a beautiful new thing....😍 Stunning laptop bag, made especially for me by the incredibly talented Layla at Citizen Leather I love the fabric lining and it's so well crafted, using a leather jacket that would probably have otherwise ended up in landfill. Reduce, reuse, recycle ♻️but with absolute class👌

Another Taranaki Weddings show done and dusted! We loved meeting so many amazing couples. We loved sharing our food and seeing everyone love it xx We loved sharing the aisle with Seismic Events - such great shot fun 🍸😉 The first photo is the coffee charge-up before the crowds arrived and we totally had ham on toast for dinner!
