Smoker trailer number 2 - nearly done!
Pretty stoked to have a second trailer built by . This one is a mix of all sorts! Air compressor tank, jetski trailer, culvert pipe, spanners, horse shoes etc.
It will get sandblasted and then painted in the same high temperature grey paint as our bigger trailer. With plenty of events coming up for next season, we’ve needed to add another smoker to the fleet to keep up with demand!
This trailer will be available for hire if the timing all works out well.

Not long to go now! If you’ve thought about having us cater your big day but haven’t reached out yet, come see us at the Paraparaumu Memorial Hall. We have limited dates available for the 2024 / 2025 wedding season as some people have already booked us between 12-18 months in advance.
Look forward to seeing some new faces, and some familiar faces on Sunday!

“Where is the landcruiser?!”
This is a question I’ve been asked a bit this past season, and the answer is, off the road. Our 1975 Toyota landcruiser was showing its age and was having chassis issues, and normal old Toyota rust issues.
The chassis had been extended (poorly) in the early 90s when it became a spray truck for a roading company in Taupo. Fast forward 30 years and it was falling apart. We stripped it down and the cab now sits on a 1995 Toyota landcruiser chassis. We have a rebuilt 4.2L turbo diesel motor going in, custom tray with canopy to keep everything safe and dry, and air bag assisted suspension going in the rear to help with weight, and towing the smoker trailer!
I’m hoping to get a fair bit of work done on this in the off season, so that it ready for the 2024/2025 wedding season!

Congrats Eugene and Elina! 🇳🇿 🇸🇪
What a beautiful day to celebrate this couple on a private property in Waikawa Beach! Elina has been one of the biggest supporters of us this season in the lead up to her own wedding! Heaps of liked stories, comments etc as the day got closer, so it was awesome to cater the special day.
Weather played ball for the last wedding of the season for us, and what a season it’s been! The pork belly has been a winner this season too with couples choosing it week after week after week.

In a few weeks we will be at the at the Paraparaumu memorial hall, so I’ve you’ve thought about having us cater your big day, come down and talk to myself and Ash!

Congrats Kylie and Peter!
These guys booked us in April of 2023 following the , so it was great to be a part of their day! It’s rained off and on throughout the day, but that didn’t dampen anyone’s spirits. With Metallica playing as Kylie walked down the aisle, you know it’s going to be a good day!
Ribeye and pork belly were the proteins of choice, with marinated tofu and smoked veges for the vegetarians. Herb roasted potatoes, Tomato cucumber and torn mozzarella salad, greens with salsa verde, and roasted beetroot and carrots with walnuts and yoghurt completed the sides.
Ian from Relish cafe and catering in Waikanae was on site to finish the night off with these dessert platters. Relish is Nick and Kylie’s local, so it’s always great to see people supporting their go to favourite spots!

Nicola and Eric - part 3, the late night feed!
With a big day of celebrating this lovely couple, there were a few beverages consumed! After dark we ran out over 100 smash burgers that were cooked by the one and only burger master Ollie 🍔 🍔 🍔
Brisket patty, cheese, pickles, and a burger sauce made by the guru. The brioche buns were made by at a specific weight for us too and they were amazing! To say these burgers were delicious was an understatement! One or two were consumed by staff for quality control purpose obviously…
Nicola and Eric, what a day! Thank you for choosing, and trusting us to cater your special day. With over 250 weddings catered in my career, and roughly a dozen booked for 2025 already, we might be onto something here.

Dinner and dessert! Dinner rolled around at 6pm and we ripped into it. Menu was as follows…
- Pork belly with crackling
- Herb roasted Ribeye
- Spiced cauliflower, whipped feta, pomegranate, pine nuts

Following dinner we had the task of sorting the cake. Nicola and her mum had some classes with Maxine at .flour.welly and decided to make their own cake, and what a cake it was! It took two staff to carry it and I bet they were constantly saying “don’t drop the cake” in their minds!
This wasn’t it for food though as there were late night burgers to come. They truly deserve their own post, so part three is yet to come!

Congrats Nicola and Eric - Part 1
With an up and down day weather wise, we were kept on our toes a bit! All worked out in the end with a nice warm day for the guests to get stuck in, and enjoy some food and beverages!
We kicked things off with grazing tables for 130 people at a beautiful private property in Waikanae on the Kapiti Coast!

Congrats Kate and Amie - part 2! Dinner is served!
This beautiful couple has been keeping an eye on our social media, and decided to make a couple of changes after seeing things we had posted up from other events. The final meal choices for family style were as follows…
- Herb roasted scotch fillet
- Smoked pork belly with crackling
- Roasted carrots and beetroot with yoghurt, walnuts, soft herbs
- Roasted gourmet potatoes with rosemary, thyme, and garlic
- Cos lettuce, pickled cucumber, pecorino, miso dressing
- Spiced Cauliflower, whipped feta, pine nuts, pomegranate.
The phenomenal cake, and l the bread on the tables was from . Different sourdoughs and a rye to go with the meals! What a beautiful day to be a part of and thank you for choosing us to take care of you on your big day!

Congratulations Kate and Amie - part one!
Too many photos for the gram so I have to split the posts up! Canapes kicked the day off for us, and we added a bespoke venison canape. This was particularly special as the venison came off their property.
- Tironui Venison pastrami, chili poppadum, chicken parfait, beetroot gel
- Smoked lamb rib, mint verde
- Yellowfin tuna tartare, prawn cracker, kew pie Mayo
- Chèvre goats cheese mousse, seed cracker, apple
- Soy cured chicken thigh, chimichuri
In total we sent out roughly 600 canapés on this beautiful property in Te Horo on the Kapiti Coast.

Wow - this was the biggest cake I’ve had to cut at a wedding, and it really got me thinking of the best way to portion it! Alice who is the wizard behind made this Russian layer cake with 13 layers! It was roughly 45cm across, and it looked and tasted exceptional! It was her sisters wedding and what a way to go over and above for family.
Alice did all the bread for the wedding too! Thank you for the olive sourdough loaf to take home, it won’t last long!

Where it all began!
As we come up to our 5th year in business, it’s crazy to look back at old photos to see how much has changed! We started with this 1982 Toyota hilux, and a small smoker trailer made from a jetski trailer, and an old water pressure tank which I picked up off trademe. We would turn up to events with this setup and about four Weber’s on the back!
We out grew this setup, and wanted to streamline things, so the big current trailer was built by Andrew at in levin. This happened in 2020 when COVID flipped the world upside down. We had to sell our little Ute to repay deposits for weddings that clients cancelled on the day of lockdown. It was brutal. Their deposits were tied up in building the bigger smoker trailer which we needed to cater their events! So we came a bit unstuck here. We worked things out with and away we went.
So much was learnt from what happened through COVID and 2020. Here we are at the start of 2024, with much of our 2024 / 2025 wedding season already booked out. Its phenomenal to think that this little catering company that was setup in Kapiti, can go head to head with the best around us. We love what we do, we bring decades of experience to your events with our team, and we look forward to working with more of you in the future!

Congratulations Tanya and Simon!
I’ve know Tanya for a number of years and it was great to be asked to cater. We were setup at their house with over 100 guests to celebrate the big day!
To start, we had two grazing tables setup on different sides of the property. After the ceremony we ripped into the canapé service.
- Gin and dill cured salmon gravadlax, goats cheese mouse, ciabatta
- Spanish style fried potatoes, sour cream, chives
- Soy cured chicken, chimichuri
- Wagyu brisket slider, gastrique slaw
- Spiced cauliflower, whipped feta, pomegranate, pinenuts

9/12/23 - Congrats Matt and Sam!
From catering in Wellington City on Friday, to heading to Bunnythorpe in Palmerston North on Saturday to cater a wedding, we’ve done a bit of traveling! Great to see some familiar faces from the Kapiti Coast, and good to see behind the lense at the wedding! 📸
Scotch fillet and lamb leg were the proteins of choice. Roasted potatoes, simple green salad, broccoli with almonds and parmesan, and spiced cauliflower with whipped feta, pomegranate, and pine nuts were the sides. As usual came through for the bread!
We get to set up in all kinds of locations and often have to take a lot of gear with us. This wedding season you will find us in Palmerston North, Horowhenua, Kapiti, Wadestown, Wellington city, and Martinborough. Catering for over 1300 people will keep us busy in our part time business!
That’s us done for 2023, bring on a busy start to 2024.

Merry Xmas Heb Construction!
First time catering at the Victoria Bowling Club for me, and what a day to do it! With a stunning day, staff were keen to dig into some food, sink some cold ones, and it made for a great night on Friday!
Mains wise the team opted for an extra protein, so we went with pork belly and crackling, chicken thigh, and lamb leg. Sides were herb and garlic roasted potatoes, tomato and torn mozzarella salad, cos lettuce with miso dressing and pickled cucumbers, and spice roasted cauliflower with pine nuts and pomegranate.

Congrats Kate and Ethan!
A really great day in a heavily under rated venue! The Te Horo community hall is an awesome, large space that was dressed up well. Huge kitchen space which is a rarity for us!
Dinner was on the cards for this wedding. Scotch fillet and chicken thigh were the proteins of choice, plus we smoked some salmon for the pescatarians. Sides were herb roasted spuds, broccoli with toasted almonds and parmesan, tomato cucumber and basil salad with torn mozzarella, and spiced cauliflower with whipped feta, pomegranate, and pine nuts. As usual came through with the buns he’s designed for us.
First wedding of the season done and dusted, and a good one at that with over 100 people celebrating the big day!
